This is a recipe I made while attempting to finish a food tech assignment. This also works well with regular potatoes. Sweet potatoes are known as 'kumara' in New Zealand where I am from. Serve with sour cream.

2 teaspoons vegetable oil
¼ cup all-purpose flour
1 teaspoon paprika
1 teaspoon mustard powder
1 pinch salt
½ teaspoon ground black pepper
4 large sweet potatoes, cut into wedges

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Drizzle a medium baking sheet with the vegetable oil.
  • In a large, resealable plastic bag, mix flour, paprika, mustard powder, salt, and pepper. Place sweet potato wedges in the bag, and toss to coat.
  • Arrange coated sweet potato wedges on the prepared baking sheet. Bake 20 to 30 minutes in the preheated oven, until browned and crisp.

Roasted Sweet Potatoes With Smoked Paprika image

This is a simple way to put an enormous amount of flavor on a plate, and it is particularly delicious with roast chicken - or as a side dish for slab-bacon tacos with burned scallion crema. (Drizzle a little of the crema onto the potatoes just before serving, as if to recall the aioli served with patatas bravas in Spain.) As always when using paprika, smoked or plain, if you can't recall the last time you did so, it is time for a new jar. All spices go stale. Paprika does so quickly.

4 large sweet potatoes, peeled and cut into cubes
1 large Spanish onion, peeled and cut into cubes
2 cloves garlic, peeled and sliced
3 tablespoons olive oil
1/2 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon smoked paprika, or to taste

Steps:

  • Heat oven to 425 degrees. Combine the sweet potatoes, onion and garlic in a large bowl, and drizzle the olive oil over it, then toss to coat. Sprinkle the salt, pepper and smoked paprika over the potatoes, and toss again to coat. Tip the potatoes onto a sheet pan or into a shallow casserole, then cover it with foil.
  • Roast the potatoes in the oven, tossing occasionally, until they are soft at the center and beginning to crisp at the edges, approximately 30 to 40 minutes. Serve hot, drizzled with burned-scallion crema if you like.

1 ½ teaspoons dried oregano

  • Preheat the oven to 425 degrees F (220 degrees C). Place a baking pan in the oven to heat up.
  • Mix olive oil, garlic, oregano, smoked paprika, and hot sauce in a large bowl. Toss potato wedges in the oil until well coated.

2 Sweet Potatoes
2 tbsp Olive Oil
2 tsp Smoked Paprika
¼ tsp Cayenne Pepper
½ tsp Sea Salt

Steps:

  • Preheat the oven to 200°c (180° fan/ 400F/ Gas 6) and peel and cut the sweet potatoes into 3cm cubes.
  • Place the cubed sweet potatoes onto the baking sheet and drizzle over the oil, then sprinkle over the other ingredients. Use a spoon to toss everything together, making sure all the sweet potatoes are coated in oil.
  • Roast in the oven for 18-20 minutes until tender. I usually test with a sharp knife.

5 medium potatoes
1 medium large kumara
1 onion
1 large garlic clove
1 vegetable stock cube
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh chives
250 ml pure cream
1 cup tasty cheese, grated
1/4 cup packaged breadcrumbs

Steps:

  • Slice potatoes and kumara thinly.
  • Place into a casserole dish in layers.
  • Chop onion & garlic finely and sprinkle over potato and kumara.
  • Crumble the stock cube over onion, then add herbs.
  • Pour the cream over.
  • Follow with the cheese.
  • Sprinkle the breadcrumbs evenly on top.
  • Bake in a 180C oven for approx 1 hour and 10 minutes, or until potatoes are tender and top is golden and crispy.

1.5kg (about 7) sweet potatoes
3 tbsp vegetable oil
2 tsp sweet smoked paprika
2 tbsp fine cornmeal or polenta

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cut 1.5kg (about 7) sweet potatoes into chunky chips and put in a large bowl. Drizzle with 3 tbsp vegetable oil, then sprinkle with 2 tsp sweet smoked paprika, 2 tbsp fine cornmeal or polenta and plenty of seasoning.
  • Toss until well coated, then divide the chips between 2 large baking trays lined with baking parchment. Cook for 35 mins until golden and crunchy, tossing halfway through cooking.

1 sweet potato, roughly chopped into dice with the skin still on
1 red pepper, de-seeded and cut into chunks
1 red onion, peeled and cut into chunks
3 garlic cloves, peeled
1 tsp smoked paprika
2 tbsp olive oil
200ml coconut milk
200ml chicken stock
½ tbsp sriracha
1 tsp maple syrup

Steps:

  • Heat oven to 190C/170C fan/gas 5. Put the sweet potato, pepper, onion and garlic on a baking tray. Sprinkle with the paprika and seasoning, then drizzle with the oil. Toss together. Roast for 30 mins or until beginning to brown.
  • Tip the roasted vegetables into a blender (or use a stick blender) with the coconut milk, stock, sriracha and maple syrup. Whizz until smooth. Pour back into the pan and heat until piping hot. Check for seasoning, and pour into a flask. Serve with soda bread or toasted sourdough.
