Cornish game hens stuffed with a vegetable mixture, then roasted. A Cornish game hen recipe that I found and tweaked a bit for the taste and size of our small family, but it would be very easy to adjust it to fit your needs. It goes well with oven-roasted potatoes.

2 Cornish game hens
½ cup melted butter
½ onion, chopped
½ stalk celery, chopped
¼ green bell pepper, chopped
1 (4.5 ounce) can mushrooms, drained and chopped
2 cloves garlic, minced
1 tablespoon dried basil
1 teaspoon dried oregano
1 tablespoon chopped fresh parsley
¼ cup melted butter

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a small bowl combine the 1/2 cup melted butter, onion, celery, bell pepper, mushrooms, garlic, basil, oregano and parsley.
  • Season hens inside and out with salt and pepper to taste, then stuff with equal amounts butter/vegetable mixture. Place stuffed birds in a 9x13 inch baking dish, breast side up. Drizzle with 1/4 cup melted butter.
  • Cover dish and bake in the preheated oven for 1 1/2 hours. Remove cover and brown at 500 degrees F (260 degrees C).

2/3 cup uncooked wild rice
1/4 cup chopped onion

Steps:

  • In a small saucepan, bring broth and rice to a boil. Reduce heat; cover and simmer for 60-70 minutes or until rice is tender and liquid is absorbed. , Meanwhile, in a nonstick skillet, saute onion and celery in oil until tender. Add garlic; cook 1 minute longer. Stir in the apricots, almonds, 1/3 cup apricot nectar, 1/4 cup wine, 1/4 teaspoon salt, poultry seasoning and 1/8 teaspoon pepper. Stir into cooked rice. , Spoon mixture into four mounds in a shallow roasting pan coated with cooking spray; top each with a Cornish hen half. Cover and bake at 375° for 45 minutes. Uncover; bake 15-20 minutes longer or until a thermometer reads 180°. , In a large saucepan, combine remaining nectar and wine. Bring to a boil; cook for 5-7 minutes or until reduced to 1/2 cup. The mustard in this dish surprises people. Combined with the citrus, it provides a real double "zing". You can also vary the ingredients, if you like. As an example, I've found the hens are tasty with orange marmalade. My husband's a grade school principal, and we have a 14-year-old daughter and a 12-year-old son-resulting in a lot of schedules to juggle in our house. Sometimes, I'll cut the hens in half and have supper ready in 45 minutes.

SAUCE:
1/4 cup apricot preserves
2 tablespoons grated onion
1 tablespoon butter

3 1 1/4 - 1 1/2 pounds Cornish game hens,
2 tablespoons peanut oil or cooking oil
Salt and black pepper
2 tablespoons honey
2 tablespoons Grand Marnier 1/2 cup finely chopped toasted walnuts
Finely shredded orange peel

Steps:

  • 1. Twist wing tips of Cornish game hens under backs. Place hens in a shallow roasting pan. Combine the oil, the salt, and the black pepper. Brush mixture over Cornish hens. 2. Cover and bake prepared Cornish hens in a 375 degree oven for 35 minutes. For glaze: 3. In a small saucepan, cook honey over medium heat until bubbly. Remove from heat. Stir in the Grand Marnier 4. Uncover hens. Brush glaze evenly over the hens. Sprinkle with walnuts. Bake, uncovered, for about 25 minutes more or until hens are tender and no longer pink. Goes well with Wild Rice Dressing.   • Preheat oven to 350'F Rinse and pat the hens dry with paper towels.

I found a really good buy on Cornish Hens awhile back and was looking for a simple way of preparing them. Well, hubby and I were watching Americas Test Kitchen Sat night, low and behold they were showing how to render a hen crispy on the outside,yet tender on the inside. So, I decide we'd try it. They were definitely a big hit. I didn't leave the salt mixture on as long as they called for, but still turned out awesome. We will definitely make them this way again and soon!

4 - cornish hens, cleaned
2 tablespoon(s) kosher salt - no substitute - divided
1/2 tablespoon(s) vegetable oil
1 teaspoon(s) baking powder
Black - pepper
Cooking - spray

Steps:

  • With a pair of sharp kitchen shears, cut down along both sides of the hens backbone to remove. Place the hens breast side up on cutting board and with a sharp knife cut each hen in half through the breast bone. Loosen the skin on each hen, by running your fingers underneath. ( thigh and breast ) Tuck wings under bird.
  • With a sharp thin knife, poke the fat of the bird several times. Pat the birds dry with a paper towel. Sprinkle the underside of each bird with 1 tablespoon of the kosher salt.
  • Add remainder of salt to a small bowl, to this mix with oil. Stir in the baking powder. Rub this mixture on the breast and thigh meat evenly of each halve. Sprinkle with pepper. Place each halve on a single layer of a platter or sheet pan, uncovered. Refrigerate up to 4 hours, but 24 hours is better.
  • Remove from fridge. Preheat oven to 500 degree F. Place a sheet pan with edges into oven to preheat. This step is to sear the fat without frying..I left mine in for at least 20 minutes. Spray each hen piece with cooking spray. Then place each piece of hen skin side down in single row onto hot sheet pan. You should hear it sizzling. Place back into oven on lowest rack for 10 minutes.
  • Next preheat broiler and finish cooking until temp reaches 160 for breast and 175 for thigh and legs, turning pan every so often to brown evenly. I broiled about 15 minutes and they were cooked perfectly. The steps seem like a lot, but are really actually easy and quick. Enjoy!
