BAKED HADDOCK W/ LOBSTER SAUCE

Number Of Ingredients 12

4 Tbsp butter
2 Tbsp fresh chopped parsley
1-1/2 Tbsp lemon juice
1/8 tsp white pepper.
6 haddock filets
1-1/4 c light cream
4 Tbsp butter
1 tsp flour
3 egg yolks
salt and black pepper to taste
1-1/2 Tbsp lemon juice
8 oz fresh lobster meat, cooked, chopped.

Steps:

  • 1. In bowl, w/ mixer, beat light cream, 4 tbsp butter, flour, egg yolks and salt & pepper to taste. Beat until smooth. Pour into heat-proof bowl. Place bowl in a pan of water that goes up 1/2 way up the sides of bowl. Place heat on low and simmer, whisking occasionally for 25 min. Spray a wide, shallow oven-proof casserole dish w/ cooking spray. Lay 1/2 the parsley in bottom of dish. Sprinkle 1/2 the lemon juice over parsley. Sprinkle w/ white pepper. Place fillets on parlsey. Cover w/ remaining parsley. Sprinkle w/ lemon juice, salt and pepper.Cover dish and bake @ 350 for 10-15 min, or until fish flakes easily. Just before serving, stir the remaining lemon juice and lobster meat into sauce in bowl. Spoon sauce over fillets.

2 pounds haddock fillets
1 can (10-3/4 ounces) condensed cream of shrimp soup, undiluted
2 tablespoons lemon juice
2 tablespoons sherry or reduced-sodium chicken broth
2 tablespoons finely chopped onion
4-1/2 teaspoons butter
2 garlic cloves, minced
1/4 cup dry bread crumbs
1/4 teaspoon Worcestershire sauce

Steps:

  • Place the fillets in a 13-in. x 9-in. baking dish coated with cooking spray. In a small bowl, combine the soup, lemon juice and sherry or broth. Pour over fillets. Bake, uncovered, at 350° for 20 minutes. , In a small nonstick skillet, saute onion in butter for 2 minutes. Add garlic; cook 1 minute longer. Stir in bread crumbs and Worcestershire sauce. Sprinkle over fillets. Bake 5-10 minutes longer or until fish flakes easily with a fork.
