1/4 cup chicken broth
3 tablespoons reduced-sodium soy sauce
1 teaspoon ground ginger, divided
2 bone-in chicken breast halves (6 ounces each), skin removed
1 can (8 ounces) unsweetened crushed pineapple, undrained
1 teaspoon cornstarch
2 teaspoons orange marmalade
1 teaspoon lemon juice

Steps:

  • In a large resealable plastic bag, combine the broth, soy sauce and 1/2 teaspoon ginger; add chicken. Seal bag and turn to coat; refrigerate for 2 hours, turning occasionally., Drain pineapple, reserving 1/2 cup juice; set aside 1/4 cup pineapple (refrigerate remaining pineapple and juice for another use). In a saucepan, combine cornstarch and reserved pineapple juice until smooth. Stir in the pineapple, orange marmalade, lemon juice and remaining ginger. Bring to a boil; cook and stir for 1-2 minutes or until thickened., Drain and discard marinade. Place chicken in a 9-in. square baking dish coated with cooking spray. Top with pineapple mixture. Bake, uncovered, at 350° for 45-50 minutes or until juices run clear.

2 teaspoons all-purpose flour
1 (20 ounce) can pineapple rings, drained
4 potatoes, cubed
6 carrots, cubed
1 bunch spring onions, sliced
1 teaspoon salt
1 teaspoon ground black pepper
4 pieces of boneless chicken, such as thighs or breasts

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Place flour into a large oven roasting bag, inflate the bag slightly, and shake to distribute flour around the inside of the bag. Place pineapple rings, potatoes, carrots, spring onions, salt, and black pepper into the oven bag. Rinse the chicken pieces but don't dry them; add them to the bag. Shake to evenly distribute the ingredients and flour. Tie the top of the bag closed, and place on a baking sheet.

4 sprigs fresh tarragon (2 sprigs chopped, 2 whole sprigs for roasting), plus more for garnish
Coarse salt and freshly ground pepper
1 whole chicken (about 4 1/2 pounds), cut into pieces
2 cups chopped fresh pineapple
8 shallots (2 coarsely chopped, 6 halved lengthwise)
2 tablespoons rice-wine vinegar
1/2 teaspoon sugar
1 tablespoon unsalted butter

Steps:

  • Preheat oven to 425 degrees. Stir chopped tarragon, 1 teaspoon salt, and 1/4 teaspoon pepper in a small bowl. Rub mixture all over chicken. Transfer to a large roasting pan, arranging chicken so pieces are not touching. Refrigerate until ready to bake (up to 1 day).

3-4 boneless, skinless chicken breasts (1 ½ pounds), cut in bite-size pieces)**
3 eggs
1/2 cup flour
1 1/3 cup cornstarch
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ginger powder
1/4 teaspoon onion powder
Sweet and Sour Sauce
1/2 cup pineapple juice (from 20 oz. pineapple tidbits can below)
1 cup red wine vinegar
1 ½ cups sugar
1/4 cup + 2 tablespoons ketchup (6 tablespoons)
1 small onion, diced
2 tablespoons soy sauce
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon red pepper flakes
1/2 teaspoon ginger powder
Vegetables/Pineapple
1 (20 oz) can pineapple tidbits
1 green bell pepper, chopped
1 red bell pepper, chopped
1 cup carrots, sliced as THIN as possible (2-3 carrots)

Steps:

  • Add "Sweet and Sour Sauce" ingredients to a medium/large saucepan, stir and bring to a boil then reduce to a gentle simmer. Allow to simmer while you prepare the chicken and dice the vegetables, stirring occasionally (turn off if longer than 20 minutes). Note, the sauce will not thicken, simmering is to soften the onions and blend flavors. Preheat oven to 350 degrees and lightly grease a 9x13 baking dish with non-stick cooking spray. Whisk eggs together in a large bowl, set aside. Add ½ cup flour to a large freezer bag; set aside next to eggs. Whisk cornstarch, garlic powder, salt, pepper, ginger powder and onion powder in medium bowl; set aside next to flour. Add chicken to eggs and coat, then remove, allowing excess to drip off, then add to freezer bag with flour. Toss until evenly coated then discard any extra flour. Add cornstarch/spices to the chicken in the freezer bag and shake until evenly coated. Over high heat, heat enough oil (any kind) to generously cover the bottom of a large skillet until hot and rippling. Add chicken and cook 1-2 minutes per side, or until browned but not cooked through. (You may need to cook in 2 batches depending on size of your skillet). Transfer chicken to prepared 9x13 baking dish. Add carrots pineapple and peppers to the sweet and sauce and mix until well combined. Pour sauce over chicken and stir until sauce/chicken/vegetables are evenly combined. Cook, uncovered for 50 minutes or until sauce, stirring occasionally. Serve over rice. Enjoy!

Although there are many "pineapple chicken" recipes on 'zaar, I came up with another version that I "tweaked" to our liking. This recipe has minimal prep, but requires time to marinate in the refrigerator. The amount of garlic and the sweet red chili sauce give this dish it's zing. Easy to prepare. *Note* "prep time" does not include marinade time.

1 (4 1/2 lb) roasting chickens, cut into pieces (about 4 1/2 lbs.)
2 1/2 cups chopped fresh pineapple
8 shallots (2 coarsely chopped, 6 halved length wise)
2 tablespoons rice wine vinegar
1/2 teaspoon sugar

Steps:

  • Preheat oven to 425°F
  • Chop 2 sprigs of fresh Tarragon and combine in bowl with 1 tsp salt, and 1/4 tsp ground pepper. Rub mixture all over chicken. Transfer to larger roasting pan, you can refrigerate this up to 24 hours before baking.

BBQ Pineapple Baked Chicken image

This recipe has a Polynesian touch to it. Its quick and simple to make. I made up this recipe when I was baking chicken and wanted to put a twist to it. If you like pineapple and honey BBQ sauce you will love this.

2 roasting chickens
20 ounces pineapple chunks
1/2 cup honey barbeque sauce
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven 350 degrees.
  • Wash chicken.
  • Spray with non stick oil in a 9x13 inch baking casserole dish.
  • Place chickens side by side, pressing firmly to get all of chicken into dish.
  • Sprinkle salt and pepper lightly over both chickens.
  • Open can of pineapple chunks and drain off juice add juice to chicken for moisture while cooking along with 2 cups of water. Set pineapple aside for later.
  • Cover with foil and bake for 1 hour.
  • Now add BBQ sauce, spreading evenly with brush. Cook for 8-10 minutes repeat.
  • Add remaining BBQ sauce to top of chickens and top it off with your remaining pineapple.
  • Bake for 30-45 minutes. Check to see if done and if not, bake another 30-45 minutes.
  • This is great with stewed red skinned potatoes and baby sweet peas and strawberry short cake.

It sounds very good and it needed a home! I might try thyme or marjoram instead of rosemary.

20 oz pineapple chunks in juice
2 garlic cloves, minced
1 Tbsp cornstarch
1 tsp worcestershire sauce
2 tsp dijon mustard
1 tsp rosemary, dried
1 tsp salt
1 lemon, thinly sliced
6 chicken breasts, halves

Steps:

  • 1. Drain pineapple; combine the juice with garlic, cornstarch, worcestershire sauce, mustard and rosemary, then set aside.
  • 2. Arrange chicken in shallow pan, skin side up; sprinkle with salt.
  • 3. Broil until browned.
  • 4. Stir the sauce and pour over the chicken; bake at 350 degrees for about 25 minutes, depending on thickness of chicken.
  • 5. Arrange pineapple and thin lemon slices around chicken, baste with the sauce in pan and continue baking 5 minutes longer - Serve over rice.
