6 red peppers, halved and deseeded
extra virgin olive oil
1 ounce basil
2 garlic cloves, chopped
12 chunks feta cheese

Steps:

  • Preheat the oven to 400°F
  • Place the peppers in a baking dish, cut side down. Drizzle with olive oil.
  • Tuck the basil and garlic between the peppers. Scatter the feta on top.
  • Bake in the oven for 30-40 minutes. Serve hot, warm, or at room temperature.

Warm, creamy, and luscious baked feta recipe with bell peppers, tomatoes, herbs, and a good drizzle of extra virgin olive oil. One of the simplest and most satisfying mezze you'll make! All you need is some crusty bread or homemade pita chips to serve.

½ red onion (sliced)
½ green bell pepper (sliced into rounds)
1/2 cup cherry tomatoes (about 3 ounces, halved)
2 tsp dried oregano
½ tsp red pepper flakes (optional)
3 to 4 fresh thyme sprigs (optional)
Extra Virgin Olive Oil
8 oz Block of quality feta cheese (do not crumble)
Fresh mint leaves for garnish ((optional) )
Crusty bread or pita chips to serve

Steps:

  • Heat the oven to 400 degrees F and adjust a rack in the middle.
  • Arrange the onions, bell peppers, and cherry tomatoes at the bottom of a ramekin or oven-safe dish. Sprinkle with 1 tsp oregano, pinch red pepper flakes, and add some of the fresh thyme. Drizzle a bit of extra virgin olive oil.
  • Add the feta on top of the arranged veggies. Season the feta block with the remaining dried oregano, pinch of red pepper flakes and whatever remains of the fresh thyme. Drizzle a generous amount of extra virgin olive oil on the feta and make sure to brush the sides with some of the oil.
  • Place the baking dish on the middle rack of the oven and bake for 20 to 30 minutes (and if you like, you can stick it under the broiler very briefly to add color).
  • Serve with pita chips or toasted Italian bread.

12-14 red green peppers,long (Romano)
100g feta cheese, crushed with a fork (4 ounces)
50g kefalotyri or any hard yellow cheese, grated (2 ounces)
1 small tomato, peeled and seeded
1 red onion
2 cloves of garlic
2 tbsps chopped parsley
2 tbsps of olive oil for the stuffing
1 cup of olive oil
freshly ground pepper
1 chilli pepper, chopped (optionally)

Steps:

  • In a saucepan with plenty of boiling salted water, add the peppers and leave them for 5 minutes, until softened. Place the peppers on some paper towel to dry and then cut the upper part of the peppers, along with the stalks and seeds (you will need them later).
  • Prepare the stuffing. In a food processor, add 2 tbsp's of olive oil, the garlic and the onion and blend. Add Into a large bowl, along with the chopped parsley, the chopped tomato, the feta cheese, the kefalotyri and mix with with a fork, until the ingredients are combined.
  • Use a teaspoon to fill the peppers with the stuffing; spread them in a greased oven tray and use a cooking brush, to coat them with olive oil. Place the stalks back on the peppers, so that the cheese won't pour out, when melted.
  • Bake in preheated oven at 170C for 1/2 hour until the peppers are nicely colored and the cheese starts to melt

  • Heat oven to 400°F. Grease pie plate, 9x1 1/4 inches.
  • Mix bacon, onions and bell peppers in pie plate. Sprinkle with cheese. Stir remaining ingredients in medium bowl until blended. Pour into pie plate.

Great appetizer: Oven Baked Feta with Tomatoes & Peppers image

A classic recipe from Northern Greece that is ready in just 30 minutes!

8 ripe pearl tomatoes, or, 1 large vine-ripened tomato
4 TBSP. extra virgin olive oil
--- sea salt & crushed red pepper flakes
½ medium green bell pepper (or 2 sweet banana peppers)
2 thick slices of Greek Feta (about 6 oz.)
1 tsp. dried Greek oregano
4 slices of hearty multigrain bread, grilled

Steps:

  • Preheat the oven to 425˚F.
  • Slice the pearl tomatoes horizontally (each one in four pieces) and place on paper towels to drain. (If you are using one large tomato, cut the end pieces and slice the rest in six slices). After 3-4 minutes, turn them over and place on new paper towels. Cut the pepper into four rings and set aside.
  • Oil well a small, shallow ceramic baking dish (or four individual ceramic ramekins) and place half of the tomato slices at the bottom. Sprinkle with some sea salt and crushed pepper flakes. Top with half the bell pepper slices.
  • Arrange the two Feta pieces on top of the tomato/pepper layer, place the remaining tomato slices on top of each piece of cheese, and place the rest of the bell pepper rings on the tomato. Drizzle liberally with the extra virgin olive oil, sprinkle with oregano and some more pepper flakes, and transfer to the middle of the oven.
  • Bake for about 25 minutes, or until the feta turns a light-golden color and the oil is sizzling. If you want to deepen the color, you can place the dish under the broiler for 1-2 minutes at the end of the cooking time.
  • Brush some olive oil on the slices of good, multigrain bread, and grill on both sides. Serve the baked feta immediately with some warm grilled bread.

Feta-Stuffed Peppers image

These peppers have some heft and give a satisfying main-course feeling. Here, extra-small bell peppers are stuffed with a mild feta cheese and baked with a generous handful of herbaceous bread crumbs. It is a very simple dish, with a surprisingly complex taste, good warm or at room temperature.

6 1-inch-thick slices day-old French bread, crust removed
3 tablespoons olive oil
3 garlic cloves, grated
3 tablespoons chopped parsley
2 teaspoons chopped thyme
1 teaspoon chopped rosemary
1 ounce grated Parmesan
Salt and pepper
6 small sweet peppers, about 1 pound
6 ounces mild feta cheese

Steps:

  • Heat oven to 350 degrees. Cut bread into 1-inch cubes and pulse in food processor in batches to make coarse, soft crumbs. (It should yield about 3 cups.) Toss crumbs with olive oil and spread on a baking sheet. Bake, stirring frequently, until crisp and barely browned, about 15 minutes. Put baked crumbs in a bowl and add garlic, parsley, thyme, rosemary and Parmesan. Season with salt and pepper and toss well to combine. Set aside.
  • Cut peppers in half lengthwise and remove seeds. Place in a low-sided baking dish in one layer. Season cut side lightly with salt. Fill each pepper half with 1/2 ounce crumbled feta and press in cheese with fingers. With a spoon divide the seasoned crumbs evenly among the pepper halves.
  • Bake for about 30 minutes, until crumbs are golden and cheese is softened. Serve warm from the baking dish.

We went to the Greek Island of Kos and had this as a starter in a restaurant - we loved it! When we got home I had a go and made it myself. It can be served as a side dish too.

1 red sweet bell pepper
10 ml olive oil
20 g unsalted butter
400 g feta cheese
2 large onions
3 tomatoes
3 garlic cloves
50 g fresh parmesan cheese

Steps:

  • Preheat the oven to 220°C/425°F/Gas Mark 7
  • You will need two individual serving dishes that can go into the oven.
  • De-seed and cut the bell pepper length ways into 3 cm strips.
  • Brush the pepper slices in a little oil and place on a preheated non stick baking tray and roast for about 20 minutes. Remove from the oven.
  • Char the skin of the pepper slightly with a cooks blow torch if you think the skin isn't looking nice and roasted. Put the peppers to one side.
  • Now, in a saucepan, melt the butter and the olive oil.
  • Slice the onion thinly and finely chop the garlic. Add the onion and garlic to the saucepan. Over a low heat, cook until soft but not coloured.
  • Cut the feta cheese into 2cm cubes.
  • Using individual serving dishes, layer the onions, with the thinly sliced tomatoes and the roasted red pepper slices.
  • Top with the cubed feta cheese. Finish by sprinkling with the grated parmesan cheese. Sprinkle a pinch of paprika on top of each dish.
  • Cover with aluminium foil (trying not to touch the cheese) and bake in the oven for about 15 minutes. Uncover and bake for another 5 to 10 minutes, or until the feta starts to get a nice colour.
  • Take care not to cook too much as it looks better if the feta stays in cubes.
  • Serve with nice fresh crusty bread.

1 small onion, chopped
3 plum tomatoes, chopped
1/2 cup crumbled feta cheese
1/2 cup cooked long-grain white rice
1/4 cup KRAFT Greek Vinaigrette with Feta Cheese and Oregano Dressing made with Extra Virgin Olive Oil
1/4 cup sliced Kalamata olives
4 green peppers, cut lengthwise in half, seeded
1/4 cup water
