3 cups shredded Colby-Monterey Jack cheese, divided
3 cups salsa
1 package (10 ounces) frozen corn, thawed
1 cup sour cream
1 to 2 tablespoons chili powder
1 teaspoon ground cumin
6 cups tortilla chips

Steps:

  • In a skillet, cook beef over medium heat until no longer pink; drain. Stir in 2 cups cheese, salsa, corn, sour cream, chili powder and cumin; mix well. , Pour half into a greased 13x9-in. baking dish. Top with half of the chips; repeat layers. Bake, uncovered, at 350° for 25 minutes or until heated through. Sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted.

Steps:

  • In a large skillet, saute peppers in 1-1/2 teaspoons oil for 3 minutes or until crisp-tender; transfer to a small bowl. In the same skillet, saute the beans, garlic, oregano and cumin in remaining oil for 3 minutes or until heated through., Meanwhile, combine the chicken, lime juice, salt and pepper. In a greased 13x9-in. baking dish, layer half each of the tortilla chips, pepper mixture, bean mixture, chicken, cheese, onions and cilantro. 1 (8 ounce) skinless, boneless chicken breast half
1 (14.25 ounce) can refried beans
8 ounces corn tortilla chips
1 ½ cups grated pepper Jack cheese
¼ cup chopped green onions
½ cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x9 inch baking dish.
  • Place the chicken on a microwave-safe plate, cover with a paper towel, and place in a microwave oven. Cook on high power until the chicken is no longer pink and cooked through, about 10 minutes. Cool, and use a knife to shred the chicken. Set aside.
  • Place the refried beans in a saucepan over medium heat. Stir until thoroughly heated.

1 pound ground beef
2 Tablespoons taco seasoning
6 cups tortilla chips
1 (15 ounce) can black beans (drained and rinsed)
2 cups shredded cheddar cheese
2 tomatoes (diced)
2 avocados (diced)
4 green onions (sliced)
1 1/2 cups salsa
1 cup sour cream

Steps:

  • Preheat your oven to 350 degrees
  • On the stove top, brown ground beef on medium high heat until brown. Drain grease well. Add your taco seasoning and set aside.
  • On a cookie sheet, spread out your chips so they cover the majority of the bottom.
  • On top of the chips, spoon the cooked meat and black beans, spreading them out at evenly as possible. Sprinkle cheese on top of the meat and beans.
  • Place in the preheated oven for 5 to 6 minutes, or until your cheese is melted.
  • Remove from the oven and top with the tomatoes, avocados, and green onions. Spread them out as evenly as possible.
  • Serve with salsa and sour cream

This is one of my favorite methods for cooking salmon! Baked on a bed of onions and jalapeno peppers and thickly covered with seasoned salsa, the salmon stays moist and tender without giving your kitchen any fishy smell. Even though these nachos don't contain cheese, they're topped with a rich sour cream drizzle which makes them every bit as decadent as real nachos.

2 tablespoons olive oil
⅔ cup salsa
½ teaspoon ground dried chipotle pepper
1 teaspoon ground cumin
½ cup diced red onion
2 medium jalapeno peppers, seeded and thinly sliced
2 (8 ounce) skinless salmon fillets, bones removed
¼ teaspoon salt, or to taste
1 medium avocado, diced
1 teaspoon lemon juice, or to taste
⅓ cup sour cream
1 tablespoon water
3 cups corn tortilla chips
¼ cup chopped cilantro
2 tablespoons minced green onion
1 small lime, juiced

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Generously grease the bottom of a 9x13-inch baking dish with olive oil.
  • Combine salsa, ground chipotle, and cumin in a bowl.
  • Sprinkle red onion and jalapenos in an even layer in the bottom of the prepared baking dish. Place salmon filets over top and season with salt. Generously spoon salsa over the filets and distribute remaining salsa over onions and jalapenos.
  • Bake in the center of the preheated oven, until salmon is moist and tender and an instant-read thermometer inserted into the center reads at least 130 degrees F (55 degrees C), about 20 minutes.
  • Meanwhile, toss diced avocado with lemon juice in a small bowl. Thin sour cream with water in another bowl.
  • Divide chips between two serving plates. Spoon onion-jalapeno mixture over top, along with any accumulated juices, then top with avocado, cilantro, and green onion. Place a salmon filet on top of each plate and drizzle with sour cream. Sprinkle with more green onions and serve with lime.

1 seven-ounce bag of kettle-cooked potato chips
1 medium russet potato, peeled, and cut into 1-inch cubes
1/2 cup whole milk
1 tablespoon butter
Salt and pepper
4 strips thick-cut bacon
1 cup grated extra sharp cheddar cheese
2 to 3 scallions, sliced
1/4 cup sour cream

Steps:

  • 1. Preheat the oven to 400°F. 2. Place the peeled and cubed potato in a small sauce pan, and just cover it with cold water and a pinch of salt. Place the lid on the pot, crank the heat up to high, and cook the potatoes until they are fork tender. 3. To make the mashed potato topping, drain the potatoes and put them back in their hot pot (but not on a lit burner), just so a bit of the excess moisture will evaporate. Then pass the potatoes through a ricer, and add the butter and milk to the potatoes and mix to combine. Season with salt and pepper. If you do not have a ricer, don't despair. Just add the butter and milk to the chunks of potatoes and mash with a potato masher. 4. For the bacon bits, slice each thick-cut strip of bacon in half lengthwise, and then cut the thin strips about every quarter inch to create little squares. Put the bacon pieces into a small sauté pan over medium to medium-high heat, and cook until crisp, but not crisp all the way through, because they will continue to crisp slightly when you melt the cheese in the oven, and you don't want them to burn. Drain on a paper towel. 5. Fill an oven-safe wide plate with the chips. You don't need to use all of each topping; really, when building nachos, it depends on which chips and which dish you end up choosing. So just dollop away to your preference. Begin first with the mashed potatoes, then the extra sharp cheddar cheese, then the bacon bits, and lastly the scallions. Place the plate on a baking sheet, and bake for 10 minutes in the 400°F oven. 6. Lastly, dollop some sour cream over the top of the nachos, and serve straight from the oven, hot and gooey and really, really good.

Substitute the packet of taco seasoning with 2-3 Tablespoons of homemade taco seasoning to reduce sodium. We mixed 4 T chili powder, 3 T paprika, 3 T ground cumin, 1 T onion powder, 1 tsp garlic powder, 1/4 tsp cayenne pepper (adjust amounts to taste).

2 tablespoons olive oil
2 teaspoons ground cumin
Kosher salt
10 corn tortillas, each 5 1/2 inches in diameter
Nonstick cooking spray
1/2 teaspoon chili powder
Grated zest and juice of 1 lime
1 small onion, chopped
2 tablespoons adobo sauce from canned chipotle in adobo sauce
1 teaspoon tomato paste
One 14-ounce can pinto beans, drained and rinsed
1 tomato, roughly chopped
1/2 serrano chile, seeded if desired, chopped
1 1/2 cups shredded Cheddar
1/2 avocado, sliced
1/4 cup fresh cilantro leaves

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss the sweet potatoes in a medium bowl with 1 tablespoon oil, cumin and 1/4 teaspoon salt. Spread on a baking sheet and roast until soft and partially browned, 25 to 30 minutes.
  • Spray both sides of the tortillas with cooking spray, then stack them up and cut the stack into 8 triangular pieces. Separate the tortilla pieces and lay them out onto a baking sheet. Sprinkle with the chili powder and 1/4 teaspoon salt and toss. Bake the chips until crisp, about 15 minutes, tossing the chips halfway through the baking time. Remove the chips from the oven and toss them with the lime zest.
  • Heat 2 teaspoons of the oil in a medium skillet over medium-high heat. Add half of the onions and cook, stirring, until soft, about 4 minutes. Add the adobo sauce and tomato paste and stir until the tomato paste darkens slightly, about 2 minutes. Add the beans and 3/4 cup of water and simmer the sauce until it thickens and the beans are heated through, about 5 minutes. Set aside until ready to assemble the nachos.
  • Combine the tomatoes, remaining onions, serrano chile, lime juice, remaining 1 teaspoon oil and 1/4 teaspoon salt in a food processor. Pulse until the mixture becomes a chunky salsa.
  • To assemble the nachos, mound half of the tortilla chips in a 9-by-13-inch baking dish. Scatter most of the beans and the sweet potatoes over the chips. Sprinkle with half of the cheese. Mound the rest of the chips over the cheese and finish with the remaining beans, sweet potatoes and cheese. Place in the oven until the cheese melts, 5 to 7 minutes. Top with the avocado, salsa and cilantro.

2 large onions, diced into 1/2-inch cubes

Sprinkle with half of the cheese. Mound the rest of the chips over the cheese and finish with the remaining beans, sweet potatoes and cheese. Place in the oven until the cheese melts, 5 to 7 minutes.
