3 Tbsp olive oil, extra virgin
1 large lemon, juiced
1/4 c minced onion
2 tsp minced garlic
2 - 3 roma tomatoes, seeded and diced
1/4 c chopped ripe olives
2 tsp oregano
1/2 c chopped fresh parsley, divided
1/2 tsp salt
1/2 tsp black pepper
5 oz crumbled feta cheese
6 talapia filets

Steps:

  • 1. Preheat oven to 400 degrees. Spray a 13-inch by 9-inch baking dish with nonstick cooking spray.
  • 2. In a small bowl, combine olive oil, lemon juice, onion, garlic, tomatoes, olives, oregano, half the parsley, salt and black pepper. Mix well.
  • 3. Lay Tilapia fillets in a single layer in the baking dish. Spoon oil and tomato mixture over the fish.
  • 4. Cover with foil and bake for 15 - 18 minutes.
  • 5. Remove from oven and garnish with remaining parsley and crumbled feta cheese.
  • 6. Perfect served with steamed vegetables.

Talapia fish baked in the oven with seasoning and butter. This is the first entree that I learned how to cook from my mom.

10 tilapia fillets (unfrozen)
1 teaspoon butter
creole seasoning
lemon pepper
garlic salt

Steps:

  • Thaw out 10 pieces of frozen talapia.
  • Pre-heat the oven to 350 degrees.
  • Wash the fish pieces off in the sink.
  • Spray the foil pan with cooking spray.
  • Place the fish in the foil pan with 4 peices on each side of the pan and two pieces in the middle.
  • Sprinkle seasonings, creole seasoning, lemon pepper, and garlic salt on the fish.
  • Put the teaspoon of butter top in the middle of the fish.
  • Place a foil over the pan.
  • Place it in the oven.
