BAKED SWEET POTATO

Try this if your family is tired of traditional, regular baked potatoes. Our family likes these baked sweet potatoes with any kind of steak or chicken. Eat skin and all with fork and knife!

3 sweet potatoes
2 teaspoons vegetable oil, or as needed
6 tablespoons brown sugar
6 teaspoons salted butter

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a glass baking dish with aluminum foil.
  • Pierce sweet potatoes multiple times on each side with a fork. Rub with oil and place in the prepared baking dish.
  • Bake in the preheated oven for 1 hour, turning once after 30 minutes. Remove from the oven and let rest for 5 minutes.
  • Slice sweet potatoes in half. Make small slits in the flesh for brown sugar and butter to sink into. Place 1 tablespoon brown sugar on each half. Place 1 teaspoon butter on each half.

This is the way my mom makes yams every Thanksgiving....it definitely would NOT be the same dinner without them! No one in my family ever liked yams or sweet potaotes until she made these-they are incredible!!!

2 large yams
2 tablespoons brown sugar
1/4 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
1 teaspoon lemon juice
2 tablespoons butter, softened

Steps:

  • Preheat oven to 400.
  • Cook potatoes in boiling water about 25-30 min, or until tender; drain.
  • In a lrage bowl, mash potatoes and add in remaining ingredients; Beat until smooth.
  • Bake for 15 min or until lightly brown on top.

2 tablespoons olive oil
3 large sweet potatoes
2 pinches dried oregano
2 pinches salt
2 pinches ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat the bottom of a glass or non-stick baking dish with olive oil, just enough to coat.
  • Wash and peel the sweet potatoes. Cut them into medium size pieces. Place the cut sweet potatoes in the baking dish and turn them so that they are coated with the olive oil. Sprinkle moderately with oregano, and salt and pepper (to taste).
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 60 minutes or until soft.

CINNAMON BAKED SWEET POTATOES / YAMS



Cinnamon Baked Sweet Potatoes / Yams image

NOTHING is better than a hot cinnamon sweet potato! So easy to fix and goes well with any menu plan. This is a family favorite and particularly in the winter when the sweet potatoes are plentiful! This recipe can be doubled easily for more servings.

2 large sweet potatoes
4 tablespoons butter, melted
4 tablespoons brown sugar
1 teaspoon cinnamon

Steps:

  • Wash sweet potatoes. Place a sheet of tinfoil into a 9 x 9 baking pan. Leave peel on potatoes and place in pan.
  • Bake in a 350 degree oven for 1 1/2 hours to 2 hours depending on size or util potatoes stick tender with a knife.
  • Remove from oven and slit each potato in half. (Peeling can be left on or removed.) Pour melted butter on each half. Combine sugar and cinnamon and sprinkle on top.
  • Enjoy.
