8 medium baking potatoes, about 8 ounces each, scrubbed
2 tablespoons olive oil
1 large onion, finely chopped
1 cup reduced-fat sour cream
Coarse salt and ground pepper
1/4 cup snipped chives

Steps:

  • Preheat oven to 400 degrees. Prick potatoes in several places with a fork. Place on a baking sheet, and bake until easily pierced with the tip of a knife, 50 to 60 minutes.
  • Meanwhile, make onion sour cream: In a 10-inch skillet, heat oil over medium-low heat. Add onion and cook, stirring occasionally, until translucent, 8 to 10 minutes. Transfer to a medium bowl; cool to room temperature.
  • Add sour cream to onion; mix to combine. Season with salt and pepper.
  • Cut a deep cross in the top of each potato; push ends together to open. Season with salt and pepper. Spoon some onion sour cream over each potato, and sprinkle with chives. Serve.

4 russet potatoes (about 2 1/2 pounds)
3 tablespoons extra-virgin olive oil, plus more for brushing
Kosher salt and freshly ground pepper
2 poblano peppers, stemmed and seeded
1 small white onion
1/2 cup low-sodium chicken broth or water
1/4 cup sour cream, plus more for serving
2 teaspoons Worcestershire sauce
2 teaspoons fresh lime juice
Cilantro leaves, for serving

Steps:

  • Preheat oven to 400 degrees. Thoroughly wash and dry potatoes. Prick each in a few spots with a fork. Brush with oil and season with salt.
  • Place potatoes directly on rack and bake until soft and easily pierced with the tip of a knife, 1 hour to 1 hour, 15 minutes, depending on size. Meanwhile, halve and thinly slice peppers and onion. Heat oil in a large skillet over medium-high. Add peppers and onion, season with salt, and cook, stirring occasionally, until tender and golden in places, 12 to 15 minutes. Stir in broth and sour cream. Boil until mixture thickens slightly, about 2 minutes. Stir in Worcestershire and lime juice.
  • Remove potatoes from oven. Grab a hot potato with a clean kitchen towel and bang it down firmly on the counter once to fluff up the flesh. Repeat with remaining potatoes. Cut open, season generously with salt and pepper, and top with pepper mixture, more sour cream, and cilantro.

3 -4 lbs potatoes
1/3 cup olive oil
1/4 cup balsamic vinegar
3 garlic cloves, grated
2 tablespoons fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1/2 teaspoon sea salt
1 teaspoon fresh ground pepper
1/4 cup water
1/4 cup parmesan cheese, grated
1/2 cup fat free sour cream
2 garlic cloves, grated
1 -2 tablespoon onion, grated
1 tablespoon chives, chopped
1 tablespoon lime zest (from one lime)
1 lime, juice of
1/8 cup fresh parsley, chopped
1 teaspoon sugar

Steps:

  • Wash and chunk potatoes. Can peel if you want. I usually don't.
  • Mix all ingredients except the parmesan cheese and toss with potatoes.
  • Pour into a baking dish.
  • Marinade for 30 minutes.
  • Bake at 350 for 60 minutes or until fork tender.
  • Sprinkle with the cheese just before serving.
  • Time depends on size of potatoes.
  • NOTE: Depending on your personal likes you can mix the potatoes and oil/seasoings in a bowl,marinade then just spoon the potatoes into an oiled or sprayed baking dish and then drizzle with as much of the oil/seasoning mixtue as you would like to use.
  • Sour Cream Dip.
  • Mix all ingredients. Chill for an hour.

I made these up years ago and have been making them ever since. They are always a big hit. These potatoes make a wonderful side dish for any meal and are terrific heated up the next day for lunch.

4 large baking potatoes
8 slices bacon
1 cup sour cream
½ cup milk
4 tablespoons butter
½ teaspoon salt
½ teaspoon pepper
1 cup shredded Cheddar cheese, divided
8 green onions, sliced, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake potatoes in preheated oven for 1 hour.
  • Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.
  • Bake for another 15 minutes.

I don't know what it is about these potatoes, from the cookbook Second Helpings from Union Square Cafe, that is so good. Roasting them in sea salt in a cast iron skillet just does....something. I love preparing this recipe; it's almost like a ritual! :) Preparation and cooking times are close guesstimates. I hope you enjoy these as much as I do!

1 1/2 cups course sea salt
1 1/2 tablespoons olive oil
1 medium white onion, unpeeled
4 idaho potatoes, about 8 ounces each,scrubbed and unpeeled
4 -6 tablespoons sour cream

Steps:

  • Preheat oven to 400 degrees Farenheit.
  • Place the salt in an even layer over the bottom of a 12-inch cast-iron skillet.
  • Pour the olive oil into a medium bowl.
  • Dip onion in oil to coat all over.
  • Place onion on salt in the center of the skillet, and roast in oven for 10 minutes.
  • Coat the potatoes with the remaining oil and set them around the onion in the skillet.
  • Roast until the onion is tender and potatoes are cooked through, about an hour and 10 minutes.
  • Using tongs or a kitchen spoon, transfer the onion to a cutting board.
  • Measure 1/4 teaspoon of salt from the skillet and set aside.
  • Turn off the oven, and return the skillet with the potatoes to the oven, leaving door slightly ajar.
  • Peel and coursely chop the onion.
  • Transfer to a small bowl and season with the reserved salt.
  • Place the potatoes on a serving platter, split and open each.
  • Spoon one-quarter of the salted onion into each potato.
  • Top with sour cream, serve hot.

1 onion, halved and each half cut into quarters
½ cup canola oil
½ cup olive oil
4 cloves garlic
1 envelope onion soup mix
1 tablespoon chopped fresh rosemary, or more to taste
1 tablespoon freshly ground black pepper

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Combine potatoes and onion in a roasting pan; cover with canola oil and olive oil. Add garlic, onion soup mix, rosemary, and black pepper and stir until potatoes and onion are evenly coated. Cover roasting pan with aluminum foil.

1/2 cup sliced white parts of scallions plus 1/3 cup thinly sliced scallion greens (from 1 bunch)
3/4 teaspoon salt
1/2 teaspoon black pepper
6 medium russet (baking) potatoes (2 1/2 pounds)
1 (8-ounce) container sour cream
Special Equipment
12-inch-wide heavy-duty foil

Steps:

  • Cook bacon in a 12-inch heavy skillet over moderate heat, turning over occasionally, until browned and crisp, 6 to 8 minutes. Transfer bacon to paper towels to drain, then carefully transfer drippings from skillet to a small heatproof bowl and stir in white parts of scallions, salt, and pepper.
  • Put oven rack in middle position and preheat oven to 450°F. Tear off 6 (1-foot-long) sheets of heavy-duty foil.
  • Make deep crosswise cuts in potatoes 1/4 inch apart, leaving bottom 1/4 inch intact (do not cut all the way through).
