Lemon Parmesan Salmon & Asparagus Foil Packs are so easy to make, and are packed with flavour! Baked OR grilled right on your barbecue!

4 salmon fillets, (skin on or off)
1 pound (500 g) asparagus spears, (wood ends trimmed)
1/3 cup butter, (melted)
1/3 cup lemon juice, ((or juice of 1/2 a lemon))
1 tablespoon minced garlic, ((or 4 large cloves garlic, minced))
2 teaspoons fresh parsley, (finely chopped (or dried parsley))
Salt and pepper, (to season)
2/3 cup fresh grated parmesan cheese
Parsley to garnish
Lemon wedges

Steps:

  • Preheat oven or barbecue (grill) following instructions below.
  • Place each salmon fillet in the centre of one 12x18-inch heavy-duty aluminium foil piece. Divide the asparagus into 4 equal portions and arrange next to the salmon on each foil piece.
  • In a small bowl, mix together the melted butter, lemon juice, garlic and parsley. Pour the garlic/butter mixture evenly over each piece of salmon and asparagus; season with salt and pepper to taste, and top each pack with the parmesan cheese (about 2-3 tablespoons per pack).
  • Tent with foil, tightly sealing the edges to prevent the butter being leaked, to create a foil packet.

This is a very easy, and tasty dish to make for company or a simple dinner at home. The presentation is great for company! I made this for Mother's Day and it was a big hit! My Husband made some garlic mashed potatoes for a side dish, but it would also go good with rice as well.

3 lbs salmon fillets (skinless if possible)
1 lb bunch asparagus
1 tablespoon olive oil
1 medium shallot, chopped
1/4 cup white wine vinegar
1/4 cup white wine
1/2 cup butter, cubed (one stick)
2 tablespoons capers, drained
1 tablespoon lemon zest
1/2 lemon, juice of
salt and pepper

Steps:

  • Preheat oven to 400 degrees.
  • Line a large casserole dish with foil (3 qt Rectangle).
  • Brush bottom and sides of foil with Olive Oil.
  • Cut Salmon into 6 equal pieces.
  • Salt and pepper both sides of salmon fillets.
  • Arrange salmon in the center of baking dish, leaving room around the edges.
  • Wash Asparagus, and arrange around the edges of the dish.
  • Bake 20-25 minutes until salmon is opaque and flakes easily.
  • In a saucepan, simmer shallots, wine, and vinegar until shallots are soft.
  • Add the butter, and 2 Tbsp water and stir until melted and smooth.
  • Stir in Capers, Lemon Juice, Zest, and Parsley.
  • Pour over salmon and serve.

This is a quick and easy dinner. Pop the packets into the oven while you set the table and in 15-minutes you have a nutritious dish with virtually no clean up. Serve this with a rice or couscous dish and extra lemon on the side. This recipe was found at another web site.

4 sheets aluminum foil, wrap (12-inch by 18-inch)
4 (5 ounce) salmon fillets
1 lb asparagus
1 fresh lemon
fresh ground black pepper
seasoning salt
lemon wedge (to garnish)

Steps:

  • Preheat oven to 450 degrees.
  • Snap the ends off asparagus spears (they will break where tender) and divide into 4 equal portions.
  • Spray the center of each foil sheet with non-stick cooking spray.
  • Place one salmon fillet in the center of each sheet, top with a serving of the asparagus and drizzle with lemon juice.
  • Sprinkle with fresh ground pepper and salt or seasoning blend as desired.
  • Bring up the sides of foil and fold top over twice.
  • Seal ends, leaving room for air to circulate inside the packet.
  • Place packets on a cookie sheet and cook in oven for 15 to 18 minutes or until salmon is opaque.
  • Serve with lemon wedges on the side.
  • Please use caution when opening the foil packs, as the steam is very hot.

6 -8 ounces salmon fillets
2 tablespoons mediterranean olive oil
1/2 lemon
1/2 teaspoon fresh thyme leave
1/4 teaspoon garlic powder
1/4 cup freshly grated parmesan cheese
salt
black pepper

Steps:

  • Cooks tip: don't worry about the skin before cooking. It helps to keep the fish moist and flavorful, and comes away easily when the fish is cooked.
  • Preheat oven to 425 F./broil.
  • In a small rectangular baking dish, pour oil and the juice from the lemon.
  • Coat both sides of the fish in the oil/juice; season fish with salt, pepper, thyme leaves, and garlic powder; place Parmesan on a plate and press fish side down into the Parmesan (not the skin side) and place fish fish side up (skin side down) in the baking dish. Sprinkle any escaped cheese onto top of the fish.
  • Broil about 4-6 inches from element (top rack) for 10-12 minutes, or until fish flakes easily.
