1 cup shredded Cheddar cheese
12 eggs
1 (5 ounce) can evaporated milk
1 teaspoon ground dry mustard
1 to taste salt and pepper to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13-inch baking dish.
  • Sprinkle cheese evenly in the bottom of the baking dish. In a large bowl, beat together eggs, milk, mustard powder, salt and pepper. Pour egg mixture on top of cheese.
  • Bake in preheated oven for 40 minutes or until firm. Let cool slightly before cutting into squares to serve.

Unsalted butter, for ramekins
4 teaspoons heavy cream
8 large eggs
Kosher salt and freshly ground pepper
Peppadew Peppers, drained
Sautéed mushrooms and spinach (see variation section for recipe)
Cooked crumbled bacon
Crumbled feta or grated Parmigiano-Reggiano
Toasted English muffins or a crusty baguette, for serving

Steps:

  • Preheat oven to 400°F. Generously brush 4 shallow (6-inch) gratin dishes, ramekins, or small oven-proof skillets with unsalted butter. Add 1 teaspoon heavy cream and crack 2 eggs into each; season with salt and pepper.
  • Sprinkle each dish with desired toppings and transfer to a rimmed baking sheet; bake until whites are just set and yolks are still soft, 9 to 11 minutes. Serve with English muffins or toast.

These are fast to do and you don't have to watch them too much. Mom Florence made these for breakfast. She made the simple ones. I came up with the different variations. There are many variations you can do. You can tailor breakfast to the person. They cook in the muffin tin.

6 slices bread
6 teaspoons butter
6 slices deli ham (optional)
6 eggs
2 slices bacon, cooked crumbled (optional)
6 teaspoons mushrooms, minced fine (optional)
6 teaspoons green onions, minced fine (optional)
6 teaspoons spinach (optional)
6 teaspoons tomatoes, minced (optional)
6 teaspoons green peppers, minced fine (optional)
6 sausage links, cooked (optional)
6 tablespoons cheese, shredded (optional)

Steps:

  • Butter outside of bread; stuff into muffin tins forming a cup.
  • Start to build; if using ham put in cup.
  • Place eggs in cups; if you want plain stop here and bake.
  • Add toppings ending with cheese on top. The sausage goes on side sticking up.
  • You can use whatever cheese you like.
  • You can mix up the toppings to have a completely different flavor and you can microwave later.
  • Bake for 10 mininues for softer eggs 15 minutes for yolk done at 375 degrees Fahrenheit until eggs are done.

A very easy idea with a minimum of fuss or muss for any number of people. Individual Baked Eggs surrounded by a strip of bacon, and topped with a square of cheese. These eggs take on a very pleasing flavor just by baking instead of cooking them in the more conventional manner. Great not having splatters all over, and being able to do 12 or more eggs at one time.

1 slice bacon
1 teaspoon melted butter
1 egg
¼ slice Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown, but still flexible. Wrap bacon slice around the inside of a muffin cup. Place a teaspoon of butter (or bacon grease) in the bottom of muffin cup. Drop in egg.
  • Bake in preheated oven for 10 to 15 minutes. Place 1/4 slice of cheese over egg, and continue cooking until cheese is melted and egg is cooked.
