1-1/2 cups cubed cooked chicken breast
1-1/2 cups picante sauce, divided
1/2 cup shredded reduced-fat cheddar cheese
2/3 cup chopped green onions, divided
1 teaspoon ground cumin
1 teaspoon dried oregano
6 flour tortillas (8 inches), warmed
1 tablespoon butter, melted
Sour cream, optional

Steps:

  • Preheat oven to 375°. In a small bowl, combine chicken, 3/4 cup picante sauce, cheese, 1/4 cup onions, cumin and oregano. Spoon 1/2 cup mixture down the center of each tortilla. Fold sides and ends over filling and roll up. Place seam side down in a 15x10x1-in. baking pan coated with cooking spray. Brush with butter. , Bake, uncovered, until heated through, 20-25 minutes. If desired, broil until browned, 1 minute. Top with remaining picante sauce and onions. If desired, serve with sour cream., Freeze option: Cool baked chimichangas; wrap and freeze for up to 3 months. Place chimichangas on a baking sheet coated with cooking spray. Preheat oven to 400°. Bake until heated through, 10-15 minutes.

1 cup salsa
1 small onion, chopped
3/4 teaspoon ground cumin

2 teaspoon chicken bouillon granules

Steps:

  • Preheat oven to 425°. 2 (4 ounce) cans diced green chiles (drained)
5 pitted green olives
1 jalapeno pepper (seeded and diced)
2 Tablespoons fresh lime juice
1 (8 ounce) package cream cheese
1 (8 ounce) package shredded Monterey Jack cheese
1 (1 ounce) package taco seasoning mix (just use half)
3 boneless skinless chicken breasts (cooked and shredded)
8 (10 inch) flour tortillas
1/4 cup olive oil
1 cup shredded cheddar cheese (for topping)
1/2 cup sour cream (for topping)
6 green onions (sliced)

Steps:

  • Preheat oven to 350 degrees F.
  • Pour cream of chicken soup into a blender along with the green chiles, olives, jalapeno, and lime juice.
  • Puree until smooth, then pour into a saucepan, and warm over medium-low heat while proceeding with the recipe.
  • In a large bowl, stir together cream cheese, Monterey Jack cheese, and half of the taco seasoning packet until well blended.
  • Fold in the chicken and mix until well combined.

1 (4 ounce) can black olives, sliced, drained
1 (7 ounce) can green chilies (jalapeno or ortega)

1 cup salsa, chunky, mild
6 flour tortillas
1 cup salsa, chunky, mild
1 cup sour cream
3 green onions, sliced

Steps:

  • Preheat oven to 425 degrees F, then lightly oil a 15" baking SHEET.
  • FOR THE FILLING, in large bowl, combine beans, olives, green chilies, slaw mix, cheese & 1 cup salsa, & mix well.
  • Wrap tortillas in cloth towel & microwave on HIGH 1 1/2 minutes.
  • Divide filling evenly among the 6 tortillas, spooning it onto each tortilla in a narrow band just off center & with each end of the narrow band of filling ending about 1 1/2 inches from the edge of the tortilla.
  • Roll tortilla over filling, then fold ends over, tucking them under the roll, if necessary securing each end with wooden picks.
  • Spray each tortilla lightly with PAM, then place each tortilla seam side down on baking sheet.

1 boneless pork loin roast (3 pounds)
3 cans (4 ounces each) chopped green chiles

4 cups shredded reduced-fat cheddar cheese
2 cups picante sauce
1 large egg white
2 teaspoons water

Steps:

  • Place beans in a stockpot; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse beans, discarding liquid., Preheat oven to 350°. Place roast in a Dutch oven. In a large bowl, combine the chiles, onion, chili powder and beans. Spoon over roast. Perfect for a crowd! We just loved this baked take on our Mexican restaurant faves. The meat is fall-apart tender. Mixing chilis and cilantro with the meat adds a lot of flavor. Brushing the chimichangas with a bit of oil makes the tortillas very crispy out of the oven. It's the taste of being fried, but it's baked with fewer...

2 lb beef roast
2 pkg fajita seasoning
2 Tbsp garlic, diced
1 large onion
1 can(s) diced green chilis
1/4 c cilantro, fresh
1 can(s) refried beans
1 pkg Colby Jack cheese
2 pkg soft taco shells (10 count)
sour cream, for garnish
vegetable oil or cooking spray

Steps:

  • 1. Heat skillet on stovetop on high heat with a drizzle of olive oil.
  • 2. Place roast in pan.
  • 3. Sear on both sides.
  • 4. Place in slow cooker on high heat.
  • 5. Slice onion and place on top of roast with garlic, the two packets of fajita seasoning and 1/2 cup water. Let cook for 4 hours or until you can shred the beef with a fork.
  • 6. At that point, shred the beef. I find using two forks work the best.
  • 7. Add the green chili and the chopped cilantro to a bowl.
  • 8. Mix together with the beef.
  • 9. Preheat oven to 400. Heat refried beans on the stove until they are heated and creamy and easily spreadable.
  • 10. Warm soft taco shells in the microwave (about 30 sec, just until warm so the can be rolled).
  • 11. Spray baking sheets with cooking spray.
  • 12. Assemble chimis by spreading beans, cheese, beef mixture on tortilla shells then fold.
  • 13. I fold them by folding the shell by a third.
  • 14. Tuck in the sides.
  • 15. Then folding them the rest of the way over. Eyeball how much of each to put on one shell, depending on how big your shells are.
  • 16. Place on baking sheet seam side down. Using a pastry brush, brush the finished chimis with vegetable oil if you are using that or spray them with cooking spray if that is what you are using.
  • 17. Place them in oven for about 15 minutes. Keep an eye on the bottom of the chimis. You don't want them to burn (depends on what kind of baking sheet you are using).
  • 18. Take the chimis out of oven. Turn on the oven broiler. Top chimis with cheese.
  • 19. Place them under the broiler for 2-5 minutes until cheese is bubbly. (Keep a close watch!! You don't want them to burn!)

1 lb ground chuck
1 cup chopped onion
1 (4 ounce) can chopped green chilies
1 (8 ounce) can tomato sauce
1/2 cup water
1 (1 1/4 ounce) package taco seasoning
1 (15 ounce) can refried beans
8 burrito-size flour tortillas
1 (8 ounce) package shredded Mexican blend cheese
1 (16 ounce) jar salsa, divided
1 tablespoon vegetable oil (I used vegetable spray instead)

Steps:

  • 1. In large skillet, brown ground beef and onions until beef is no longer pink. Drain well.
  • 2. Stir in green chiles, tomato sauce, water, and taco seasoning packet. (If you are using your own taco seasoning, you probably won't need quite as much water. I used about 1/3 cup). Bring to a boil, then turn down heat and simmer for about 8 minutes, or until thickened. Stir in refried beans.
  • 3. Preheat oven to 450 degrees. Line a rimmed baking pan with parchment paper or foil (spray foil with non stick spray). Spoon about 1/3 cup meat mixture onto tortilla. Top with 3 tablespoons of shredded cheese (it is slightly possible that I may have used more than that!), and 1 tablespoon of salsa verde. You could use red salsa here, whatever you prefer. Fold up the four sides of the tortilla (see pictures), and place seam side down on prepared baking sheet. Brush chimichangas lightly and evenly with oil (or spray them with canola cooking spray).
  • 4. Bake for 15 to 20 minutes or until golden brown. Serve with your favorite toppings!

1 1/2 lbs steak (a lean cut)
2 tablespoons cumin seeds
6 inches cinnamon sticks, broken into thirds
1 knorr beef bouillon cube
1/2 onion, chopped
2 garlic cloves
1 tablespoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cayenne pepper (or more)
1/4 cup salsa
1 (4 ounce) can chopped green chilies
1 cup colby-monterey jack cheese, grated
6 (10 inch) flour tortillas
nonstick cooking spray
shredded lettuce
chopped tomato
sour cream
guacamole

Steps:

  • Put the steak, cumin seeds, cinnamon stick, and bullion in a saucepan and cover with water.
  • Bring to a boil and allow to simmer until the meat shreds easily with a fork.
  • (this takes longer with tough cuts of meat) Remove meat from liquid, shred and put aside.
  • Strain liquid and set aside.
  • Spray a large skillet with non-stick spray and add onions and garlic.
  • Cook until the onions are translucent.
  • Add chili powder, cumin, cinnamon, and cayenne and mix in well.
  • Add salsa, chilies, and shredded meat and combine.
  • Measure 1/2 cup of the meat cooking liquid and add to the mixture-- allow to simmer until the liquid is almost all absorbed.
  • Spray a 13x9-inch glass baking dish with non-stick spray--give it a fairly heavy coating of spray.
  • Preheat oven to 450°F.
  • Warm your tortillas.
  • Lay out one tortilla put 1/6 of the mixture in the center and fold up the bottom end.
  • Top with 1/6 of the shredded cheese.
  • Fold the right side and then the left and roll up the chimichanga.
  • Put seam side down in the glass dish-- fold remaining 5 chimichangas.
  • Coat all the chimichangas with a very liberal coating of spray, and put dish into oven.
  • Bake for 10 minutes and then carefully turn the chimichangas, spray again, and return the dish to the oven.
  • After 5 more minutes turn the chimichangas once more, give them a good spray and return to the oven for 5 more minutes.
  • When the chimichangas are crisp and golden brown they are ready for eating.
  • Put them on plates and top with lettuce, tomato, beans, sour cream, guacamole, or salsa.

1 cup tomato sauce
3 scallions, chopped
Salt and pepper
4 (12-inch) flour tortillas
1 1/2 cups, 6 ounces, shredded sharp cheddar, smoked white cheddar or Pepper Jack cheese
2 tablespoons vegetable or olive oil
1 cup sour cream
2 tablespoons chopped cilantro leaves or flat-leaf parsley
1 vine ripe orange or yellow tomato, seeded and finely chopped

Steps:

  • Preheat your toaster oven to 400 degrees F or high.
  • Place turkey in a bowl and season with chili powder. Add shredded cabbage, chipotles in adobo, tomato sauce, scallions. Toss filling to combine and season with salt and pepper. 6 tablespoons melted butter
2 lbs lean ground beef
1/4 cup distilled white vinegar
1 (4 ounce) can diced green chilies

1/2 teaspoon crushed red pepper flakes (more or less to taste)
1/2 teaspoon salt (more or less to taste)

  • Wrap tortillas in foil and warm in a 300* oven while making the filling.
  • Brown ground beef and drain.
  • Mix in vinegar and seasonings to the drained meat, but do not cook the mixture further.

  • Brush each side of tortilla with melted butter.
  • Spoon about 1/4 cup ground beef filling onto center of each buttered tortilla.

These are a deliciously healthy, filling meal, and good for both everyday eating and when your vegetarian guests come over for dinner! My non-vegetarian husband doesn't even miss the meat when I fix these. This is a *big* batch, so plan on leftovers. :) Good for picnics & potlucks, too... see note below.

1 cup chopped onion
6 garlic cloves, minced
1 cup roughly-chopped mushroom (optional)
2 teaspoons olive oil
1 (7 ounce) can chopped green chilies
1 (16 ounce) can vegetarian refried beans
1 1/2 cups of your favorite salsa
2 cups cooked brown rice
1 (16 ounce) can regular black beans
1 (16 ounce) can black soybeans
1 ripe avocado, pitted, peeled, and cubed (optional)
1/2 teaspoon salt, to taste
1 -2 teaspoon chili powder, to taste
2 teaspoons powdered cumin
3 tablespoons sour cream (or non-dairy equivalent)
1 1/2 cups grated cheddar cheese or 1 1/2 cups soy cheese
grated cheddar cheese (to garnish) or soy cheese (to garnish)
flour tortilla (large burrito size)

Steps:

  • Sauté the chopped onion, garlic, and mushrooms (if using) in olive oil until onion is soft.
  • Add the chopped chilies, flatten mixture in bottom of pan and sauté, not stirring, until the onions begin to caramelize a little, then remove from heat.
  • In a large bowl, mix remaining ingredients except tortillas.
  • To put together the chimichangas, place about 3/4 to 1 cup of filling on a tortilla, fold the bottom over the filling, fold the sides in, then carefully fold/flip it over to close; repeat until you have as many chimichangas as you want to bake at one time.
  • Place the chimichangas on a cookie sheet, brush each one with 1/2 teaspoon of olive oil, and bake at 400 degrees F for 15 minutes.
  • Sprinkle each with grated cheddar, serve with extra sour cream, guacamole, and salsa, and enjoy!
  • Makes 8 to 10 large chimichangas, depending on the amount of filling you put in each.
  • (Black soybeans are good for those eating low carb because they are lower in carbohydrates and high in fiber. Information on black soybeans available at the Eden Foods website.).
  • Note: To make these for a picnic or potluck, instead of baking them as I would at home, I make the filling and put it in a container, then bring tortillas and toppings and set them all out so folks can make their own sort of burritos. It's very popular! :).

6 gala apples, peeled, cored, and roughly chopped
2 tablespoons butter
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1 teaspoon fresh lime juice
1 teaspoon unflavored cornstarch
1 tablespoon water
10-12 (6 inch) flour tortillas
1/2 cup powdered sugar
1 tablespoon milk

Steps:

  • Melt butter in a large skillet over medium heat. Add the apples, sugar, and cinnamon to the skillet; mix to combine. Stir in lime juice. Cover and let cook over medium-low heat, stirring occasionally, until apples are fully cooked. In a small bowl, combine the water and cornstarch. Pour into the apple mixture and let cook for about a minute or until the juice from the apples has thickened slightly. Remove from heat and let cool to room temperature. Preheat oven to 350 degrees. Heat the flour tortillas in skillet over medium heat until soft and pliable. Spoon 2 tablespoons of apple filling into center of each tortilla. Fold in the sides to seal in the filling, and roll up the tortilla like your would a burrito. Place seam side down on a lightly greased baking sheet. With the tip of a very sharp knife, carefully cut 2-3 diagonal slits on top of each chimichanga. Bake at 350 degrees for 12-15 minutes or until light golden brown and crisp to the touch. Stir together 1/2 cup powdered sugar with tablespoon of milk, until well combined. If too thick add a little more milk until desired consistency. Drizzle the glaze over the chimichangas.

2 bone-in chicken breasts
3 c water
1 Tbsp chili powder
1/2 tsp salt
1/2 tsp cumin
1/4 tsp pepper
1/4 tsp garlic powder
1/4 tsp onion powder
1/8 tsp cayenne pepper
7 oz canned green chillies
1/2 c onion, minced
3 clove garlic, minced
2 Tbsp butter
2 Tbsp all-purpose flour
1 c chicken broth
1/2 c sour cream
salt & pepper, to taste
8-10 8-10" flour tortillas
8 oz shredded Monterey Jack cheese

Steps:

  • 1. Bring water to a boil. Once boiling, add the chicken. Simmer until chicken is cooked (about 20-25 min). Make sure to rotate the chicken occasionally to ensure even cooking.
  • 2. Season with chili powder, salt, cumin, black pepper, garlic powder, onion powder, and cayenne pepper for about 15 minutes.
  • 3. Stir in half of the green chilies, onion, & garlic.
  • 4. Continue simmering until the liquid has reduced to 1 cup.
  • 5. Remove the chicken and shred.
  • 6. Return to the onion mixture.
  • 7. Meanwhile, melt the butter in a small saucepan over medium heat.
  • 8. Stir in the flour and cook for 1 minute.
  • 9. Whisk in the broth and simmer for a few minutes.
  • 10. Whisk in the other half of green chilies and the sour cream. Season to taste with salt & pepper.
  • 11. Spoon about 1/3 cup of the chicken filling onto each tortilla.
  • 12. Sprinkle on some cheese.
  • 13. Fold tightly into a burrito and place on a greased baking sheet or dish.
  • 14. Repeat with the remaining ingredients.
  • 15. Brush burritos all over with oil.
  • 16. Bake at 350 degrees until slightly golden (about 20-25 minutes depending on how crispy you want them).
  • 17. Serve with sour cream sauce. The sauce can be drizzled over it or used for dipping.

This is a wonderful recipe that allows me to get my chimichanga fix without all the fat of a deep fried restaurant chimichanga. I team it up with a salad and some rice for a delicious, speedy go-to meal that's fit for company.

1 lb extra lean ground beef
2 cups salsa
1 (15 ounce) can black beans, rinsed
2 cups low fat shredded cheddar cheese
10 (8 inch) flour tortillas

Steps:

  • Preheat oven to 425.
  • In large skillet, brown and crumble ground beef till no longer pink.
  • Drain off any fat.
  • Add the salsa, black beans and cheese to the meat.
  • Over low heat, heat meat mixture through till cheese is melted.
  • Divide meat mixture evenly between the tortillas.
  • Roll each tortilla up, tucking in ends so the meat mixture is completely enclosed.
  • Place on baking sheet and lightly spray the top of each chimichanga with cooking spray.
  • Bake for 20 minutes or until chimichangas are nicely golden and crispy.

1/2 lb uncooked ground turkey breast
16 ounces canned fat-free refried beans
1 3/4 cups salsa
4 1/2 ounces canned green chili peppers, mild, drained and diced
1 teaspoon chili powder
3 tablespoons scallions, thinly sliced
1 cup shredded reduced-fat monterey jack cheese
8 large burrito-size wheat flour tortillas
1 cup salsa
1/2 cup nonfat sour cream

Steps:

  • Preheat oven to 350ºF. Coat a large skillet with cooking spray. Coat a 13 X 9 X 2-inch baking dish with cooking spray.
