SWEET AND SPICY PINEAPPLE SALMON



Sweet and Spicy Pineapple Salmon image

Salmon is roasted in a sweet and spicy pineapple sauce, along with pineapple slices, in this easy, healthy meal that's ready in 30 minutes or less!

2-2.5 lbs. salmon
Salt and pepper, to taste
2 (8 oz.) cans pineapple slices, drained (reserve juice for glaze)
1/2 cup sweet chili sauce
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 tablespoon brown sugar
1/4 cup pineapple juice
Chopped fresh cilantro, for garnish

Steps:

  • Preheat oven to 425 degrees. Line a baking sheet with foil. Spray with non-stick cooking spray.
  • Lay salmon on foil and season with salt and pepper. Arrange pineapple slices around edges of salmon. Fold edges of foil up around the salmon and pineapple.
  • In a small bowl, whisk together sweet chili sauce, rice vinegar, soy sauce, brown sugar and pineapple juice. Pour glaze over salmon.
  • Bake for 12-15 minutes. Switch oven to broil and cook for an additional 4-5 minutes, or until edges of salmon just begin to blacken.
  • Sprinkle with chopped fresh cilantro before serving, if desired.

Fish With Pineapple Chutney image

Posted for Zaar World Tour III - this recipe is from the Moosewood Restaurant Low Fat Favorites, but it seems to fit with Australian ingredients, so I'm including for that region. Feel free to season up the chutney as you see fit. NOTE: I've made a few changes to this recipe to reflect some excellent suggestions made by a reviewer.

4 fish fillets (suggest red snapper, pompano, tuna, mahi mahi, swordfish)
1 cup fresh pineapple chunk (or drained, unsweetened canned chunks, reserve juice)
1 teaspoon grated lemon peel
1 lemon, peeled and seeded
1 green chili pepper, seeds removed if milder flavor desired
1 cup chopped red bell pepper
1/4 cup chopped scallion
2 teaspoons grated fresh gingerroot
Tabasco sauce (to taste)
salt (to taste)
lemon wedge (garnish)

Steps:

  • Preheat oven to 375°F.
  • Rinse the fish fillets, pat dry and set aside.
  • In a food processor, briefly whirl the pineapple, lemon peel, lemon, chile, bell peppers, scallions, ginger and Tabasco till the chutney has a confetti-like appearance. Add reserved juice if chutney seems too dry.
  • Add salt to taste.
  • Arrange the fish in a lightly oiled baking dish.
  • Grill the fish till tender and cooked through and serve topped with chutney.
  • Alternatively: Top with chutney and bake, covered, for 20-25 minutes, till fish flakes easily with a fork.
  • Garnish with lemon wedges.

Cooking spray, for pan
17 pineapple rings, fresh or canned
1 large salmon fillet (about 3 lbs.)
Kosher salt
Freshly ground black pepper
3 TBS melted butter
3 TBS sweet chili sauce
2 TBS freshly chopped cilantro
3 cloves garlic, minced
2 tsp. freshly grated ginger
2 tsp. toased sesame oil
1/2 tsp. crushed red pepper flakes
Toasted sesame seeds, for garnish
Thinly sliced green onions, for garnish
Lime wedges, for serving

Steps:

  • 1.Preheat oven to 350 degrees. Line a large rimmed baking sheet with foil and grease with cooking spray. In the center of the foil, lay pineapple slices in an even layer. 2. Season both sides of the salmon with salt and pepper and place on top of pineapple slices. 3. In a small bowl, whisk together butter, chili sauce, cilantro, garlic, ginger, sesame oil, and red pepper flakes. Brush all over salmon fillet 4. Bake until the salmon is cooked through, about 25 minutes. Switch the oven to broil, and broil for 2 minutes, or until fish is slightly golden. Garnish with sesame seeds and green onions and serve with lime wedges.
