SALTED CARAMEL APPLE PIE BARS
Baking apple pie as bars is so much easier!

- Preheat the oven to 300°F (149°C). Line the bottom and sides of an 8-inch square baking pan with parchment paper leaving enough overhang on all sides. Set aside.
- Stir the melted butter, granulated sugar, vanilla, and salt together in a medium bowl. Add the flour and stir until everything is combined. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes and then remove from the oven. (As the crust bakes, you can prepare the filling and streusel.)
- Combine the sliced apples, flour, granulated sugar, cinnamon, and nutmeg together in a large bowl until all of the apples are evenly coated. Set aside.
- Whisk the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the chilled butter with a pastry blender or two forks (or even with your hands) until the mixture resembles coarse crumbs. Set aside.
- Turn the oven up to 350°F (177°C). Evenly layer the apples on top of the warm crust. It will look like there are too many apple slices, so layer them tightly and press them down to fit. Sprinkle the apple layer with streusel and bake for 30-35 minutes or until the streusel is golden brown.
- Remove from the oven and allow to cool for at least 20 minutes at room temperature, then chill in the refrigerator for at least 2 hours (or overnight). Lift the foil or parchment out of the pan using the overhang on the sides and cut into bars. I usually cut them into 16 smaller bars, but you can cut them into 12 larger bars. Once cut, drizzle some salted caramel sauce on top of each. These apple pie bars can be enjoyed warm, at room temperature, or even cold.

- Preheat the oven to 375 degrees.
- Place the dry ingredients for the crust in a large bowl and blend them.
- Add the butter, egg yolk, and cream.
- Using your hands, work the mixture quickly until it is crumbly.
- Press it into the bottom of a 9-inch spring form pan.
- For the filling, arrange the apples in a pattern over the dough.
- Mix the rest of the filling ingredients together until crumbly.
- Sprinkle this over the apples.
- Bake for about 40 minutes.

A favorite among my family and friends. The apples go great with the shortbread crust. Very easy and delicious! Serve with whipped cream.

- Preheat oven to 400 degrees F (200 degrees C.)
- Sift four, 1/2 cup sugar and salt into a large bowl. Cut in butter until mixture resembles coarse crumbs. Fold in egg yolks (mixture will be crumbly). Remove 1/4 of mixture, and set aside. Press remainder onto bottom and sides an 8 inch tart shell or pie pan.
- In a large bowl, combine apples, brown sugar, 1 tablespoon flour, cinnamon and nutmeg. Place apples into crust, and sprinkle reserved crumb mixture evenly over top.
- Place pie on a baking sheet, and bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking 20 minutes, or until top is golden brown and filling is bubbling.

BAKED SHORTBREAD APPLE DESSERT
Just a lovely comforting dessert that I've enjoyed making over the years and a nice change from the standard baked apple pie. It is great using the Girl Scout Shortbread cookies too. You can also substitute the shortbread cookies with oatmeal cookies.

Steps:
- Melt 6 tablesppons of butter in a large skillet over medium heat.
- Add cookie crumbs, 1/2 cup sugar and cinnamon.
- Stir over medium heat for 3 minutes.
- Transfer crumbs to a bowl and set aside.
- Add remaining 2 tbls. butter, the sliced apples, 1 tbls. sugar and lemon juice to skillet.
- Cover and cook over medium heat until apples are tender, about 10 minutes, stirring frequently.
- Heat oven to 375 degrees.
- In a 2 quart casserole dish, layer half of the apples and half of the crumbs.
- Top with remaining apples, crumbs and then the almonds.
- Bake for 25-30 minutes or until crumbs are golden brown.
- Serve warm with vanilla ice cream.
