BAKED SALMON FILLET WITH PICKLED CRANBERRIES, PARSLEY & PISTACHIOS
Balance out an oily fish, such as salmon, with homemade pickled cranberries. They also add a fun, Christmassy feel to the dish

- Make the pickled cranberries a week or two ahead. Put the vinegar and sugar in a pan over a medium heat and bring to the boil. Stir in the remaining ingredients and continue to boil for 4 mins. Pour the mixture into a 1-litre sterilised jar, or two smaller ones, and seal well, then leave to cool. Chill in the fridge for at least a week.
- Heat the oven to 200C/180C fan/gas 6. Toast the breadcrumbs in a dry frying pan for 2-3 mins until golden and toasted, then tip onto a plate and leave to cool.
- Combine the breadcrumbs, thyme, sumac, lemon zest and some seasoning in a mixing bowl. Drizzle with the 5 tbsp olive oil and mix in thoroughly.
- Lay a piece of baking parchment on a baking tray large enough to fit the salmon fillet. Put the salmon fillet skin-side down on top, and carefully spread the crust mixture over the top of the salmon. Don't press the mixture down too much. Drizzle with a little extra olive oil.
- Bake the salmon for 20-25 mins ideally until it is just cooked and the crust has turned a golden colour. Once cooked, transfer to a serving platter and garnish with the pistachios, some drained pickled cranberries and the parsley. Try serving with buttered greens and roast new potatoes.

- Arrange salmon fillets in baking pan, drizzle with combined butter and oil.
- Top with lemon slices.
- Bake in 400 degree Fahrenheit oven 15 minutes or until flesh is no longer translucent.
- Mustard Sauce:.
- Lightly saute shallots in butter; add wine and reduce until nearly evaporated.
- Add cream; cook and stir until thickened.
- Add mustard, chives, and parsley.
- Season to taste with salt.
- To Serve:.
- Ladle serving of sauce on serving plate; arrange lemon topped salmon on sauce.
- Garnish with pear tomatoes and parsley sprigs.

- Fry bacon until brown and crisp. Remove from pan. Add celery, onions and sage to bacon drippings and saute until vegetables are golden, about 10 minutes. Tear bread into bite size crumbs. Combine crumbs with browned vegetables, bacon and bacon drippings, mixing well. Combine beaten eggs, salt, pepper, chicken stock and 1/2 cup wine; stir through bread mixture. Spoon dressing into large greased baking pan. Combine lemon juice, 1/3 cup wine and melted butter; dip fillets in sauce and arrange over dressing. Bake, uncovered, at 350* for 25-30 minutes. Baste with sauce. Garnish with lemon quarters.

BAKED SALMON FILLET WITH WALNUT SAUCE RECIPE

- Preheat oven to 400 degrees. Place salmon in an oiled baking dish. Heat 3 tablespoons oil in a skillet and add onions. Turn the heat to low, cover and cook, stirring occasionally, until onions become soft and pasty (do not brown). Add bell pepper and cook until soft. Stir in paprika and tomato paste and remove from the heat. Briefly toast walnuts, being careful not to burn. Let cool briefly, then add walnuts, salt, pepper and sour cream to onions and bell peppers. Mix well. Spread sauce thickly over the salmon. Drizzle with lemon juice. Bake salmon for about 10 minutes per inch of thickness of fish and sauce (about 15 minutes). Serve with lemon wedges. Makes 6 servings. Tip: This recipe goes wonderfully with an Alsatian Riesling.

- Preheat oven to 400 deg. F. In a small bowl, combine the butter, half of the lemon juice, chives, mustard, lemon peel, salt and pepper until well blended.
- Line a baking sheet with foil. Rub one tablespoon of the mustard-chive butter over the foil. Place the fillets skin side down on the foil and spoon about one teaspoon of lemon juice over each fillet. Season with salt and pepper.
