LOUISIANA MASHED EGGPLANT PATTIES



Louisiana Mashed Eggplant Patties image

Quick & easy. I serve with Tomato Mushroom Gravy which is posted with Baked Eggplant a La Ce Ce under my recipes. This is meatless. I serve with a salad. If you want, you may crush 3 precooked slices bacon to the mixture before forming patties. I also use Provalone cheese in place of cheddar once in awhile.

Number Of Ingredients 11

1 medium eggplant, peeled, small cubes
1 1/4 cups Ritz cracker crumbs
1 1/4 cups shredded cheddar cheese
2 eggs, beaten
2 tablespoons parsley flakes
2 tablespoons dried onion flakes
1 teaspoon minced fresh garlic
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon lemon juice
2 tablespoons shortening or 2 tablespoons olive oil

Steps:

  • In a 2 quart saucepan heat water.
  • Peel and cube eggplant.
  • Drop into boiling water. Cover and cook until tender.
  • While eggplant is cooking, mix all ingredients except lemon juice and shortening in a bowl.
  • Drain eggplant and mash with fork or beaters.
  • Add lemon juice.
  • Add eggplant lemon juice mixture to bowl mixture.
  • Heat shortening or oil in large frying pan.
  • Form 8 patties Fry until brown on both sides.

If anyone is searching for an absolute fantastic eggplant recipe, then this is one you will have to try! To save time combine the bread crumb mixture, and fry the onion and garlic ahead of time or even a day ahead. I would suggest to double this recipe, otherwise you might tend to eat the whole casserole yourself LOL... it is that good!

3 tablespoons olive oil (can use butter mixed with oil)
1 large onion, sliced (if you like onions, then use two)
1 tablespoon fresh minced garlic (or to taste)
salt or seasoning salt
pepper
2 lbs tomatoes, chopped
3 tablespoons fresh basil, chopped (or 1 teaspoon dried basil)
2 cups dry breadcrumbs (seasoned with seasoning salt, pepper and garlic powder and 4 tablespoons Parmesan cheese)
1/3 cup grated parmesan cheese
4 egg whites, lightly beaten
2 cups grated mozzarella cheese
3 lbs eggplants, peeled and cut crosswise into about 3/8-inch thick slices

Steps:

  • Prepare a cookie sheet and coat with non-stick cooking spray (you might need two sheets for the eggplant slices).
  • In a bowl mix bread crumbs with about 1-1/2 teaspoons seasoning salt, pepper 1 teaspoon garlic powder and 4 tablespoons Parmesan cheese).
  • In a shallow baking dish or bowl dip the eggplant slices in the egg whites and then coat in the seasoned bread crumb mixture.
  • Place the eggplant slices on prepared baking sheet/s and spray the eggplant slices liberally with cooking spray; set aside.
  • In a medium frypan heat the olive oil over medium heat.
  • Add in onion and garlic; cook until softened.
  • Add in oregano, 1 teaspoon salt or seasoning salt and pepper; cook for 1 minute.
  • Increase heat to high and add in the chopped tomatoes; cook until thickened (about 10-12 minutes) then remove from heat, add/mix in basil (if you are using dry basil add in with the oregano),.
  • Set oven to broil and broil the eggplant slices one pan at a time for 3-5 minutes (per side) until brown.
  • Set oven to 400 degrees.
  • Layer the eggplant slices in a greased 1-1/2 - 2-quart baking dish.
  • Top with the tomato/onion mixture.
  • Then top the slices with mozzarella cheese and remaining 1/3 cup Parmesan cheese.
  • Bake uncovered until cheese is bubbly, about 15 minutes.
  • Delicious!

There was once a cafeteria in Texas called Wyatts Cafeteria. DH's family would go there after church on Sunday and his mother would get baked eggplant. For years she tried to copy the recipe and came very close. The original recipe was published in the local paper several years ago. Hope you enjoy it as much as we do.

1 lb eggplant, peeled and cut into 1 inch cubes
1/2 lb dried breadcrumbs (I use as did my mother-in-law a herbed stuffing mix)
1/2 cup canned evaporated milk
1/4 cup whole milk
1/4 cup butter, melted
1/4 cup finely chopped onion
1/4 cup finely chopped green pepper
1/4 cup finely chopped celery
2 eggs, slightly beaten
1 tablespoon chopped pimiento
2 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon dried sage
1 1/2 cups cheddar cheese, grated

Steps:

  • Soak the eggplant cubes in salt water in refrigerator overnight or a minimum of six hours.
  • Drain and place in medium saucepan.
  • Cover with water and simmer until tender.
  • Soak the bread crumbs in milk.
  • Saute the onions, green peppers, and celery in melted butter for about 15 minutes or until tender.
  • Combine the cooked eggplant, bread crumbs and sauteed vegetables.
  • Add the eggs, pimiento, and seasonings; mix thoroughly.
  • Place the mixture into a 2 quart baking dish that has been sprayed with non-stick cooking spray, cover and bake at 350 degrees for 30 to 40 minutes.
  • Remove cover, top with grated cheese and return to oven last 5 minutes of cooking.
  • The preparation time includes the soaking time for the eggplant.

1 eggplant, sliced into 1/2-inch-thick rounds
3 tomatoes, sliced
1 tablespoon extra virgin olive oil
1 teaspoon oregano
⅓ cup grated Parmesan cheese
salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a baking dish with non-stick play.
  • Arrange eggplant and tomato slices into the bottom of the prepared baking dish. Drizzle olive oil over the vegetables; season with oregano, salt, and pepper. Sprinkle Parmesan cheese over the entire mixture.
  • Bake in preheated oven until the cheese is beginning to brown, about 30 minutes. Switch oven broiler to high; continue baking until completely browned, about 5 minutes.

1 medium eggplant (1 pound), peeled and cut into 1/2-inch slices
Salt to taste
1 large tomato, sliced
1 medium onion, sliced
6 tablespoons butter, melted, divided
1/2 teaspoon dried basil
1/2 cup dry bread crumbs
4 slices mozzarella cheese, cut into thirds
2 tablespoons grated Parmesan cheese

Steps:

  • Place eggplant slices in a colander over a plate; sprinkle with salt and toss. Let stand 30 minutes. Rinse and drain well. , Preheat oven to 450°. Layer eggplant, tomato and onion in a lightly greased 13x9-in. baking dish. Drizzle with 4 tablespoons butter; sprinkle with basil. Cover and bake 20 minutes. , Toss bread crumbs and remaining butter. Arrange mozzarella cheese over vegetables; sprinkle with crumb mixture and Parmesan cheese.
