Easy Baked Mexican Rice image

This easy Mexican rice is baked in the oven and tastes even better than the rice from your favorite Mexican restaurant! Perfect for any occasion!

Number Of Ingredients 12

4 roma tomatoes, core removed and cut into quarters
1 yellow or white onion, skin removed and cut into quarters
1/4 cup vegetable oil
1 1/2 cups long-grain white rice
3 cloves garlic, minced
1 jalapeno pepper, seeded and minced ((leave the seeds in if you want extra heat))
1 1/2 cups reduced sodium chicken broth
1 Tbsp tomato paste
1 tsp salt (to taste)
1/2 cup minced fresh cilantro ((divided))
2 green onions, sliced
1 lime ((juiced))

Steps:

  • Preheat oven to 350 degrees F. Add dry rice to a mesh sieve and rinse under cold water until water runs clear.
  • To a blender or food processor, add tomatoes, onion and approximately 2 Tbsp of the minced cilantro. Process until smooth. This should yield around 2 cups, but if there's excess, discard any amount more than 2 cups.
  • Add vegetable oil to a large, oven safe pan (I love to use my Le Creuset buffet casserole dish), and heat over MED heat. Add rice and saute for about 5-10 minutes, until fragrant and lightly golden.
  • Add garlic and jalapeño and stir about 30 seconds or so, until fragrant. Add tomato puree, tomato paste, chicken broth and 1 tsp salt. Stir to combine and bring to a boil.
  • Cover and bake about 25-30 minutes, until liquid is absorbed, stirring halfway through. Fluff rice with a fork, squeeze lime juice over rice and stir in cilantro and green onions.
  • Taste and adjust by adding more salt or black pepper, if needed.

1 onion, chopped
3 garlic cloves, sliced
2 jalapeño peppers, seeded and chopped
1 1/2 cup long-grain brown rice
3/4 cup crushed canned tomatoes
1 teaspoon ground ancho or other chili powder
1 teaspoon fine sea salt

Steps:

  • Heat the oven to 350°F. In an ovenproof saucepan or small Dutch oven, heat oil on top of the stove over medium-high heat.
  • Add onion, garlic and jalapeño peppers and cook, stirring often, about 4 minutes.
  • Stir in rice and cook 1 minute more.
  • Add 2 3/4 cups water, tomatoes, chili powder and salt.
  • Bring to a boil, stir and cover. Bake, without stirring, until rice is tender, about 1 hour. Fluff with a fork and serve.

Healthy Mexican rice that tastes amazing! This recipe is made with brown rice, which is perfectly fluffy after baking in the oven. This isn't a quick recipe, but it does clear the stovetop for use. Check the recipe notes for a shortcut, etc. Recipe yields 6 to 8 side servings.

2 medium ripe tomatoes, or 1 small can (15 ounces) diced tomatoes, undrained
1 small yellow onion, root end trimmed and quartered
2 cloves garlic, roughly chopped
1/4 cup extra-virgin olive oil
2 cups long-grain brown rice (do not rinse!)
1 medium jalapeño pepper, seeded and finely chopped (scale back or omit if sensitive to spice)
2 1/2 cups vegetable broth
1 tablespoon tomato paste
1 teaspoon salt, to taste
1/2 cup finely chopped fresh cilantro
Red pepper flakes, optional, for extra heat
1 lime, sliced into wedges, for serving

Steps:

  • Preheat the oven to 375 degrees Fahrenheit. In a food processor or blender, combine the tomatoes, onion and garlic, and blend until smooth. In a liquid measuring cup, measure out 2 cups of the tomato mixture and discard the rest.
  • Warm the olive oil in a medium Dutch oven* over medium heat until shimmering. Add the rice and jalapeño and cook, stirring occasionally, for about 2 to 3 minutes.
  • Add the vegetable broth (watch out for splatters), tomato mixture, tomato paste (add a little extra if you're using fresh tomatoes that aren't super flavorful), and salt. Stir to combine, then increase the heat to medium-high and bring the mixture to a boil.
  • Cover the pot with the lid and carefully transfer it to the oven. Bake until the liquid is absorbed (the rice will look dry when you take off the lid, but don't worry) and the rice is tender, about 1 hour 15 minutes to 1 hour 30 minutes, stirring halfway through cooking.
  • Stir in the cilantro and season to taste with additional salt, if necessary (I often add another 1/4 to 1/2 teaspoon). If you'd like spicier rice, add a pinch of red pepper flakes and stir again. Serve with lime wedges on the side.

1 ½ cups parboiled rice (such as Uncle Ben's®)
2 tablespoons canola oil
1 green bell pepper, finely chopped
½ onion, finely chopped
2 large green onions, sliced
1 (.18 ounce) packet sazon seasoning with saffron (such as Goya® Azafran)
1 teaspoon ground cumin
½ teaspoon garlic powder
½ teaspoon ground coriander
¼ teaspoon salt, or more to taste
1 ½ cups water
¾ cup tomato sauce
2 tablespoons minced fresh cilantro
1 lime, cut into wedges

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place rice in a 9-inch square baking dish. Drizzle in canola oil; stir to coat rice completely. Stir in green pepper, onion, and green onions. Season with sazon seasoning, cumin, garlic powder, coriander, and salt.
  • Combine water and tomato sauce in a microwave-safe bowl or measuring cup. Heat until simmering, about 2 minutes. Pour over the rice and stir briefly. Cover the baking dish tightly with heavy-duty aluminum foil.

I hated making brown rice on the stove top, so I have used this for almost 20 years. Smells like popcorn when it is baking. Be creative! Add spices to match any meal. Delicious as a side dish to Mexican fare or as a vegetarian taco filling. Easy, cheap and healthy with tons of flavor. My extremely picky boyfriend not only ate this but actually complimented me on it! You may use fresh onion if you like but picky bf doesn't like it so I use the powder. This is also nice garnished with fresh cilantro if you have it.
