This recipe is based off of a Cooking Light recipe, but it is not pan fried at all. You could easily double this recipe, but I cook for two, so this is perfect for us. I serve this with veggies and crescent rolls.

1 tablespoon parmesan cheese, grated (the powdery kind)
2 tablespoons Italian seasoned breadcrumbs
1/8 teaspoon salt
1 large egg, lightly beaten
2 (5 ounce) boneless skinless chicken breasts, pounded to 1/4 inches
3/4 cup spaghetti sauce (tomato-basil is good)
1/2 cup mozzarella cheese, grated

Steps:

  • Preheat the oven to 400 degrees F.
  • Lightly spray a pie plate or a foil-lined baking sheet with cooking spray; set aside.
  • Combine Parmesan, breadcrumbs, and salt in a shallow dish (I use a paper plate). Place egg in a separate shallow dish.
  • Dip each side of each chicken breast in egg, then dredge in the breadcrumb mixture. Place on prepared pan.
  • Bake for 18 minutes, flipping once halfway through, until done.
  • Take the chicken out and switch the oven to BROIL.
  • Divide the sauce evenly and pour over each piece of chicken. Sprinkle evenly with the mozzarella cheese.
  • Broil 2 minutes or until the cheese melts.

4 boneless chicken breast halves
3 tablespoons melted butter
1 cup plain dry bread crumbs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried leaf basil
1 teaspoon dried parsley flakes
1/2 cup fresh grated Parmesan cheese

Steps:

  • Gather the ingredients.
  • Lightly grease a shallow baking dish. Preheat oven to 375 F.
  • Put chicken breasts between sheets of plastic wrap and pound lightly to thin and then flatten to an even thickness. Dip chicken pieces in melted butter; sprinkle both sides of chicken pieces with salt and pepper.
  • Combine remaining ingredients in a food processor and pulse a few times, until Parmesan cheese is broken into smaller pieces but still has texture.
  • Pour out onto a sheet of waxed paper or plate.
  • Coat the chicken pieces with the breadcrumb mixture and place in the prepared baking dish.
  • Bake the chicken for about 25 minutes, or until chicken is cooked through, turning once about halfway through cooking time. If chicken is pounded quite thin, check for doneness at about 20 minutes.
  • Serve and enjoy.

1/3 c buttermilk (or 1/3 cup milk w/1 tsp white vinegar)
2 chicken breasts, boneless and skinless
butter crisco spray
opt: marinara sauce
BREADING
1/2 c shredded parmesan cheese
1/2 c panko bread crumbs
1 tsp paprika, sweet mild
1/2 tsp garlic powder
2 pinch dried thyme, crumbled

Steps:

  • 1. Preheat oven to 450 degrees. Spray a shallow baking pan or broiler pan with butter Crisco. Put buttermilk or mix your milk/vinegar into a small dish that will hold a chicken breast.
  • 2. In a separate dish mix breading ingredients: Parmesan, panko, paprika, garlic powder, and thyme. You will have some left over, so pour about half of this into a dish (I use a bread pan)that will hold a chicken breast and then if you need more you can add some to this dish. Save the leftover breading for another time in a covered container and store in refrigerator (if you did not mix the chicken in it).
  • 3. Dip a chicken breast into the buttermilk and let drip slightly to get the excess liquid off. Then into the breading panko mix. Cover completely on each side and place on pan. Repeat with the other breast.
  • 4. Spray each breaded breast with butter Crisco and place into oven. Bake for 12 to 15 minutes. These breast will be crispy and browned..add more or less minutes to time if the chicken is starting to get to brown. Remove from oven and turn over. Spray the breast with butter Crisco. Turn the oven down to 350 degrees. Return chicken to oven to brown the other side and finish baking. Bake for 15 more minutes, or until the temperature in the thickest part of the breast is 170 to 180 degrees.
  • 5. Cook's note:I served acorn squash with this dish as a side. I added the halved acorn squash to the microwave the last 15 minutes while the chicken was baking. I also added warmed marinara sauce on my chicken breast, and my husband had his chicken without the sauce. Do not cover with foil to hold until dinner. The breading will become soggy from the steam.

QUICK BAKED CHICKEN PARMESAN

In this lighter version of chicken Parmesan I skip the pan-frying in oil and instead bake lightly-breaded chicken breasts in the oven, then top with sauce and cheese. My family's not big on lots of sauce and cheese, so I just use a little to flavor the dish. Feel free to add more if you like, but it's excellent as-is. Serve chicken over pasta with additional sauce.

1 egg, beaten

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Whisk water and egg together in a bowl until smooth. Combine bread crumbs, 2 tablespoons Parmesan cheese, oregano, basil, thyme, and garlic powder in a separate bowl.
  • Dip each chicken breast in egg mixture, allowing excess egg to drip back into bowl. Coat each chicken breast in bread crumb mixture, shaking off excess. 2 boneless skinless chicken breast halves
1/4 cup plain yogurt
1/2 cup seasoned bread crumbs
3 tablespoons olive oil, divided
3 ounces uncooked spaghetti
1 medium onion, chopped
2 garlic cloves, minced
1/2 teaspoon each dried basil, oregano and parsley flakes
1 can (8 ounces) tomato sauce
1/2 cup water
1/4 cup shredded part-skim mozzarella cheese

  • Pound chicken to 1/4-in. thickness; coat with yogurt and bread crumbs. In a large skillet, brown chicken on both sides in 2 tablespoons oil until juices run clear.
