CANADIAN BACON, EGG AND CHEESE SLIDERS



Canadian Bacon, Egg and Cheese Sliders image

Cooking spray
6 large eggs
1/3 cup half-and-half
Kosher salt
6 slices Canadian bacon
2 tablespoons unsalted butter, at room temperature
12 slider or sweet Hawaiian rolls, split
3 slices cheddar cheese, each cut into 4 squares
Strawberries and grapes, for serving

Steps:

  • Preheat the oven to 350˚ F. Lightly coat an 8-inch square baking dish with cooking spray. Whisk the eggs, half-and-half and 1/2 teaspoon salt in a medium bowl. Pour into the pan and bake until puffed and set, 16 to 18 minutes. Let cool slightly.
  • Meanwhile, heat a large skillet over medium heat and coat with cooking spray. Add the Canadian bacon and cook, flipping, until browned, about 1 minute per side. Remove to a cutting board and cut each slice into 4 pieces.
  • Spread the butter on the cut sides of the rolls. Slice the baked eggs into 12 small pieces and lift out of the pan with a spatula; place one on each roll bottom. Top each with a piece of cheese, 2 pieces Canadian bacon and the roll tops. Thread strawberries and grapes onto skewers and serve with the sliders.

3 tablespoons unsalted butter, plus more to butter ramekins
2 tablespoons minced yellow onion
Salt and freshly ground black pepper
6 ounces baby spinach
4 slices Canadian bacon
4 large eggs
1/4 cup heavy cream
1 ounce grated aged Cheddar, plus extra for serving
Sourdough bread

Steps:

  • Heat oven to 350 degrees F and arrange rack in middle. Butter 4 (6-ounce) ramekins and set aside.
  • Melt 1 tablespoon butter in a large frying pan over medium heat. When it foams, add onion, season well with salt and freshly ground black pepper, and cook until softened, about 1 minute. Add spinach and cook until spinach is well wilted, about 2 minutes.
  • Place ham on bottom of ramekins and top with spinach. Crack eggs into ramekins, place 1 tablespoon cream over each egg, and divide half of cheese evenly among ramekins.
  • Put ramekins on a baking sheet and bake, rotating pan halfway through baking, until whites are just set but yolks are still runny, about 15 to 18 minutes.
  • Meanwhile, spread remaining 2 tablespoons butter on 4 slices sourdough bread. Top with grated cheese and toast until golden brown. Serve eggs with toast.

4 slices applewood-smoked bacon
6 large eggs
2 tablespoons sour cream or heavy cream
8 slices cheddar cheese (about 6 ounces)
8 thick slices sourdough bread
2 tablespoons unsalted butter

Steps:

  • Cook the bacon on a griddle (or in a large skillet) over medium heat, turning occasionally, until crisp, 8 to 10 minutes.
  • Meanwhile, whisk the eggs and sour cream in a medium bowl. Remove the bacon from the griddle and drain on paper towels; pour the fat into a small bowl and set aside.
  • Add the egg mixture to the griddle and cook, stirring with a rubber spatula, until just set. Layer 1 slice of cheddar, some scrambled eggs, a piece of bacon and another slice of cheddar on each of 4 slices of bread. Top with the remaining bread.
  • Return the bacon fat to the griddle; add the butter and let melt over medium heat. Place the sandwiches on the griddle, cover and cook until the bread is golden brown and the cheese melts, about 4 minutes per side.

QUICK sandwich for breakfast, lunch or a Sunday night dinner. Lots of protein and packed full of flavor!!! Add some fruit with this sammie for a good meal. I buy the Hormel 6 ounce package of Canadian bacon--it's already fully cooked!! Great for a busy day or lazy days when you don't want to heat up the kitchen!

1 English muffin, split in half
2 slices Canadian bacon, heated
1 egg (fried or scrambled)
1 slice cheddar cheese
1 tablespoon butter

Steps:

  • Toast and butter English muffin halves.
  • Arrange on half of muffin the bacon, egg and cheese. (To melt cheese: place on egg in skillet one minute before removing egg from skillet OR place in toaster-oven for one minute.).
  • Top with remaining muffin half.
  • Enjoy!
