BAKED OXTAILS
When I buy oxtails it's a toss up between oxtail soup and baked oxtails,both are so deliscous! Baked oxtails are so simple to make,good with mashed potatoes or add sliced potatoes.Sweet potatoes are a good change of pace.Add potatoes after meat is done,cook until potatoes are tender.

Steps:
- 1. Rinse oxtails.Season with salt,pepper and garlic.Place in oven proof dish,cover with onions,the more the better,add water half way up to the oxtails,Cover,bake in a 300 deg oven until oxtails are falling off the bone.Check once in a while to make sure water has not evaporated.Skim fat from juices and serve.
EASY OXTAIL STEW
This easy oxtail stew is great for Dutch oven cooking. I've made this with a pan of cornbread for my family and friends. They keep coming back for more.

Steps:
- Mix oxtail, water, broth, onion, garlic, onion salt, salt, and pepper together in a large Dutch oven. Bring to a boil. Cover, turn heat down to a simmer, and cook until meat falls from the bone, about 2 1/2 hours.
- Stir potatoes, carrots, mushrooms, bell pepper, and green onions into the pot. Cover and let simmer until vegetables are tender, 15 to 20 minutes.
