Roasted Sweet Potato Rounds, a simple baked crispy sweet potato slices recipe with just four ingredients and ready in only 45 minutes. Perfect as a simple side dish or salad topping and great for meal prep!

3 medium sweet potatoes
2 tablespoons olive oil
1 pinch salt and pepper
Optional spices: paprika, cumin, cayenne, cinnamon, garlic, etc.

Steps:

  • Preheat oven: Preheat oven to 425 degrees F (230 degrees C).
  • Prep potatoes: Wash sweet potatoes and remove any growths or blemishes, but do not peel. Cut potatoes into 1/3 inch (10 mm) round slices.
  • Season potatoes: Drizzle olive oil onto large sheet pan and spread until even on baking sheet. Add potato rounds to pan with one side facing down to cover with oil, then flip all potato medallions to make sure each side is lightly oiled. Sprinkle with salt, pepper, and any additional desired spices.
  • Bake until golden brown: Bake in oven for a total of 40-45 minutes, flipping once about halfway through and until both sides are lightly browned and crispy on the edges.

cooking spray
2 sweet potatoes
1 teaspoon seasoned salt, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets with cooking spray.
  • Make a lengthwise cut partway through the middle of each sweet potato.
  • Cut potatoes into coins using the slicer attachment on a spiralizer. Arrange coins on the baking sheets. Spray with cooking spray. Season both sides with seasoned salt.
  • Bake in the preheated oven until edges start to curl, 20 to 25 minutes. Season with more salt. Let cool until crisp, about 10 minutes.

Enjoy a baked sweet potato for an easy lunch or supper. Serve as a side dish with butter, or top with your favourite filling - chilli or tuna mayo work well

2 medium sweet potatoes
2 tsp olive oil
pinch of sea salt flakes
butter, tuna mayo, chilli con carne, baked beans, cheese or green salad (optional)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Scrub the sweet potatoes clean, put on a baking tray and prick all over with a fork. Drizzle each with a little oil and sprinkle with a pinch of sea salt flakes. Put in the oven for 45 mins to 1 hr, depending on their size, until crisp on the outside, and they're pierced easily with a small knife. Serve as a side with butter, or add a filling of your choice.
