Steps:
- In a bowl whisk together the olive oil, balsamic vinegar, honey mustard, rosemary, garlic, salt and pepper.
- Add the chicken to a shallow dish and pour the marinade over mixing until the chicken is well coated and refrigerate for about an hour.
- Preheat grill to medium high.
- Grill the chicken, approximately 5-10 minutes on each side.
- Check to make sure the chicken is fully cooked, then serve.

MUSTARD BALSAMIC BAKED CHICKEN WITH ROASTED VEGETABLES

- 1. In a large bowl, add stone ground mustard, minced garlic clove, freshly chopped rosemary, balsamic vinegar, and salt & pepper. Whisk to combine, slowly add in olive oil. 2. Place chicken in bowl with mustard balsamic marinade. Toss to coat with marinade. Let sit for 30 minutes. 3. Preheat oven to 375º 4. Place all red onion, potatoes, red pepper, and carrots in 13x9" baking dish. Place chicken on top of vegetables and pour the remaining marinade over entire dish. 5. Place in oven for 1 hour and 15 minutes, until chicken is done and vegetables are soft. Remove from oven and serve!

- Preheat oven to 425ºF. Cook vinegar in small saucepan on medium-high heat 10 min. or until reduced by half. Stir in mustard.
- Place chicken in lightly greased 13x9-inch baking pan; brush generously with the vinegar mixture.
- Bake 12 min. or until chicken is cooked through (165ºF), turning after 6 min.

- In a bowl, combine the mustard, balsamic vinegar, garlic, rosemary, lemon juice, and season to taste with salt and pepper. Slowly pour the olive oil in with the mixture while whisking. Place the chicken in a marinating container (glass or plastic; don't use metal) and pour the mustard balsamic marinade on top. Place in the refrigerator or leave on the counter, covered, and marinate for about 30 minutes. Preheat your oven to 375 F. Transfer the chicken to a baking dish and empty the remaining sauce on top. Place in the oven and bake for 1 hour or until the chicken is cooked. Serve with roasted vegetables.
SAGE, MUSTARD AND BALSAMIC ROASTED CHICKEN
Steps:
- Preheat oven to 400 degrees. Push 3 sage leaves under the loose skin of each hen and transfer to a shallow, non-metallic dish. Place the oil, mustard, vinegar, salt and pepper in a bowl and stir to combine. Pour the mustard marinade over the hens and coat thoroughly. Allow to marinate in fridge for 30 minutes. Place hens on a wire rack in a metal baking dish. Toss the shallots with the remaining oil and place in bottom of dish. Roast for 15-20 minutes or until the hens are golden and cooked through and onions are tender.
