Vidalia onion recipes are some of my favorites to whip up. Served alongside any of a variety of fish and meats, these tender onions are a nice change of pace. Folks find it a fun and flavorful side dish. -Norma Durham, Rogersville, Tennessee

2 small Vidalia or sweet onions
4 teaspoons butter
1/4 teaspoon salt
Dash pepper
Garlic salt to taste, optional

Steps:

  • Quarter onions halfway through and open slightly. Place each on a 18x12-in. piece of heavy-duty foil. Place 2 teaspoons butter in center of each onion; sprinkle with salt, pepper and, if desired, garlic salt. Fold foil to seal tightly. Bake at 350° until onions are tender, 50-60 minutes. Open foil carefully to allow steam to escape.

4 vidalia onions, peeled
1/4 cup butter
4 teaspoons Worcestershire sauce
2 teaspoons ground cumin
4 teaspoons brown sugar
1/2 cup chicken broth
1/2 cup dry white wine

Steps:

  • Preheat oven to 425 degrees F.
  • With a sharp knife, cut out a 1 inch in diameter by ¾ inch deep cavity in top of onions, reserving scraps.
  • Season each onion.
  • Combine butter, Worcestershire Sauce, cumin and sugar.
  • Fill cavities of onion with the butter mixture.
  • Arrange onions in baking dish, add broth, wine and scraps to dish and bake, basting occasionally, for 45 minutes to 1 hour, or until very tender.
  • Serve as a first course.

Lordy, Lordy, how my mother loved these baked Vidalia onions. You can only grow Vidalia onions in Georgia. Now I don't know why but that's what the Vidalia Onion Committee says. They start hitting the stores in late spring and run through the whole summer. The Jay Cees and other groups sell them each year also. My daughters...

1 large vidalia onion (1 per person)
1 Tbsp butter (1 per onion)
1 beef bouillon, cubes (1 per onion)

Steps:

  • 1. Prepare a fire in a charcoal grill. Trim a slice from the top of each Vidalia Onion, and peel the Vidalia Onion without cutting off the root end. With a potato peeler, cut a small cone-shaped section from the center of the Vidalia Onion. Cut the Vidalia Onion into quarters from the top down, stopping within a half inch of the root end. Place a bouillon cube in the center, slip slivers of butter in between the sections, and sprinkle with pepper. Wrap each Vidalia Onion in a double thickness of heavy-duty foil. Place the Vidalia Onions directly onto the hot coals and cook for 45 minutes, turning every so often. Or, bake the foil-wrapped Vidalia Onions in a 350°F oven for about 45 minutes. Serves one onion per person.
  • 2. Or you can prepare onions and wrap in Saran Wrap and put in microwave for 19 minutes.

6 vidalia onions
6 tablespoons butter
salt and pepper
Worcestershire sauce

Steps:

  • Get the biggest Vidalias you can find. Peel and cut a thin slice off the top and bottom of the onion so that it sits flat in a casserole dish. Take out a little of the core and cut a bit X in the top of the onion. Place each onion on a large square of aluminum foil.
  • Top with pat of butter, salt, pepper and Worcestershire sauce, to taste. Place in dish and bake at 400 degrees for 45 minutes to an hour, or until tender (check on these; you don't want it overcooked and too soft).
  • Variation: Prepare onions as above, but instead of Worcestershire sauce, pour on about 2 Tablespoons of Kahlua before baking. It makes them nice and sweet. You can also put these on a gas grill or nestle them right down into the charcoal (use heavy-duty aluminum foil).

1 lb vidalia onion (or other sweet)
1 egg, beaten
1 cup half-and-half
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Slice and separate onions into rings.
  • Cover with water and boil for 1 minute.
  • Drain and put into a 8x8 baking dish.
  • Combine egg, cream, salt and pepper and pour over onions.
  • Top with cheese and sprinkle with paprika.
  • Bake for 25 minutes.

BAKED STUFFED VIDALIA ONIONS

Do your best to choose onions that are uniform in size for even cooking. If you don't want to use white wine, you can easily substitute chicken broth. You can also top each onion with a bit of shredded cheese - muenster is a personal favorite.

2 large vidalia (or other sweet variety) onions, about 3/4 lb each
2 Tbsp butter
1/2 tsp salt
1/4 tsp white pepper
1 Tbsp all purpose flour
1/4 c dry white wine
1/4 c half-and-half
1 Tbsp bread crumbs
paprika

Steps:

  • 1. Preheat the oven to 375°F.
  • 2. Trim a slice, about 1/2-inch thick, from the root end of each onion. Peel away the papery skin and place the onions in a covered, microwave-safe dish with about 1/4-inch of water in the bottom. Microwave at 80% power for 4 to 4-1/2 minutes. Remove from the oven, drain off the water and let stand, uncovered, until cool enough to handle.
  • 3. To begin removing the inner layers of the onion, insert a fork into the center through the cut end, about 1-inch deep. Twist to separate the layers, pull upward gently, remove and set aside. Repeat with additional layers until you are left with a hollow shell about 3/8-inch thick. This could be one or two remaining layers, depending on your onion.
  • 4. Chop the reserved onion into 1/2-inch dice. Melt the butter in a large pan over medium heat. Add the onions and cook until softened completely, about 2 minutes. Season with salt and pepper, then sprinkle the flour evenly over the onions, tossing to coat. Continue to cook, stirring constantly, until the flour begins to turn uniformly golden in color, about 3 minutes. Slowly add the white wine and stir to combine thoroughly. Stir in the half-and-half and continue cooking until the mixture is thickened and smooth, about 3 additional minutes. Taste and adjust the seasoning if desired
  • 5. Using a spoon, fill the onion shells with the creamed mixture, pressing down gently with each spoonful. Top with the breadcrumbs, dust with a bit of paprika for color, and place in the oven for 8 to 10 minutes, or until the crumbs have browned.

8 ounces blue cheese, crumbled
1 tablespoon milk
3 tablespoons butter, softened
2 teaspoons Worcestershire sauce
1/3 cup chopped fresh parsley
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 400. Lightly grease a 13 x 9 baking dish Set aside.
  • Slice the onions lengthwise into about 8 wedges each and put in the 9 x 13-inch baking dish.
  • In a bowl, combine the blue cheese, milk, butter, Worcestershire, parsley, and pepper. Spoon over onions.
  • Bake at 400 for about 30 minutes or until brown and bubbly.

4 beef bouillon cubes
4 tablespoons butter
Freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F. Trim and slice from the top of each onion, and peel the onion without cutting off the root end. Using a potato peeler, cut a small cone shaped section for the center of the onion. Cut the onion into quarters bron the top down, stopping within 1/2-inch of the root end. Place a bouillon cube in the center of each onion, slip silvers of butter between the sections, and sprinkle with pepper. Wrap each onion in heavy duty foil and place onions in a 13x9x2-inch baking dish. Bake onions for 45 minutes. To serve, place each onion in individual bowls, because the onions will produce a lot of broth. Tastes like French onion soup.

4 medium vidalia onions
2 tablespoons olive oil
1 teaspoon salt
4 tablespoons balsamic vinegar

Steps:

  • Preheat oven to 350.
  • Slice off the bottom and top of the onion, but do not peel.
  • Place in an oiled baking pan and brush them with oil.
  • Sprinkle with salt.
  • Cover with parchment paper and bake for 30 minutes.
  • Remove the paper and sprinkle each onion with balsamic vinegar.
  • Return to the oven for another 30 minutes.
  • Remove the outer peel of the onion and serve hot.

How to make Classic Baked Whole Vidalia Onions

1 Vidalia onion
1 vegetable, chicken or beef bouillon cube
1-2 Tbsp. butter

Steps:

  • Preheat your oven to 350°F.Peel your onion, leaving the root intact. If your onion sits level, you can leave it alone. If not, cut a thin slice off the root to create a flat bottom.
  • Use a paring knife to cut a 1-inch deep cone into the top of the onion.
  • Insert a vegetable, chicken, or beef bouillon cube into the hole.
  • Fill the rest of the hole withbutter, about 1-2 tablespoons. Season with salt and pepper.
  • Place the filled onion on a sheet of foil large enough to encase it.
  • Wrap the onion in foil, bringing the edges up in the center. Twist the foil together to seal the onion in. Place the foil-wrapped onion on a baking sheet.
  • Bake for 45-60 minutes, until the onion is tender. Serve warm.
