SPICY PORK CHOPS WITH BLACK BEANS

- Preheat a large grill pan or grill over medium-high heat. Rub the pork chops with 3/4 teaspoon salt and a few grinds of pepper in a large bowl. Add 1/4 cup enchilada sauce, the chile powder and 2 teaspoons olive oil. Rub all over the pork and set aside at room temperature. Toss the sliced red onion with the lime juice and a pinch of salt in a medium bowl; set aside.
- Heat the remaining 5 teaspoons olive oil in a saucepan over medium heat. Add the chopped red onion and cook, stirring, until softened, 3 to 4 minutes. Add the cilantro stems and remaining 2 tablespoons enchilada sauce and cook, stirring, until mostly dry, 2 minutes. Add the beans and their liquid along with 1/2 cup water; bring to a simmer. Mash about one-third of the beans against the side of the pan with a spoon. Cook until the sauce coats the beans, 10 minutes; season with salt and pepper.
- Meanwhile, lightly char the tortillas on the grill pan, about 1 minute per side. Stack and wrap in a kitchen towel to keep warm.
- Lightly oil the grill pan. Grill the pork chops until marked and cooked through, about 2 minutes per side. Divide the pork chops, beans, tortillas and avocado among plates. Season the avocado with salt and pepper. Toss the cilantro leaves with the sliced red onion, then add to the plates.

- Preheat the oven to 450 degrees F (230 degrees C).
- Slice corn off of cobs and toss with olive oil. Spread across a rimmed baking sheet.
- Roast in the preheated oven, checking frequently, for 20 to 25 minutes.
- Meanwhile, combine tomatoes, black beans, onion, jalapeno peppers, cilantro, lime juice, and garlic in a large bowl. Stir to combine.

- Heat grill.
- Make corn salsa by combining corn relish, green onions, cilantro and 2 teaspoons taco seasoning mix.
- Set aside.
- Remove excess fat from pork.
- Mix oil and taco seasoning; brush on pork.

SAUCY SALSA BAKED PORK CHOPS - WITH A TWIST !
Tender, juicy and a bit sweet and spicy ! I looked for a recipe here that would incorporate what I had on hand for my pork chops but couldn't find one. So I came up with this! I made this in about 50 minutes (including prep time) so it was as fast as it was tasty ! The marmalade is a bit different but it really did add a nice sweetness to offset the spicy salsa. Hope you enjoy it as much as we did !

Steps:
- Heat your oven to 375°F.
- Heat your frying pan to medium.
- Add the oil to the pan.
- Add the pork chops. Season with salt, pepper and garlic powder.
- Lightly brown for about 2 minutes per side.
- In a separate bowl, combine the salsa (I used mild but you can choose the heat that you like) and marmalade.
- Remove the pork chops and place into an oven proof dish. (I used a glass pyrex pie plate).
- Smother the chops with the salsa mixture and chopped onions.
- Put into the oven for approximately 40 minutes.
- Turn the chops 1/2 way and baste with the sauce.
- Serve with the extra sauce over the chops!
