Baked Chicken Thighs with Tomatoes and Garlic image

A simple recipe for one-skillet baked chicken with tomatoes, garlic, and fresh herbs. Chicken thighs are seared until crispy and golden in a cast iron skillet, and then baked with tomatoes and garlic. Recipe updated 8/27/19.

2 tablespoons extra virgin olive oil
1 teaspoon sea salt, (plus more for sprinkling)
1 pound bone-in chicken thighs
4 large cloves hardneck garlic, (smashed, peeled, and chopped)
1/2 teaspoon fresh ground pepper
4 cups quartered fresh tomatoes, ((if using cherry tomatoes, halve them))
3 - 4 large kale leaves, (cut into thin ribbons)
2 tablespoons fresh herbs ((basil, thyme, or oregano))

Steps:

  • Preheat oven to 375 degrees. Rub 1 teaspoon sea salt all over the chicken.
  • Heat a large cast iron skillet over medium/medium-high heat. Add olive oil, and once it's hot, add chicken skin-side down. Sear 3 - 4 minutes or until skin is deep golden. Flip, and sear 3 minutes more. Add garlic when there's 1 minute of cook time left. Remove from heat.
  • In the same skillet, carefully arrange kale ribbons around pan, tucking them under the chicken, and then tuck tomatoes all over so they surround the chicken thighs. Sprinkle generously with sea salt and 1/2 teaspoon pepper. Bake 30 - 40 minutes, until the chicken reaches an internal temperature of 165 degrees F and the tomatoes are bubbling and jammy. Remove from oven and sprinkle chicken with fresh herbs.
  • Place a generous dollop of buttery grits in a bowl, spoon chicken and tomatoes, and finish with several spoonfuls sauce and an herb sprig.

3 lbs boneless skinless chicken breast (4 regular breasts or 3 large breasts cut in half lengthwise)
2 tablespoons olive oil
1 tablespoon balsamic vinegar
2 teaspoons garlic powder
1 teaspoon Italian seasoning
1 teaspoon red pepper flakes (optional)
24 oz cherry tomatoes
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 tablespoons chopped fresh basil
1 tablespoon honey
1 teaspoon garlic powder
1 teaspoon fresh thyme leaves
2 cups shredded mozzarella cheese
4-5 fresh thyme sprigs
2-3 tablespoons chopped fresh basil
salt and pepper (to taste)

Steps:

  • In a large bowl or ziploc bag, mix the chicken and chicken ingredients together to marinate in the refrigerator for at least 30 minutes (or overnight, if preparing ahead).
  • Preheat your oven to 425 degrees.
  • Pour 2 tablespoons of olive oil into the bottom of a 9x13 baking dish. Place the cherry tomato ingredients into the bottom of your dish and toss to combine. Lay the chicken across the bed of tomatoes. ).
  • Top the chicken with the shredded mozzarella cheese and season with salt and pepper to your liking.
  • Place the thyme sprigs on top of the cheese and bake in the oven for 35-38 minutes (or until the internal temperature of your chicken reaches 165 degrees.
  • Once the chicken is cooked through, remove from the oven and top with fresh sliced basil before serving. Enjoy!

6 chicken thighs
salt and ground black pepper to taste
1 yellow onion, diced
¼ cup chopped fresh basil, or to taste
3 cloves garlic, sliced
2 teaspoons finely chopped fresh rosemary
1 ½ cups chicken broth
3 cups diced carrots

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Arrange chicken thighs in a roasting pan; season with salt and pepper. Scatter onion over and around chicken. Top chicken with basil, garlic, and rosemary. Pour chicken broth into pan and evenly distribute carrots around the chicken. Cover pan with aluminum foil.

10 - 12 chicken thighs - with skin and bone
for the tomato and basil topping:
1 cup of fresh basil - chopped
1 bulb of fresh garlic - chopped
2 large plum tomatoes - diced (not too small)
1 tablespoon of lemon juice
½ tsp. salt
½ tsp. black pepper
2 tablespoons of grated parmesan cheese
3 tablespoons olive oil
rub:
¾ tsp. salt
¾ tsp. black pepper
1 tsp. paprika
1 tsp. dried oregano
1 tsp. brown sugar

Steps:

  • 1. Preheat Oven 350 degrees: Clean and pat dry the chicken thighs. Combine in a bowl all of the ingredients for the tomato and basil topping and set aside. Combine in a small bowl the rub and set aside. Place the chicken in a baking pan and rub the rub on each thigh. Top with the tomato and basil topping and place in the oven. Bake 50-55 minutes or until juices run clear.

Steps:

  • Preheat oven to 400°F (200°C).
  • On a parchment-lined baking sheet, season both sides of the chicken with olive oil, salt, pepper, garlic powder, and oregano.
  • Bake for 30 minutes, or until cooked through and juices run clear.
  • While the chicken is in the oven, combine the balsamic vinegar and honey in a sauce pot and simmer, stirring occasionally.
