1 bunch scallion, cut into 1 inch strips
1 red bell pepper, chopped
1 zucchini, chopped
4 tomatoes, seeded and diced
3 cloves garlic, minced
3 tablespoons balsamic vinegar
1 tablespoon olive oil
1/2 lb bow tie pasta

Steps:

  • Combine scallions, bell pepper, zucchini, tomatoes, garlic, balsamic vinegar, and olive oil in shallow baking dish.
  • Bake at 400 degrees for about 30 minutes (stirring once), or until vegetables are tender.
  • Cook pasta in boiling water according to package directions.
  • Drain hot cooked pasta and toss with vegetables and serve.

1 (12 ounce) package extra-firm tofu, cut into 1x2x2-inch pieces
1 pound fresh asparagus, trimmed
1 (16 ounce) package bow-tie pasta (farfalle)
¼ cup extra-virgin olive oil
¼ cup balsamic vinegar
1 pound grape tomatoes, halved
1 cup crumbled feta cheese
2 tablespoons chopped fresh basil, or more to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Arrange tofu on a baking sheet.
  • Cook tofu in the preheated oven until cooked through and lightly browned, about 20 minutes.
  • Bring a large pot of lightly salted water to a boil. Add asparagus and cook uncovered until tender yet firm to the bite, 3 to 5 minutes. Drain.
  • Bring a large pot of lightly salted water to a boil. Cook the bow-tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain and transfer pasta to a serving bowl.
  • Heat olive oil and balsamic vinegar in a skillet over medium-high heat; fry tofu until liquid has reduced and tofu is slightly crisp, 2 to 3 minutes.
  • Mix tofu, asparagus, tomatoes, feta cheese, and basil together with pasta.

3/4 cup green onion, thinly sliced
2/3 cup extra virgin olive oil
1/3 cup balsamic vinegar
1 tablespoon Dijon mustard
1 tablespoon fresh parsley, minced
1 tablespoon fresh basil, minced
1 pinch fresh ground black pepper

Steps:

  • Place hot pasta in a large bowl; stir in the green onions.
  • Mix the mustard, parsley, basil, and black pepper into the vinegar.
  • Whisk the olive oil into the balsamic vinegar mixture.

For the balsamic vinegar:
1 tablespoon balsamic vinegar
1 1/2 tablespoons olive oil
1/2 teaspoon chopped garlic
sea salt and freshly ground black pepper
For the pasta:
3-4 heirloom tomatoes
1 cup fresh basil, julienned
8 ounces fresh mozzarella cheese, cut into 1/4-inch cubes
12 ounces pasta, fresh or dried, such as fettuccine
1 teaspoon olive oil
Garnish: fresh basil leaves

Steps:

  • 1. Pour the vinegar and salt into a small bowl, add olive oil, garlic and 1 1/2 tablespoons of salt and pepper and mix. Taste for seasoning. 2. Wash and chop the tomatoes. Toss with the balsamic vinaigrette and the julienned basil leaves. Add the mozzarella. 3. Bring a large pot of water to a boil. Add the pasta, bring to a boil and cook until al dente, 3 to 4 minutes for fresh pasta or according to the directions on the package. 4. Toss the pasta with 1 teaspoon of olive oil to prevent it from sticking and mix with the tomato-basil salad. 5. Divide the pasta among 4 large, warmed dinner plates. Arrange several spoonfuls of the tomato-basil salad on top.

10 ounces dried angel hair pasta
5 tablespoons extra virgin olive oil
1 large leeks or 2 bunches scallions, cut into 1/4 inch pieces including some of the green
4 garlic cloves, minced
2 large portabella mushroom caps, sliced
1 tablespoon balsamic vinegar
salt

Steps:

  • Pour the oil into a saute pan and heat over medium heat for about 30 seconds.
  • Saute the leek for about 2 minutes until softened.
  • Add the garlic and saute for another 30 seconds.
  • Add the mushrooms and saute, stirring frequently, until the mushrooms are wilted and the liquid they have given off has evaporated.
  • Add the balsamic vinegar, stir well, and season with salt to taste.
  • Bring a large pot of lightly salted water to a boil and add the pasta, stirring to make sure the pasta is well separated.

1/4 cup extra virgin olive oil
2 tablespoons extra virgin olive oil
1 medium onion, thinly sliced
salt
1 medium fennel bulb, bulb trimmed,halved,and thinly sliced (about 1 pound, fronds removed, minced, and 1 tablespoon reserved)
2 cloves garlic, finely minced or pressed through garlic press (about 1 teaspoon)
2 tablespoons balsamic vinegar
1/2 teaspoon crushed hot red pepper flakes
freshly ground black pepper
1 lb spaghetti
1 lb bright lights chard leaves or 1 lb rainbow chard leaves, stems trimmed and leaves thoroughly washed and coarsely chopped
1/2 cup grated parmigiano-reggiano cheese, plus more for passing at table

Steps:

  • Heat 1/4 cup oil over medium heat in large skillet.
  • Add onion and 1/4 teaspoon salt and sauté (uncovered) over medium heat until softened, about 5 minutes.
  • Stir in sliced fennel bulb and garlic and sauté, stirring frequently, until golden, about 10 minutes.
  • Add 3/4 cup water and bring to simmer.
  • Partially cover and simmer over medium-low heat until fennel is tender and liquid has evaporated, about 8 minutes.
  • Stir in vinegar, partially cover, and simmer to blend flavors, about 1 minute longer.
  • Add crushed red pepper flakes and adjust seasoning with salt and pepper.
  • Meanwhile, bring 4 quarts water to boil in large pot.
  • Add 1 1/2 tablespoons salt and pasta; return to boil.
  • After 3 minutes, add chard and return to rapid boil; continue to cook, covered, until pasta is al dente, about 8 minutes.
  • Drain pasta and greens, reserving 1/3 cup pasta cooking water.
  • Toss pasta and greens with fennel mixture, cheese, and two tablespoons extra-virgin olive oil, adding reserved pasta water as needed if mixture is dry.
  • Transfer portions to warm pasta bowls.
  • Garnish with reserved minced fennel fronds.
  • Serve immediately with more cheese passed separately.
