CRAB CAKE STUFFED BAKED POTATO

Crab Cake Stuffed Baked Potato image

I'm not saying this is perfected in the least, and the ingredients are approximates, but I threw this together for hubby's dinner and he loved it! It's a crab cake sort of filling in a baked potato shell, so I guess crab cake twice baked potato might also be a good name for it. If you try it, I hope you like it! Note: you could add horseradish to the mixture as well, if you so desire!

Time 22m

Yield 1 serving(s)

Number Of Ingredients 9

1 good size potato, baked
1/4 cup fresh lump crabmeat
1/4 cup mayonnaise
1 tablespoon spicy brown mustard
1 dash lemon juice
1/8 teaspoon garlic powder (or to taste)
1 dash salt and pepper
1 tablespoon butter (I use Smart Balance Light)
1/8 cup crushed potato chips

Steps:

  • Scrub, then bake the potato in the microwave, about five minutes.
  • While potato is baking, chop crabmeat into small pieces; add mayo, mustard, lemon juice, garlic, salt and pepper (and horseradish, if you like; could also use sour cream in there as well).
  • Mix the crab mixture well.
  • When potato is done cooking, cut out top portion, scooping out insides of potato (leave about 1/4" potato to help shell remain stable) and placing them into the crab mixture bowl.
  • Mush the potato into the crab mixture, stirring well.
  • Melt 1 rounded tablespoons butter and stir into crab and potato mixture.
  • Pile crab and potato mixture into empty potato shell.
  • Sprinkle crushed potato chips on top.
  • Bake at 350* for about 15 minutes, or until potato chips start to brown.
  • Enjoy!

Time 2h25m

Yield 16 to 20

Number Of Ingredients 9

Cooking spray
2 16-to-18-ounce boxes white cake mix (plus required ingredients)
1 stick unsalted butter, at room temperature
1 tablespoon milk
2 teaspoons unsweetened cocoa powder, plus more for dusting
3 to 4 cups confectioners' sugar
2 16-ounce tubs vanilla frosting
3 yellow Starburst candies
2 fresh mint leaves

Steps:

  • Preheat the oven to 350 degrees F. Coat three 9-inch-roundcake pans with cooking spray. Prepare the cake mixes as directed; divide the batter evenly among the pans and bake 30 to 35 minutes. Let cool.
  • Make the "potato skin" frosting: Beat the butter and milk with a mixer until smooth. Beat in the cocoa powder. Beat in the confectioners' sugar, 1 cup at a time, until the mixture is as thick as cookie dough. Form into 2 disks, wrap in plastic and refrigerate.
  • Level the domed tops of 2 cakes with a serrated knife. Stack the flat cakes on a cardboard circle with vanilla frosting between each; use the remaining domed layer on top. Freeze 30 minutes.
  • Trim the cake into a potato shape with a small serrated knife; reserve the trimmings. Cover the cake with a thin layer of vanilla frosting.
  • Dust a sheet of parchment paper with cocoa powder. Remove 1 disk of chocolate frosting from the refrigerator and roll into a 5-by-10-inch oval, dusting with more cocoa. Repeat with the other disk of frosting.
  • Use the parchment to press the frosting sheets against the cake as shown, leaving a few inches on top uncovered. Dust with more cocoa. (Don't worry about how the bottom of the cake looks-it will be covered with foil.)
  • Gently fold back the frosting on top. Crumble about 1/2 cup of the cake trimmings (use the light inside pieces) and sprinkle them on top of the cake.
  • Unwrap the candies and microwave until soft but not melted, about 12 seconds. Stack the candies, then flatten with your fingers. Set on top of the cake.
  • When ready to serve, snip the mint leaves on top of the cake. Carefully wrap the bottom half of the cake with a large sheet of foil.

A BAKED CAKE OF RUTABAGA AND POTATO

A Baked Cake of Rutabaga and Potato image

Categories     Cake     Potato     Bake     Rutabaga

Yield enough for 4

Number Of Ingredients 7

potatoes - 1 pound (500g)
rutabaga - 1 pound (500g)
garlic - 4 cloves
butter - 7 tablespoons (85g)
Dijon mustard - 2 heaping teaspoons
thyme leaves - a teaspoon
vegetable stock - 6 tablespoons

Steps:

  • Peel the potatoes, then cut them into very fine slices. A sharp knife is fine but if you have a mandoline (the vegetable slicer, that is, not the lutelike stringed instrument), use that. Whatever, your slices should be almost thin enough to see through. Do the same with the rutabaga, keeping the slices in cold water to prevent them browning.
  • Preheat the oven to 375°F (190°C). Peel and thinly slice the garlic. Over medium heat, melt the butter in a flameproof dish or sauté pan about 10 inches (25cm) in diameter. When it starts to bubble, decrease the heat and add the garlic. It needs to soften slightly without coloring-a matter of five minutes or so. Take the pan off the heat and stir in the mustard. Remove about two-thirds of the mustard and butter out of the pan and into a pitcher.
  • Drain the potato and rutabaga slices and pat them dry with paper towels or a clean kitchen towel. Put a third of the vegetables into the pan, layering them neatly or just chucking them in as the mood takes you, then drizzle them with some of the mustard butter in the pitcher. Season with the thyme leaves, pepper, and salt. Be quite generous with the salt. Repeat this twice, so that all the slices of vegetable are layered with the thyme and the mustard and garlic butter. Now pour the stock over the top.
  • Cover with a circle of wax paper or aluminum foil, pressing it down well on top of the cake. Bake for about an hour and ten minutes, until tender when pierced with the tip of a knife. Remove the foil, increase the heat to 425°F (220°C), and bake for a further ten minutes, until the top has colored and crisped a little.
