Looking for an easy appetizer? Serve this baked feta with tomatoes and olives warm from the oven with toasted baguette slices or crackers. It is guaranteed to be a hit.

Number Of Ingredients 11

1-6 ounce block feta, drained
1 cup assorted olives, pitted or with pits
1/3 cup chopped marinated roasted tomatoes
1 garlic clove, thinly sliced
1/4 cup olive oil
1/4 teaspoon dried oregano
Pinch of red pepper flakes
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
Chopped fresh parsley and oregano leaves
Toasted baguette slices or crackers for serving

Steps:

  • Preheat the oven to 375 degrees F. Arrange a top rack in the oven 4-6 inches from the broiler.
  • Place the feta in a small baking dish. The cheese should have some space around it for the olives and tomatoes.
  • In a medium bowl, combine the olives, tomatoes and garlic. Then spoon them around the feta.
  • Whisk together the olive oil, oregano, red pepper flakes, salt and pepper in a small bowl. Pour the olive oil over everything in the baking dish.
  • Bake the feta for 15-18 minutes, until it just starts browning at the edges. Turn on the broiler, and brown the top of the cheese, about 2-3 minutes.
  • Sprinkle with chopped parsley and oregano leaves before serving warm with toasted baguette slices or crackers.

Warm, creamy, and luscious baked feta recipe with bell peppers, tomatoes, herbs, and a good drizzle of extra virgin olive oil. One of the simplest and most satisfying mezze you'll make! All you need is some crusty bread or homemade pita chips to serve.

½ red onion (sliced)
½ green bell pepper (sliced into rounds)
1/2 cup cherry tomatoes (about 3 ounces, halved)
2 tsp dried oregano
½ tsp red pepper flakes (optional)
3 to 4 fresh thyme sprigs (optional)
Extra Virgin Olive Oil
8 oz Block of quality feta cheese (do not crumble)
Fresh mint leaves for garnish ((optional) )
Crusty bread or pita chips to serve

Steps:

  • Heat the oven to 400 degrees F and adjust a rack in the middle.
  • Arrange the onions, bell peppers, and cherry tomatoes at the bottom of a ramekin or oven-safe dish. Sprinkle with 1 tsp oregano, pinch red pepper flakes, and add some of the fresh thyme. Drizzle a bit of extra virgin olive oil.
  • Add the feta on top of the arranged veggies. Season the feta block with the remaining dried oregano, pinch of red pepper flakes and whatever remains of the fresh thyme. Drizzle a generous amount of extra virgin olive oil on the feta and make sure to brush the sides with some of the oil.
  • Place the baking dish on the middle rack of the oven and bake for 20 to 30 minutes (and if you like, you can stick it under the broiler very briefly to add color).
  • Serve with pita chips or toasted Italian bread.

Okay, you're having a party. You gotta have some gooey cheese! A big skillet of feta topped with lemon, fennel and herbe marinated olives and baked in the oven until melty...yummmm!!! It's a tantalizing flavour combination. This recipe is so easy. Serve with pita crisps or slices of rustic bread. I serve this in the same iron skillet I use to make the dish!

1 1/2 cups mixed imported olives, not pitted, drained (Do NOT use oil cured olives)
1 tablespoon chopped fresh thyme
2 teaspoons minced lemon zest
1/4 teaspoon dried red pepper flakes
1 teaspoon fennel seed
2 tablespoons extra virgin olive oil
7 -8 ounces feta cheese (1 piece)

Steps:

  • In a small bowl, toss the olives with the thyme, lemon zest, red pepper flakes, fennel seeds and olive oil.
  • Lightly oil the bottom of an 8 to 9 inch ovenproof skillet, such as cast iron.
  • Place the cheese in the center of the pan, then top with the marinated olive mixture. Use a spatula to get all the goodies out of the olive tossing bowl and some will fall to the side. At this point, you can cover and refrigerate for up to 1 day.
  • When ready to bake, heat the oven to 400*F.
  • Bake the cheese and the olives for about 20 minutes, or until the cheese is soft and gooey. Serve immediately, right out of the pan, with slices of rustic bread, crostini, pitta, or Pita chips.
