STEAK AND LIMA RICE

2 tablespoons vegetable oil, divided
1 (10 ounce) package frozen baby lima beans, thawed
2 (15 ounce) cans tomato sauce
1 cup boiling water
⅓ cup white sugar
2 pounds beef top round steaks, 3/4 inch thick
¼ cup all-purpose flour
salt and pepper to taste
2 cups uncooked long grain rice
4 cups water

Steps:

  • Heat 1 tablespoon of oil in a large saucepan over medium heat. Add the lima beans, and cook until wrinkled, about 10 minutes. Pour tomato sauce over the beans and stir in 2 cups of water and sugar. Cover and simmer over low heat for 45 minutes.
  • Heat the remaining tablespoon of oil in a large skillet over medium-high heat. Brown steaks on each side, then pour in just enough water to cover. Place a lid on the pan and simmer for 35 to 40 minutes over medium-low heat. Spoon some of the liquid into a cup or small bowl and mix with flour until smooth. Return to the pan and simmer until gravy has thickened. Season with salt and pepper to taste.
  • Combine the rice and 4 cups water in a saucepan. Bring to a boil, then reduce heat to low. Cover and cook for 20 minutes, or until rice is tender.
  • To serve, spoon rice onto plates. Top with steak and gravy then top with lima bean sauce.

2 pounds skirt steak, cut into 1/2-inch dice
Kosher salt and fresh cracked black pepper
4 to 6 slices thick-cut applewood smoked bacon, 1/4-inch diced (about 1 cup)
1 1/2 cups 1/4-inch diced red onion
1/2 cup seeded and finely diced jalapenos (2 medium)
3 tablespoons minced garlic
1 teaspoon kosher salt
2 teaspoons fresh cracked black pepper
Apple cider vinegar, best quality
1 (15-ounce) can cannellini beans, with liquid
1 (15-ounce) can lima beans, with liquid
1 (15-ounce) can kidney beans, with liquid
1/3 cup molasses
2 tablespoons dark brown sugar
3 tablespoons soy sauce
1/3 cup ketchup
Crusty bread, for serving

Steps:

  • Sprinkle the steak with salt and pepper. Set aside.
  • In a large Dutch oven (preferably enameled cast iron) over medium-high heat, render the bacon until just starting to crisp, 6 to 7 minutes, stirring as needed. Remove 1 tablespoon of the bacon fat and set aside. Add the onions and jalapenos and cook until the onions are translucent, about 5 minutes more. Add in the garlic cook 1 to 2 minutes. Remove all from the pot to a small bowl. Set aside.
  • Wipe down the inside of the pot, add the reserved 1 tablespoon bacon fat and, when starting to smoke, add in 1/3 to 1/2 of the steak and cook, stirring as needed until just starting to brown, about 8 minutes. Remove to the vegetable bowl, repeat with the remaining steak.
  • Once the steak is cooked, deglaze with 1 tablespoon apple cider vinegar. Then return all the vegetables and cooked steak back to the pot and add in the beans, including the liquid in the can. Add the molasses, brown sugar, soy and ketchup, and stir to combine. Bring to a simmer over low heat, cover and cook for 2 hours, stirring every 20 to 30 minutes to assure that the bottom doesn't stick.
  • Add in more apple cider vinegar, a few tablespoons at a time to personal taste, and serve with crusty bread.

This came from a cookbook called "All Day Singing and Dinner on the Ground" by Willadeene Parton (Dolly's sister) that we recently got. The cookbook is full of really good, simple family recipes! I love lima beans, so here's one we've adapted and hope to make. Time does not include overnight bean soaking.

1 1/2 cups dried lima beans
1 teaspoon salt
1 lb pork sausage, browned well until crisp
1/4 cup molasses
1/2 cup condensed cream of tomato soup
1/2 cup tomato ketchup
1 teaspoon dry mustard
fresh ground black pepper, to taste
1/8 teaspoon granulated garlic or 1/8 teaspoon garlic powder
1/4 cup hot water

Steps:

  • Soak the beans in lots of water overnight, then drain, rinse, and pick out any bad ones.
  • In a large pot, cover with cold water and add salt. Simmer covered over medium heat for 35 to 45 min until tender (make sure they don't get mushy). The amount of time it takes will depend on how large the beans are.
  • Preheat oven to 350 degrees F.
  • Drain and pour the cooked beans into a well-oiled baking dish.
  • In a bowl, combine the remaining ingredients and stir to combine well. Add to the beans and fold it all together.
  • Bake in a 350 degree F oven for 1 hour.
  • Note: onions would also go well in this recipe.

¾ pound bacon
1 pound ground beef
2 large onions, chopped
1 (18 ounce) bottle honey barbecue sauce
4 (15 ounce) cans pork and beans
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can lima beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
½ cup packed brown sugar
3 tablespoons cider vinegar
1 tablespoon liquid smoke flavoring
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Let cool, and crumble.
  • Place the ground beef and onions into a large skillet over medium heat, and cook and stir until the meat is no longer pink, breaking the meat apart as it cooks, about 10 minutes. Drain excess grease. Transfer the beef and onion mixture into a large Dutch oven. Stir in the crumbled bacon, honey barbecue sauce, pork and beans, kidney beans, lima beans, black beans, brown sugar, cider vinegar, liquid smoke, salt, and pepper.
  • Cover, and bake in the preheated oven until bubbling, about 1 hour.

1-1/2 pounds boneless round steak
1 tablespoon prepared mustard
1 tablespoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 garlic clove, minced
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 medium onion, chopped
1 teaspoon beef bouillon granules
1 can (16 ounces) kidney beans, rinsed and drained
Hot cooked rice

Steps:

  • Cut steak into thin strips. Combine mustard, chili powder, salt, pepper and garlic in a bowl; add steak and toss to coat. Transfer to a 3-qt. slow cooker; add tomatoes, onion and bouillon. Cover and cook on low for 6-8 hours. Stir in beans; cook 30 minutes longer. Serve over rice.
