CLASSIC BAKED MACARONI AND CHEESE



Classic Baked Macaroni and Cheese image

Think Stouffer's without the freezer. While it can be enjoyed straight from the pot, this macaroni and cheese has a slightly looser sauce than the stovetop variety to allow for thickening in the oven. Bread crumbs, while optional, make it truly spectacular.

1 pound elbows, shells, cavatappi, farfalle, fusilli or other short, tube-shaped pasta
Kosher salt
4 tablespoons unsalted butter
1/4 cup all-purpose flour
4 cups whole milk
1 clove garlic, finely grated
1 teaspoon smoked or hot paprika
Freshly ground pepper
12 ounces sharp or white Cheddar cheese, grated
12 ounces fontina or Gruyère, grated
1 cup coarse bread crumbs or panko
4 tablespoons melted butter or olive oil
1/4 cup finely grated Parmesan cheese (optional)
Kosher salt and freshly ground pepper

Steps:

  • Cook pasta in a large pot of salted boiling water until it's barely al dente. (It should be more al dente than your average pasta: It's going to continue to cook in the oven.) Drain and set aside.
  • Meanwhile, heat butter in a medium pot over medium heat. (The pot should be large enough to hold all the pasta when cooked.) Whisk in flour and cook, whisking constantly, until the flour is foamy and just starting to turn a light golden brown, about 4 minutes. Slowly whisk in milk to avoid clumping. Add garlic, paprika and season with salt and pepper. Bring to a simmer, whisking constantly and paying special attention to the edges of the pot to make sure the flour mixture is totally incorporated.
  • Add grated cheese and whisk to blend until the cheese is completely melted. (The sauce will seem thick at first and thin out as the cheese melts; it will thicken while it bakes.) Season with salt and pepper and add cooked pasta, stirring to coat well.
  • Heat oven to 425 degrees. Line a rimmed baking sheet with aluminum foil (to catch any cheesy drips).
  • Make the optional topping: Combine bread crumbs, melted butter and Parmesan, if using, in a medium bowl. Season with salt and pepper and, using your hands, mix well to ensure the bread crumbs are evenly coated.
  • Transfer the macaroni and cheese mixture to a 3-quart or 9 x 13 baking dish and scatter bread crumbs, if using, evenly over the top. Place on prepared baking sheet and bake until macaroni and cheese is bubbling, thickened and creamy, and bread crumbs are evenly golden brown, 25 to 30 minutes. Let cool slightly before serving.

1 pound elbow macaroni
1 stick unsalted butter, plus melted butter for brushing
1/4 cup all-purpose flour
2 teaspoons mustard powder
1 teaspoon Worcestershire sauce (optional)
1 teaspoon hot sauce
1/4 teaspoon cayenne pepper
1 quart whole milk
8 ounces havarti cheese, grated (about 2 cups)
1 pound sharp yellow cheddar cheese, grated (about 4 cups)
12 ounces white American cheese, grated (about 3 cups)
1 sleeve butter crackers (such as Ritz), crushed (about 35 crackers)
2 tablespoons grated parmesan cheese (optional)

Steps:

  • Preheat the oven to 375 degrees F. Bring a large pot of salted water to a boil. Add the pasta and cook until just slightly softened, about 6 minutes. Reserve 1/2 cup cooking water, then drain the pasta and rinse under cold water.
  • Meanwhile, melt 4 tablespoons butter in a large saucepan over medium heat. Whisk in the flour, mustard powder, Worcestershire sauce, hot sauce and cayenne and cook, whisking, until the mixture is smooth and slightly golden, about 2 minutes. Whisk in the milk and cook, whisking occasionally, until the sauce begins to boil and thicken, about 5 minutes. Stir in the havarti and all but 1 cup each of the cheddar and American cheese; cook, stirring, until the cheese just melts, about 1 more minute. Stir in the pasta, adding the reserved pasta water as needed to make a creamy sauce. Season with salt.
  • Brush a 9-by-13-inch baking dish with melted butter. Spread the pasta mixture in the dish. Melt the remaining 4 tablespoons butter in a bowl in the microwave; stir in the crushed crackers and parmesan. Sprinkle the reserved cheddar and American cheese evenly over the pasta, then scatter the cracker mixture on top. Cover with aluminum foil and bake until heated through, about 25 minutes. Remove the foil; continue baking until browned and bubbly, about 20 more minutes. Let rest 10 minutes before serving.

16 ounces sharp cheddar cheese (shredded)
8 ounces monterey jack cheese (shredded) or 8 ounces mild cheddar cheese (shredded)
6 tablespoons butter (4 for recipe, approximately 2 for greasing pan)
2 cups whole milk
3/4 cup Italian breadcrumbs
1 lb elbow macaroni

Steps:

  • Preheat Oven to 350 degrees.
  • Shred the two cheeses into two different bowls.
  • Prepare elbow macaroni as directed on box. Drain and set aside for a moment.
  • Grease entire surface of your 9"x 13" baking pan generously with butter.
  • Start Preparation by covering the bottom of the dish with half of the cooked elbow macaroni.
  • Cut 2 TBSP of butter into small pieces (like a pat of butter) and spread them over the macaroni evenly.
  • Add a layer of half of the Cheddar Cheese, then half of the Monterey Jack or Mild Cheddar Cheese.
  • Add the other half of the elbow macaroni, THEN 2 more TBSP of butter cut into small pieces and spread out evenly.
  • Add the other half of both cheeses.
  • Add the 2 Cups of milk.
  • FINALLY -- Sprinkle the breadcrumbs lightly in a thin layer over top of the whole dish (you may use more or less than my recipe calls for).
  • Put in oven at 350 degrees for about 45 minutes, or until lightly browned

A friend of mine sent this recipe to me when I got my first apartment, because she knows how much I hate cooking! It's really easy -- even I can make it -- and tastes great. I'm not sure where she found the recipe, but it included the note 'Good source of protein, vitamin A, B group vitamins, calcium.'

1 (12 ounce) package macaroni
1 egg
2 cups milk
2 tablespoons butter, melted
2 ½ cups shredded Cheddar cheese
salt and pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2-quart baking dish.
  • In a large pot of salted water, lightly boil the macaroni for about 5 minutes until half-cooked.

1/2 lb extra-sharp cheddar cheese, shredded

3/4 cup fresh breadcrumb

Steps:

  • Preheat the oven to 350°.
  • Lightly butter a 2 1/2 quart baking dish.
  • Bring a large pot three-fourths full of salted water to a boil.
  • Add the macaroni, stir well, and cook for about 6 minutes.
  • The macaroni will still be quite al dente; it will cook further in the oven.
  • Do not overcook; drain thoroughly.

Where I grew up the standard macaroni and cheese was creamy, like the stuff that comes in a box. But my mom always made the custard version. Some places I've lived that was the usual kind and the creamy one was the oddity. Wherever you live, this is delicious! Make it plain or try one of the variations.

1 lb macaroni
1 lb colby cheese, sliced (also known as Longhorn or Longhorn Colby)
3 cups milk
6 eggs
salt
fresh ground black pepper

Steps:

  • Cook macaroni according to package directions but stop a minute or two short of fully cooked. Drain and rinse.
  • Grease or butter an 8x12 or 13x9 baking pan. (A half batch can be made in a 9 inch square pan).
  • Spread 1/3 of the macaroni in the pan. Top with 1/3 of the cheese slices. Salt and pepper to taste.
  • Repeat twice, alternating the directions the slices run so as to fill all the gaps.
  • Beat eggs into the milk.
  • Pour into the casserole dish. You want this custard to come within about 1/2 inch of the top of the pan. The shape and size of the dish may require more or less -- just keep the proportion of 2 eggs per cup of milk.
  • Bake at 350°F for 60-90 minutes or until a knife inserted in the center comes out clean of custard (it might be a bit cheesy).
  • Tip -- this is apt to overflow a little if you got the custard too far up to the top. Best to bake it on the upper rack with a baking sheet on the rack below to catch any drips.
  • Variations -- Add things like leftover cooked chicken or turkey, leftover ham, cooked broccoli, VERY well-drained frozen spinach, peas, ?.
  • You can also vary the cheese used. I've had it with cheddar, American, Swiss (extra good with ham and broccoli), and mozzarella.
  • You can also try adding different herbs. IMO, nothing wakes up bland food like a dash of sherry or a pinch of celery seed. A bit of garlic, thyme, or Italian seasoning can be good depending on the cheese used.
