1 quart water
1 cup quick-cooking grits
2 tablespoons butter
2 garlic cloves, minced
1/4 teaspoon cajun seasoning
2 eggs
1/2 lb Velveeta cheese, cut into 1/2-inch cubes

Steps:

  • HEAT oven to 350°F.
  • BRING water to boil in medium saucepan on medium-high heat. Gradually stir in grits; cook on low heat 5 min., stirring occasionally. Remove from heat. Add butter, garlic and seasoning; stir until butter is completely melted and mixture is well blended.
  • BEAT eggs in small bowl until blended. Add small amount of hot grits; mix well. Gradually add to remaining grits in pan, stirring constantly until blended.
  • POUR into 8-inch square baking dish sprayed with cooking spray. Top with VELVEETA; press gently into grits with back of spoon until partially covered.
  • BAKE 40 minute Let stand 10 minute before serving.
  • For a Stronger Spice Flavor:.
  • Substitute 1/2 teaspoons ground red pepper (cayenne) for the Cajun seasoning.

3 cups cooked grits
2 tablespoons melted butter
2 eggs, beaten
1 1/2 cups evaporated milk
1 3/4 cups grated Cheddar
Paprika, to taste
Cayenne pepper, to taste (usually no more than 1 or 2 dashes)

Steps:

  • Preheat oven to 400 degrees F.
  • Mash grits until smooth, if they are leftovers. Add melted butter, eggs, and evaporated milk. Then add 1 1/2 cups grated cheese, reserving 1/4 cup for the topping. Combine thoroughly. Add paprika and cayenne. Pour mixture into a buttered casserole. Bake for 25 to 30 minutes or until brown. Sprinkle with remaining grated cheese and more paprika. Return to oven and cook a few minutes more, until topping has melted.

I had this at a party at a colleague's house. I've loved cheese grits for years, but these are by far the best I've ever had.

1 quart milk
½ cup butter
1 cup uncooked grits
1 teaspoon salt
½ teaspoon white pepper
1 cup shredded Cheddar cheese
⅓ cup butter
½ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Bring the milk to a boil in a pot over medium heat. Melt 1/2 cup butter in the boiling milk. Gradually mix in the grits, and cook 5 minutes, stirring constantly. Remove from heat, and season with salt and pepper. Beat with a whisk or electric mixer until smooth. Mix in the Cheddar cheese and 1/3 cup butter. Transfer to the prepared baking dish, and sprinkle with Parmesan cheese.
  • Bake 1 hour in the preheated oven, until firm.
