ITALIAN BAKED MEATBALLS
This recipe makes the most tender and tasty meatballs. I also freeze these meatballs and take out how many servings I need for each meal. If cooking in sauce, add baked meatballs 20 minutes before serving time.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Mix bread crumbs, Romano cheese, parsley, salt, pepper, garlic powder, and onion powder together. Combine with water and eggs. Add ground beef and mix well. Roll mixture into balls and place on a nonstick baking sheet.
- Bake in the preheated oven until browned, about 30 minutes.

BAKED ITALIAN MEATBALLS
These are really tasty and I love that they are baked in the oven rather than pan-fried. I found this recipe in Cooking light originally and have made them several times with great success. They freeze well after cooking - I just thaw them and add them to simmering sauce for a great spaghetti dinner on busy nights.

- Preheat oven to 400 F.
- Spray a broiler pan with broiling rack well with nonstick spray (I line the bottom part with foil and then spray).
- Combine all ingredients well.
- Form into 30 meatballs using a 1 1/2" diameter scoop (or use your hands).
- Set on sprayed broiler rack in prepared pan and bake for 15-20 minutes, or until meatballs are cooked through.
- Add these meatballs to your favorite sauce and serve over pasta or in a hoagie roll with sauce& cheese to make a great sandwich.
MARY'S BAKED ITALIAN MEATBALLS
Buttermilk is the surprising secret for these flavorful meatballs! This is an adaptation from Cook's Illustrated's Pasta book. These are juicy and tender but lean, and ready to plop into your favorite sauce.

- In a food processor, mince garlic.
- Add onion, and pulse to chop.
- Add bread slices, crumbled, and pulse to shred.
- Add buttermilk, pulse, and let stand until liquid is absorbed.
- Add red pepper flakes, salt, Parmesan cheese, egg, parlsey and pepper, and pulse to mix.
- Add ground beef, pulse till thoroughly mixed.
- Form into meatballs 1-1/2 to 2 inches in diameter.
- They will be soft (it makes about 20 meatballs or so).
- Place on a foil-lined 10 x 15 jelly roll pan.
- Bake at 400 degrees for about 20 minutes.

This is the way I've been making meatballs for several years. I choose To bake them. It makes an easier cleanup. Plus, it helps get rid of extra fat. You could fry meatballs in olive oil as well. Baking them gets rid of so much more fat. Add them to your favorite red sauce and enjoy!

- Place the ground beef and sausage in a large bowl.
- Mix the ground beef and sausage together thoroughly with your hands.
- Add in the remaining ingredients with the eggs and milk last.
- Knead mixture together really well with your hands. It will take 2 to 3 minutes to incorporate ingredients evenly.
- Roll mixture into 2 inch meatballs. You can also make larger meatballs, if you wish.
- Place meatballs on foil lined large sheet pan. Spray tops of meatballs with olive oil spray or any type of oil spray.
- Place in 400° oven. Bake about 30 minutes until meatballs are thoroughly cooked through and browned on the outside.
- Remove meatballs from pan into your favorite red sauce. Simmer in sauce for about 30 minutes or longer before serving. Serve over your favorite pasta.
- Note. You can cool meatballs and freeze in a gallon size Ziploc bag. You can also freezes in your favorite red sauce .To reheat frozen meatballs. Simply, place frozen meatballs into your favorite red sauce and simmer until meatballs are heated through. Serve over pasta. If freezing in sauce. Make sure that you thaw sauce with meatballs before reheating.
BAKED ITALIAN MEATBALLS

- Place all ingredients in a large bowl. Using the tips of your fingers (I like to wear gloves, keeps things tidy and the meat doesn't overheat) gently combine the ingredients -- don't overwork the mixture, it should not look like paste. Form into 12 meatballs a little smaller than tennis balls, or 24 golf-ball size if that's your preference. Space them evenly on foil or parchment in a lipped tray or pan...if you made the smaller size you might need 2 pans. Bake at 400 for 35 minutes or so until brown and cooked through. Sauce them if so desired and serve with pasta, or make a killer sandwich.
