"This is an old recipe handed down from my mother-in-law and is an especially good accompaniment to roast beef," Nancy Collins relates from Clearfield, Pennsylvania. The corn is moist and creamy with a souffle-like topping.

- In a small bowl, combine the corn, saltines, butter, salt and pepper. Transfer to a shallow 2-cup baking dish coated with cooking spray. , In a small bowl, whisk egg and milk; pour over corn mixture. Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium size bowl, cream together butter and cream cheese. Mix in whole kernel corn, cream-style corn, chiles, chopped onions, and 1/2 can of the French-fried onions. Pour mixture into a 1 quart casserole dish.
- Bake in a 350 degrees F (175 degrees C) oven for 15 minutes. Remove from oven and sprinkle the remaining French-fried onions over the top of the casserole. Return to the oven and bake an additional 15 minutes.

this is a must at you holiday table! ---adjust the amount of sugar to suit taste, canned corn amount equivilent to the two packages of frozen corn may be used, make certain to thaw the frozen corn firstly --- this is rich so a small serving goes a long way! :)

Steps:
- Set oven to 350 degrees F.
- Grease a 13 x 9-inch baking dish.
- In a large saucepan melt butter over low heat.
- Add in whipping cream and sugar; stir until dissolved and blended.
- Mix in the corn and stir to coat, then stir in the cream cheese and cook stirring over low heat until melted and well blended.
- Season with white or black pepper to taste if desired.
- Transfer to prepared baking dish.
- Sprinkle the crushed butter crackers over the top then dot with butter.
- Bake for about 20-30 minutes or until lightly browned.

- Preheat oven to 400°F and place oven rack in the middle of the oven. Lightly spray a 2-quart baking dish. In a large saucepan placed over medium heat add in the cream, 1/4 cup milk, sugar, and butter. Bring to a boil. While the cream mixture is heating up make a slurry of the flour and remaining 1/4 cup milk by whisking them together until well combined. Then, in a separate bowl whisk together the eggs until well beaten. Once the milk comes to a boil, add in the flour slurry and whisk until thickened slightly, about 30 seconds to a minute. Remove from the heat and add in the corn and salt, and mix to combine. Slowly add in the eggs while mixing the entire time, you do not want the eggs to curdle. Pour the mixture into the prepared baking dish. Bake for 30 minutes or until the top is puffy and golden brown. Add the Asiago cheese to the top for the last 10 minutes of baking. Remove from the oven and allow to cool for 10 to 15 minutes before serving so it can firm up and set.
BAKED CREAMY CORN
This is a recipe given to me by my dad who got it from some guy he worked with that always brought it to work at the foundry. The guy asked his wife for it and gave it to my dad so my mom would make it. I always picked out the hot peppers- otherwise I liked it.

- 1. Heat oven to 350^. Combine corn, cheese, and butter in a medium saucepan. Heat over medium heat until cream cheese is melted and smooth. Stir in garlic and chilies. Pour mixture into a 2 -quart buttered baking dish and bake for about 30 minutes or until bubbly. Serve warm or cold.

- Set oven to 350 degrees F.
- Butter a 2-quart casserole dish.
- In a large skillet melt butter over medium heat.
- Add in chopped onion and bell peppers; saute until tender (about 3-4 minutes).
- Stir in flour and mix/whisk for 1 minute.
- Add in half and half cream; cook stirring/whisking constantly until thickened and smooth.
- Remove from heat then add in the shredded cheddar cheese and Parmesan cheese (if using) mix until all the cheese has melted.
- Whisk in eggs then add in the corn, salt and pepper; mix to combine.
- Transfer into prepared dish then top with bread crumbs.
- Bake for 40-45 minutes.
- Serve immediately.
