1 lb tomatillo
1 tablespoon chopped garlic
1/4 cup cilantro, chopped (loosely packed)
1 lime, juice of
1/2 cup mashed avocado
1 teaspoon chopped jalapeno
salt
1 lb queso fresco (Mexican cheese)

Steps:

  • Preheat oven to 350 degrees.
  • In a large saucepan, bring 2 quarts of water to a boil.
  • Remove husks from tomatillos.
  • Boil tomatillos for about two minutes or until soft.
  • Remove tomatillos from water and place in a blender or food processor.
  • Add garlic, cilantro, lime juice, avocado, jalapeño and salt.
  • Purée until smooth.
  • Place cheese in ovenproof serving dish.
  • Pour sauce over cheese and bake for 20 minutes.
  • Remove from oven and serve with tortilla chips.

Shredded Chicken and Tomatillo Tacos with Queso Fresco image

6 tomatillos, husked, washed, and grilled until blackened
1 serrano, grilled until blackened
Olive oil
1/2 small red onion, coarsely chopped
2 cloves garlic, coarsely chopped
1 cup chopped fresh cilantro
1 lime, juiced
2 tablespoons honey
1 1/2 cups shredded rotisserie chicken
8 blue corn tortillas
1 cup crumbled queso fresco

Steps:

  • Preheat the grill to medium. Add the blackened tomatillos and serrano to a small saute pan and briefly saute in a little olive oil on the grates of the grill.
  • Place the tomatillos, serrano, onion, garlic, cilantro, lime juice, and honey in a blender and blend until smooth. Place the tomatillo mixture in a large saute pan and place on the grates of the grill. Bring the mixture to a simmer, add the chicken, and heat through.
  • Place the tortillas on the grill, and grill for 20 seconds on each side. Spoon the chicken mixture into the tortillas and top with a few tablespoons of queso fresco. Fold the tortillas in half serve immediately.

RIDICULOUSLY EASY QUESO FRESCO "DIP"



Ridiculously Easy Queso Fresco

On a recent trip to the local Costco®, I ended up purchasing a huge thing of queso fresco, or Mexican white cheese. Not sure what to do with it, I created this modified dip that goes perfectly with any Mexican-themed meal! It's so ridiculously easy, and looks much more refined than classic chile con queso. Serve with tortilla chips and enjoy! Reheat as needed.

1 (12 ounce) package queso fresco
1 (16 ounce) jar salsa
1 bunch fresh cilantro, chopped
1 jalapeno pepper, seeded and diced
2 dashes hot pepper sauce (such as Frank's RedHot®)

Steps:

  • Slice queso fresco in half horizontally, creating 2 rounds. Transfer to a shallow microwave-safe baking dish.
  • Spread salsa evenly over queso fresco and pour any residual juices around the dish for the queso fresco to marinate in. Top with cilantro, jalapeno, and hot sauce. Cover with plastic wrap and let marinate, at least 2 hours, preferably longer.
  • Heat queso fresco in the microwave until slightly softened, about 3 minutes.

Shredded Chicken and Tomatillo Tacos With Queso Fresco image

This recipe is courtesy of Bobby Flay and it is fantastic! It is very simple to put together but has wonderful flavor for such minimal effort. When in a hurry, I have skipped grilling/blackening the tomatillos and serrano and just sautéed them in a hot pan until softened and the skins were slightly charred and it still tastes great. I highly suggest you blacken them on the grill if you have time because it adds a beautiful smokiness to the tomatillo sauce.

6 tomatillos, husked, washed, and grilled until blackened

2 tablespoons honey (I usually only need 1 tbls of honey and add the second tbls only if the serrano was too spicy)

Steps:

  • Add the blackened tomatillos and serrano to a small sauté pan and briefly sauté in a little olive oil over medium high heat.
  • Place the tomatillos, serrano, onion, garlic, cilantro, lime juice, and honey in a blender and blend until smooth. Place the tomatillo mixture in a large sauté pan. Bring the mixture to a simmer, add the chicken, and heat through. (You may also skip this last step and just drizzle the tomatillo sauce over the top of the chicken after you have placed it in the tortilla).
  • Run the tortillas under the tap to lightly moisten them and then place the tortillas on the grill or warm non-stick griddle, and grill for 20 seconds on each side. Spoon the chicken mixture into the tortillas and top with some cilantro and a few tablespoons of queso fresco. Fold the tortillas in half serve immediately.
