BAKED ZUCCHINI CARROT FRITTERS
This can be dropped by spoonfuls and fried in the traditional manner, but baking makes this much lower in fat.

Steps:
- Mix zucchini and 1/2 tsp salt.
- Let it sit 15 minutes, drain.
- Preheat oven to 350°F.
- Spray a 13x9-inch baking pan with cooking spray.
- Heat butter in a saute pan.
- Add carrots,onions and garlic, saute 10 minutes, remove from heat.
- Add zucchini, parmesan, flour, eggs, herbs salt and pepper.
- Spread in greased pan and bake 25 minutes.
- Remove and brush top with oil.
- Place under broiler and cook until lightly browned.
- Cut into squares or use a cookie cutter to cut into rounds.
- Serve with extra butter.

- Preheat oven to 400 degrees F. Lay the grated zucchini on a layer of paper towels and sprinkle with salt. Allow to sit for 5 minutes and transfer to a strainer. Using a wooden spoon or spatula, press out as much liquid as you can. Transfer to a bowl and add the rest of the ingredients. Stir until just combined. Line a baking sheet with parchment paper and drop spoonfuls of the mixture a couple inches apart. Bake for 10 minutes, flip and bake for 10 more until both sides are golden brown. Serve with sour cream or yogurt if desired. NOTE: For crispier fritters, spray or brush each fritter with a little olive oil just before flipping the first time, then spray the other side once flipped.
BAKED ZUCCHINI " FRITTERS"
I started off planning on using another zucchini fritter recipe I found on this site. I adapted it so that I could bake the fritters and still have them crispy. I'm just guessing on the measurements for the coating, since I didn't measure it out until half-way through cooking. I got about 24 fritters out of this, but depending on how big you want them, it will vary. Also, my oven heats about 100°F lower than it should, so I will give my approximate baking time, but I would appreciate feedback as to how long it actually takes.

Steps:
- Combine all ingredients, except for coating ingredients. Season to taste.
- Combine coating ingredients in a seperate bowl.
- Spray glass baking pan with olive oil cooking spray.
- Drop batter by spoonfuls into coating mixture. Cover each piece completely. Place each covered piece into pan. Spray the top of each piece with cooking spray.
- Broil on high until tops are golden brown (about 7-10 minutes in my oven). Flip each piece over and broil again. I flattened mine with a spatula when I flipped them, but you don't have to.
- Place on paper towels. Sprinkle with salt if desired.
