BAKED ORZO WITH SHRIMP, TOMATO SAUCE, AND FETA



Baked Orzo with Shrimp, Tomato Sauce, and Feta image

Number Of Ingredients 12

1 medium onion, finely chopped
3 garlic cloves, minced
1/2 teaspoon dried oregano, crumbled
1/4 teaspoon dried hot red pepper flakes
2 tablespoons olive oil
1/2 cup dry white wine
1 (28- to 32-oz) can crushed tomatoes
1 teaspoon salt
1 1/2 lb large shrimp (about 36), shelled and deveined
1 lb orzo (rice-shaped pasta)
1/2 cup Kalamata or other brine-cured black olives, pitted and chopped
1 lb feta, patted dry and crumbled (3 cups)

Steps:

  • Preheat oven to 425°F.
  • Cook onion, garlic, oregano, and red pepper flakes in 1 tablespoon oil in a 4-quart heavy pot over moderately high heat, stirring, until onion is softened, about 3 minutes. Add wine and boil until reduced by half, about 3 minutes. Stir in tomatoes and salt, then reduce heat and simmer briskly, stirring frequently, until slightly thickened, about 8 minutes. Stir shrimp into sauce and simmer, stirring occasionally, until shrimp are just cooked through, about 3 minutes.
  • While sauce and shrimp are cooking, cook orzo in a 6-quart pot of boiling salted water (see Tips, page 204) until al dente. Reserve 1/2 cup cooking water, then drain orzo in a sieve. Return orzo to pot and toss with remaining tablespoon oil. Stir in sauce with shrimp and reserved cooking water, then add olives and salt and pepper to taste.
  • Spoon half of pasta into an oiled 13- by 9- by 2-inch glass baking dish, then sprinkle with half of feta. Top with remaining pasta and feta, then bake in middle of oven, uncovered, until cheese is slightly melted and pasta is heated through, 10 to 15 minutes.

1 lb jumbo shrimp, peeled and deveined
kosher salt & freshly ground black pepper
3 tablespoons olive oil, plus more as needed and for serving
1 large fennel bulb, halved, cored, and thinly sliced
4 garlic cloves, peeled and smashed
1/2 teaspoon crushed red pepper flakes
1/2 lb orzo pasta
1 (15 ounce) can chickpeas, drained and rinsed
1 pint cherry tomatoes
1 cup pitted kalamata olive, halved
1/3 cup coarsely chopped dill, plus additional for serving
1 lemon, zest of, plus additional lemon wedges for serving
2/3 cup dry white wine
2 cups low sodium chicken broth
5 ounces feta, coarsely crumbled, for serving

Steps:

  • Preheat oven to 450 degrees.
  • Dry shrimp with paper towels and season with salt and pepper.
  • Add 1 tablespoon olive oil to a large, ovenproof skillet over high heat. Swirl to coat. When shimmering, add shrimp in an even layer. Cook, turning once, until lightly seared, about 1 ½ minutes per side. Add additional 1 tablespoon olive oil halfway through cooking if skillet is dry. Remove shrimp to a plate. Reduce heat to medium-high and add 2 tablespoons olive oil. Add fennel, garlic, chile flakes. Season with salt and pepper and cook until softened and golden in spots, about 4 minutes. Add orzo, chickpeas, cherry tomatoes, olives, dill, and lemon zest. Stir to combine. Add white wine and let reduce for 30 seconds. Add chicken broth, stir to combine, and return shrimp to skillet, nestling them into as even a layer as possible. Bring to a boil and transfer to oven. All sorts of ingredients- sun-dried tomatoes, olives, peas, or corn -can be added to this baked pasta for extra flavor and color. Serve this side with a seared steak for a Mediterranean version of surf and turf.

5 tablespoons olive oil, more for the dish
1 lb shrimp, peeled and deveined (26 to 30 per lb.)
kosher salt & freshly ground black pepper
1 large garlic clove, minced
5 ounces Baby Spinach
1 lb orzo pasta
6 ounces feta, crumbled (about 1-1/2 cups)
2 teaspoons chopped fresh thyme
1 finely grated lemon, zest of
3/4 cup panko breadcrumbs

Steps:

  • Position a rack in the center of the oven and heat the oven to 425°F. Bring a large pot of well-salted water to a boil. Lightly coat a 2-quart baking dish with oil.
  • Heat 2 Tbs. oil in a 12-inch skillet over medium-high heat until shimmering. Add the shrimp, sprinkle with 1/2 teaspoons each salt and pepper, and cook, stirring, until the shrimp start to lose their raw color (but don't cook through), about 2 minutes. Add the garlic and cook, stirring, for 30 seconds. Stir in the spinach and cook, tossing, until it starts to wilt, about 1 minute. Remove from the heat.
  • Add the pasta to the boiling water and cook according to the package instructions until al dente. Drain well and toss with the shrimp mixture, feta, 2 Tbs. oil, half the thyme, and lemon zest. Transfer to the prepared baking dish. In a small bowl, toss the breadcrumbs with the remaining Tbs. oil, the remaining teaspoons thyme, and 1/4 teaspoons salt. Sprinkle on top of the pasta.
  • Bake the pasta until the breadcrumbs brown and the pasta heats through, about 20 minutes (cover with foil if the top browns too quickly). Let cool for a couple of minutes and then serve. Great with a side salad.
