2 teaspoons olive oil
1/3 cup grated Parmesan cheese
1/4 teaspoon salt

1/4 cup balsamic vinegar
2 teaspoons dark brown sugar

Steps:

  • 1. Preheat oven to 450°F. Place asparagus in baking pan large enough to hold them in a single layer. Drizzle oil over asparagus and sprinkle with Parmesan, salt, and pepper. 2. Bake until asparagus are crisp-tender and cheese has melted and is crispy. Meanwhile, in small skillet, heat balsamic and brown sugar until reduced to 3 tablespoons. 3. Serve asparagus drizzled with balsamic glaze.

1 1/2 cups (1 inch) diagonally sliced asparagus

  • 1. Preheat oven to 400 2. Heat oil in a dutch oven over medium heat. Add onion; cook 4 minutes or until tender. Add rice, stir well. Stir in spinach, broth, salt, and nutmeg. Bring to a simmer, cook 7 minutes. Stir in 1/4 cup cheese. 3. Cover and bake at 400 for 15 minutes. Stir in asparagus; sprinkle with 1/4 cup cheese. Cover and bake an additional 15 minutes or until liquid is almost absorbed.

Crispy Baked Parmesan Asparagus Fries with Creamy Lemon Dipping Sauce is a great recipe for a summer BBQ, summer side dish idea, or a picnic - no need for a deep fryer with this recipe!

1 lb thin asparagus stalks, trimmed
2 large eggs, whisked
⅓ cup all purpose flour
non-stick cooking spray
½ cup shredded parmesan cheese
2 cups seasoned panko bread crumbs
salt & pepper
½ cup mayonnaise
2 ½ tablespoons lemon juice
1 teaspoon thyme OR two teaspoons fresh minced thyme
1 tablespoon Italian parsley fresh, minced
1 large scallions/green onions, minced
½ teaspoon salt
ground black pepper, to taste

Steps:

  • Preheat oven to 375°F.
  • Line a baking sheet with parchment paper or silicone baking mat.
  • Spread panko crumbs in one layer across the lined baking sheet. Spray panko crumbs surface with cooking oil spray.
  • Bake panko crumbs for about 4-5 minutes or until golden - be sure not to let them burn. Remove from oven and let cool.
  • Turn oven up to to 425°F.
  • Mix in ½ cup parmesan cheese with the breadcrumbs while still on the baking pan. Then spread out mixture evenly across baking sheet again in one layer.
  • Line a separate baking sheet with parchment paper or non-stick baking mat.
  • In a large bowl/pan long enough to fit asparagus, pour in whisked eggs. In a separate container long enough to fit asparagus, pour in flour and season four with salt and pepper.
  • Coat asparagus lightly in egg. Shake off excess egg and then lightly coat asparagus in flour. Shake off excess flour. Coat asparagus in egg again and shake off excess egg.
  • Place asparagus in panko mixture (that is still on the baking sheet) and press panko crumbs onto the asparagus.
  • Set coated asparagus onto empty lined baking sheet.
  • Bake for 10-12 minutes at 425 degrees, or until asparagus is cooked on the inside and the outside coating is nice and crispy, flipping asparagus halfway through cooking.
  • Serve with the lemon dipping sauce OR your favorite dipping sauce/ketchup/BBQ sauce.
  • Add all ingredients into a small bowl and whisk together.
  • Cover with plastic wrap and refrigerate for at least 30 minutes or overnight to allow the flavors to blend.
  • Store for up to one week in the refrigerator.

1 large salmon fillet (or 4-6 single portion fillets)
1 pound asparagus spears, ends trimmed
salt and pepper to taste
1/2 cup butter
juice of 1 medium lemon, plus additional lemon slices for garnish (optional)
3 teaspoons minced garlic
1 1/2 teaspoons Italian seasoning
1/2 cup grated parmesan cheese
optional: fresh herbs for topping

Steps:

  • Preheat oven to 400 degrees. Line a large baking sheet with foil and lightly grease with cooking spray.
  • Arrange salmon in the center of the pan and arrange asparagus around the sides of the pan. Arrange lemon slices under the edges of the salmon. Season salmon and asparagus with salt and pepper.
  • In a small sauce pan, melt butter over medium high heat. Once melted stir in garlic and Italian seasoning. Pour mixture over salmon and asparagus. Sprinkle parmesan over salmon and asparagus.
