BAKED SAUSAGE AND GREEN BEAN ALFREDO
French green beans are thin beans. I like the Southern Selects brand that Sam's Club sells in 2-1lb. packs. They tend to be more affordable at Sam's versus grocery stores. Also, they are in a breathable cellophane package that keeps them fresh for a long time. If you can't find the fresh thin, French green beans, any other fresh will do, but they may need to cook a little longer is you like them relatively soft. I also find the spinach/asiago cheese chicken sausage links at Sam's Club, but you could use another flavor of pre-cooked sausage that would lend itself to the alfredo sauce. If you have a favorite sausage that doesn't come pre-cooked, just cook separately prior to adding to sauce. I made this for the first time last night. It was an experiment and our family loved it, so I thought I'd share. I'll try to remember to take a picture to upload next time, but I have to tell you, with the color of the veggies and all, it was a pretty dish too!

Steps:
- In large pot, cook pasta and beans in boiling water for 10 minutes or until pasta is al dente.
- Empty pot into strainer, rinse pot, return to medium heat burner.
- Add jar of sauce, onion, garlic, and other seasonings to pot to heat, stirring frequently for about 5 minutes or until sauce begins to cook onions, etc.
- Drain juice from tomatoes into sauce jar, put lid on and shake to mix in any sauce remaining in jar. Pour into sauce.
- Add tomatoes to sauce.
- Taste to assess seasoning and cook for several minutes, stirring frequently.
- Add sliced sausage and cook several more minutes, stirring frequently.
- Sprinkle with grated cheese.
- Cover pot and bake in 350-degree oven for 45 minutes.

- Preheat oven to 350°F.
- Combine Alfredo sauce, beans, 1/2 of the onions and pepper.
- Place in a 1 1/2 quart baking dish and sprinkle with Parmesan.
- Bake 25 minutes or until bubbling.
- Top with remaining onions and bake 5 minutes.

A HEARTY GREEN BEAN AND SAUSAGE CASSEROLE
A hearty variation on the traditional green bean casserole that can be used as a main dish or a side.

- Crumble the pork sausage into a large skillet over medium-high heat. Cook and stir until evenly browned. Drain grease, and set aside.
- Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13 inch baking dish with nonstick cooking spray.
- In a large bowl, stir together the cream of mushroom soup, milk, soy sauce, garlic, and pepper. Mix in the sausage, then add the green beans, and stir until evenly coated. Pour half of the mixture into the prepared baking dish. Top with half of the fried onions. Spread remaining green bean mixture over the onions.
- Bake for 30 minutes in the preheated oven. Remove from the oven, and sprinkle the rest of the fried onions over the top. Return to the oven for 5 to 10 more minutes, or until the onions are toasty, and green beans are cooked to your desired doneness. Let rest 5 minutes before serving.
