CROUTON EGG CASSEROLE

This comes from the "Bon Appetot Cookbook"-not a typo! It's a book that was created by preschoolers' parents. It makes for a perfect for brunch.

4 slices bacon
2 cups croutons, plain
4 ounces cheddar cheese, shredded
4 eggs, slightly beaten
2 cups milk
1/2 teaspoon salt
2 teaspoons onion powder
pepper

Steps:

  • Cook bacon until crisp and drain on paper towels. Set aside.
  • In the bottom of a 10 X 6 X 1 3/4 inch baking dish, combine croutons and cheese.
  • In a bowl, combine eggs, milk, salt, onion powder and pepper. Mix until blended.
  • Pour egg mixture over the cheese and croutons.
  • Crumble the bacon and sprinkle on top of the casserole.
  • Bake in a preheated 325 degree oven for about 1 hour or until eggs are set.
  • Cool slightly before serving.

2 cups plain croutons
2 cups shredded Cheddar cheese
4 slices cooked bacon, crumbled
3 eggs, beaten
½ teaspoon prepared yellow mustard
⅛ teaspoon onion powder
1 pinch ground black pepper

Steps:

  • Mix croutons, Cheddar cheese, and bacon together in a bowl; transfer to an 11x7-inch baking dish.
  • Beat eggs, mustard, onion powder, and black pepper together in a bowl; pour over croutons mixture. Cover dish with plastic wrap and refrigerate, 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Remove plastic wrap from dish.
  • Bake in the preheated oven until a knife inserted near the center comes out clean, about 45 minutes. Let casserole stand for 5 minutes before serving.

2 1/2 cups croutons (pick a flavor you like)
2 cups cheddar cheese
2 lbs Jimmy Dean sausage, browned and drained
8 eggs
3/4 teaspoon dried mustard
2 1/2 cups milk
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup milk
1/2 cup sour cream

Steps:

  • Place croutons on bottom of greased 9 by 13 pan.
  • Top croutons with cheese and browned sausage.
  • mix together dry mustard, 2 1/2 cups milk, and eggs.
  • Refrigerate overnight.
  • In the morning, mix together- cream of mushroom soup, 1/2 cup milk and 1/2 cup sour cream. Pour over egg mixture.
  • Cover with Reynolds wrap and Bake at 350 degrees for 90 minutes.

1 1/2 lbs bulk pork sausage or 1 1/2 lbs Italian sausage
2 1/2 cups seasoned croutons
2 cups cheddar cheese, 8 ounces shredded
2 1/2 cups milk
4 eggs
1/4 teaspoon dry mustard
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup milk

Steps:

  • In a large skillet cook sausage until brown, drain.
  • Lightly grease a 3 quart rectangular baking dish and spread croutons evenly in bottom.
  • Sprinkle 1 cup of shredded cheese over croutons and top with sausage.
  • In a large bowl add 2 1/2 cups milk, eggs, and dry mustard. Whisk together well and carefully pour over layers in baking dish.
  • In a small bowl combine cream of mushroom soup and 1/2 cup milk, whisk well and spoon evenly over mixture in baking dish.
  • Cover with plastic wrap and chill for 2 hours or overnight.
  • Bake in a 325 degree oven, uncovered for 45 minutes.
  • Sprinkle with remaining cheese and bake for approximately 5 to 10 minutes longer or until a knife inserted in the middle comes out clean.
  • Let stand for 10 minutes before serving.
  • Chill time is not included in prep and cooking time.

This is a recipe from the wall of our old home. Which means, I have no idea where it came from after 7 years. I'm posting these because they are my favorites if they made it to the wall.

1 lb pork sausage
1 (5 1/2 ounce) package seasoned croutons
1 1/2 cups cheddar cheese, shredded
1 cup swiss cheese, shredded
1 cup monterey jack pepper cheese, shredded
8 eggs
1 pint half-and-half
1 1/2 cups milk
1 1/2 teaspoons dry mustard
1 tablespoon onion, minced
salt and pepper

Steps:

  • Place sausage in large, deep skillet. Cook over medium-high heat until evenly browned. Drain, crumble and set aside.
  • In a lightly greased 9x13 inch baking dish, arrange the croutons in a single layer. Layer with all cheeses and top with cooked sausage.
  • In a large bowl, beat together the eggs, half-and-half, milk, mustard, onion, salt, and pepper. Pour into the dish over the sausage.
  • Cover, and refrigerate overnight.
  • The next morning, bake in an oven preheated to 350°F for 45 to 60 minutes.
