Baked Creamed Corn With Red Bell Peppers and Jalapenos image

8 ears corn, husked
2 red bell peppers, diced
2 jalapeno peppers, diced
1 cup heavy cream
Kosher salt and freshly ground pepper
1 stick salted butter, cut into pieces

Steps:

  • Preheat the oven to 350 degrees F. Slice the corn kernels from the ear in a large, deep bowl with a sharp knife. Turn the knife to the dull side and scrape the cob all the way down to remove all the bits of kernel and the creamy milk.
  • Add the red bell peppers, jalapenos, heavy cream, 2 teaspoons salt, a generous amount of pepper and the butter and mix well. Pour into a 9-by-13-inch baking dish. Bake until hot and bubbly, 45 to 55 minutes.

When working with jalapeños, it helps to wear disposable latex or vinyl gloves. If you don't have gloves be sure not to rub your eyes until you wash your hand thoroughly with warm soapy water.

12 large jalapeno peppers
1/4 c onion, minced
1/4 c fresh cilantro, chopped
3/4 c cream cheese, room temperature
salt, to taste
2 oz monterey jack cheese

Steps:

  • 1. Preheat the oven to 375°. Line a baking sheet with foil.
  • 2. Slice jalapenos in half lengthwise. Scrape out all the seeds and ribs from each jalapeño with a spoon.
  • 3. Mix together all the filling ingredients except the jack cheese. Cut the jack cheese into 24 2- inch sticks. Pack the filling into the peppers and nestle a stick of jack cheese onto the filling of each one.
  • 4. Arrange the peppers on prepared baking sheet and bake for 20-30 minutes, or until the cheese is bubbly and lightly browned, and the peppers are cooked.
  • 5. Allow to cool for 5 minutes before serving.

2/3 cup shredded Monterey Jack cheese
1 teaspoon minced fresh cilantro

1 large egg, lightly beaten
3/4 cup cornflake crumbs

Steps:

  • In a small bowl, beat cream cheese and cumin until smooth. Beat in Monterey Jack cheese and cilantro. Spoon into jalapeno halves. , Place egg and cornflake crumbs in separate shallow bowls. Dip filling side of jalapenos in egg, then coat with crumbs. , Place on a greased baking sheet with crumb side up. Bake at 350° for 25-30 minutes or until top is golden brown. Serve immediately.

1 -2 medium jalapenos or 1 -2 medium serrano chili, stemmed
8 ounces piece monterey jack cheese, halved
3 cups water
3 tablespoons olive oil
1 1/4 teaspoons salt
1 cup yellow cornmeal
fresh ground pepper

Steps:

  • Steel Knife: With machine running, drop chili through feed tube and mince. Remove from work bowl.
  • Shredder: Arrange cheese in feed tube and shred using light pressure.
  • Generously grease 8-inch square pan. Bring water, 2 tablespoons oil and the salt to boil in large heavy saucepan. Reduce heat to low. Add cornmeal in thin, steady stream, whisking constantly. Cook until mixture is very thick and film forms on bottom of pan, stirring frequently, about 9 minutes. (Or to microwave: Combine water, 2 tablespoons oil, salt, and cornmeal in 3-quart microwave casserole. Cover and cook on High 4 minutes. Uncover; whisk until smooth. Cover and cook until very thick, about 6 minutes.) Add chili, half of cheese and pepper and stir until smooth. Transfer mixture to prepared pan. Smooth top with spatula. Cool completely. (Can be prepared 3 days ahead. Cover and chill.).
  • Position rack in center of oven and preheat to 425 degrees. Grease large baking sheet. Cut polenta into eight rounds using 2 1/2-inch biscuit cutter. Transfer to prepared sheet. Brush tops of rounds with remaining 1 tablespoon oil. Sprinkle with remaining cheese. Bake until cheese is golden, 10 to 12 minutes. • 3/4 cup cream cheese
• 1 1/2 teaspoon cumin
• 1 teaspoon salt (more or less to taste)
• 2 ounces jack cheese, cut into 2 1/2-inch long batons

Steps:

  • METHOD 1 Preheat the oven to 375°. 2 slice off the top one-third (lengthwise) of each jalapeño to make a boat shape out of each pepper. You can mince the tops and add them to the filling if desired. 3 Mix together all the filling ingredients except the jack cheese batons. 4 Pack the filling into the peppers and nestle a baton of jack cheese onto the filling of each one. Arrange the peppers on a foil-lined baking sheet and bake for 20-30 minutes, or until the cheese is bubbly and lightly browned, and the peppers are cooked.

10 pitted calamata olives
2 minced shallots

  • 1) Slice jalapenos lengthwise thru the stem and w/ a tsp clean out seeds and vein. Failure to clean properly, will cause more heat and the inability to enjoy the stuffing 2) Line face up on a baking sheet and bake at 300 for 30 minutes. Shell should be soft 3) In a food processor combine remaining ingredients and use short quick pulses to combine 4) Once jalapeno halves have cooled, stuff with approx 1 tsp of mixture 5) Wrap w/ film and chill for at least 1 hr. 6) Bake @ 350 for 20 min or until golden crust forms on each one

3 cup(s) shredded cheddar cheese (12 oz), sharp or mild

4 slice(s) bacon, cooked & crumbled

Steps:

  • Wearing gloves, cut peppers in half and remove seeds & membranes. Cook peppers in boiling water for 10 minutes and then drain very well.
  • Combine cream cheese, cheddar cheese & worchestershire sauce - mix well. Place 1 heaping teaspoon cheese mixture in each pepper half. Sprinkle tops with crumbled bacon.
  • Place filled jalapenos on a foil-lined backing sheet sprayed lightly with vegetable spray. Bake at 400 degrees for 5 minutes or until cheese is melted.
