aluminum foil
nonstick cooking spray
6 (4 ounce) fillets pollock fillets
1 tablespoon chopped fresh herbs, or to taste
salt and ground black pepper to taste
⅓ cup sour cream
¼ cup grated Parmesan cheese
2 tablespoons melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil and spray it with cooking spray.
  • Season fish fillets with herbs, salt, and pepper. Place on the prepared baking sheet.
  • Mix sour cream, Parmesan cheese, and melted butter together in a small bowl. Apply sour cream mixture to each fillet.
  • Bake in preheated oven until fish flakes easily with a fork, 15 to 25 minutes.

1 pound frozen Pollock fillets, defrosted
2 cloves garlic, minced
1/4 cup butter, melted
1/2 teaspoon parsley, dried
1 teaspoon lime juice
Salt and pepper, to taste

Steps:

  • Preheat oven to 400°F. Lay Pollock fillets in a glass baking dish in a single layer. Combine the garlic, melted butter, parsley, lime juice, salt and pepper. Pour over Pollock fillets. Bake for 25 to 30 minutes or until fish flakes with a fork.

50g crustless white bread (ours was from a tiger loaf)
2 garlic cloves , roughly chopped
6 anchovy fillets in oil from a jar, drained
2 tsp olive oil
2 tsp chopped rosemary leaves
4 skinless frozen pollock fillets (about 400g)
salad or new potatoes and green beans, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line a baking tray with baking parchment and set aside.
  • Tear the bread into a food processor, add the garlic, anchovies, oil and rosemary, then season and pulse to make rough crumbs. Arrange the frozen fillets spaced apart on the baking tray and pile the crumbs on top. Bake for 22-25 mins until the fish is cooked and the topping crispy. Serve with a salad or new potatoes and green beans.

I'm always looking for ways to enjoy baked fish. This recipe works not just for pollock but for just about any fish fillet. Cook time will depend on the thickness and size of your fillets. I used frozen pollock fillets, thawed.

4 -6 fish fillets
1/3 cup sour cream
1/4 cup grated parmesan cheese
2 tablespoons melted butter
salt and pepper, to taste

Steps:

  • Preheat oven to 350 degrees.
  • Cover half sheet pan with foil and spray with non stick cooking spray.
  • Mix all ingredients except fish.
  • Spread mixture on one side of each fillet.
  • Bake uncovered for 15 to 25 minutes (depending on the thickness of you fish) till fish is done.
  • Brown slightly with broiler if desired.

Steps:

  • 1. Bake, sauté or grill pollock*. For grilling, brush generously on both sides with oil and cook 4 to 5 minutes per side until fish flakes. Top with fresh salsa verde and a sprinkling of finely chopped parsley. Garnish with chopped tomato, avocado and sour cream. *Bake at 350 degrees for minutes. Sauté over medium-high heat 4-5 minutes per side. Additional Ideas Serve with buttered bowtie pasta and zucchini -or- mashed potatoes, steamed frozen peas and peach pie Additional Information A 3 ounce serving of plain fish contains around 78 calories, 1 gram of fat, 60 milligrams of cholesterol, 73 milligrams of sodium and 17 grams protein.
