1/2 teaspoon kosher salt
1/4 teaspoon coarse ground black pepper
1/2 cup Parmesan cheese (, grated)

Steps:

  • Preheat oven to 350 degrees and spray a 9x13 baking dish with cooking spray.
  • Mix the mayonnaise, cream cheese, garlic, Parmesan cheese, artichoke hearts, and spinach.
  • Season chicken with salt and pepper and place into the baking dish.
  • Spread the spinach artichoke mixture over the top of the chicken breasts.

1 tablespoon butter
2 tablespoons extra virgin olive oil
4 to 6 chicken pieces ((thighs, chicken breast, legs, etc...))
salt and fresh ground pepper (, to taste)
1 can ((14-ounces) quartered artichokes, rinsed and drained)
1 yellow onion (, thinly sliced)
1 red onion (, thinly sliced)
1 large carrot (, sliced into thin rounds)
2 garlic cloves (, finely chopped, divided)
1 bag ((6 to 8 ounces) baby spinach)
1/2 cup vegetable broth

Steps:

  • Preheat oven to 425. Heat butter and olive oil in a large nonstick skillet that's safe for stovetop and oven. Season chicken with salt and pepper.
  • Add chicken to skillet and brown on both sides; about 5 minutes on each side. Remove from skillet and set it on the side, leaving oil in skillet.
  • Add artichokes, onions, carrots and 1/2 of chopped garlic to the skillet. Cook for 5 minutes, or until vegetables are slightly tender, stirring occasionally.
  • Add rest of the chopped garlic and spinach; continue to cook for 1 minute, stirring occasionally. Remove from heat and add broth and chicken.
  • Place in the oven and bake for 18 minutes, or until chicken is thoroughly cooked. Remove from oven and let stand 5 minutes. Plate and ladle liquid and veggies over chicken pieces. Serve.

2 lbs boneless, skinless chicken breasts (diced into 1" pieces)
2 9 oz boxes artichoke hearts (defrosted)
2 10 oz boxes spinach (defrosted, chopped )
2 shallots (chopped)
1 clove garlic (minced)
1/2 cup Greek yogurt
1/2 cup mayonnaise
1/2 cup Parmesan cheese
1/2 cup mozzarella cheese (shredded )

Steps:

  • Preheat oven to 375 degrees then coat a 9" x 13" baking dish with cooking spray.
  • Place chicken into baking dish. Salt and pepper chicken and then bake for 15 minutes.
  • Place defrosted spinach and artichokes into a colander and press very firmly to squeeze out as much liquid as possible. Transfer veggies to a cutting board, chop coarsely then add to a medium bowl.
  • Add remaining ingredients to the bowl and stir to combine. Pour on top of chicken and bake 20-25 minutes.
  • Let stand about 5 minutes before serving.

2 lbs boneless (skinless chicken breast (about 3-4 chicken breasts))
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1/2 Cup Mayonnaise
1/2 Cup Sour Cream
2 tsp Dijon Mustard
1/4 Onion- finely chopped
8 oz Mozzarella Cheese (grated)
3 oz Freshly Grated Parmesan
1/2 Can Artichoke Hearts (drained and diced)
4 cups Fresh Spinach (coarsely chopped (about 2 oz))

Steps:

  • Preheat the oven to 375˚F. Lay the chicken breasts flat in a large baking dish and season with garlic powder, 1/4 tsp salt and 1/4 tsp pepper.
  • Mix the cheeses, then set aside 1/3 of it (about a cup.) In a large bowl, mix the mayo, sour cream, mustard, onion, remaining salt and pepper, and the remainder of the cheeses. Then fold in the chopped spinach and diced artichoke hearts.
  • Spread mixture on top of chicken then top with cup of cheese that you set aside. Bake on middle rack of oven for 30-40 minutes or until the chicken is cooked through (internal temp of 165˚F).

1 tablespoon olive oil
1 package (20 oz) boneless skinless chicken breasts, cut into bite-size pieces
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup chopped onion
1 tablespoon finely chopped garlic (3 cloves)
3/4 cup mayonnaise
1 cup sour cream
1 cup milk
1/2 teaspoon crushed red pepper flakes
1 cup grated Parmesan cheese
1 can (14 oz) small artichoke hearts, drained and coarsely chopped
1 box (10 oz) Cascadian Farm™ frozen organic chopped spinach, thawed and squeezed to drain
1 cup roasted red bell peppers, drained and finely chopped (from 16-oz jar)
2 cups shredded Monterey Jack cheese (8 oz)

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray. Cook and drain pasta as directed on package; set aside.
  • Meanwhile, in 10-inch nonstick skillet, heat oil over medium-high heat.   • If making ahead to bake and serve at a later date: Line 13x9-inch (3-quart) baking dish with 2 layers of plastic wrap, leaving enough overhang to completely enclose assembled casserole. Spread mixture in large shallow pan; cool mixture completely, covered, 30 to 45 minutes in refrigerator. Spoon mixture into baking dish; cover with another layer of plastic wrap. Freeze unbaked casserole about 8 hours or until completely frozen. Transfer frozen casserole to labeled 2-gallon resealable freezer plastic bag. Remove air; seal and freeze up to three months. Steps:

  • Microwave spinach in a medium bowl until warmed through, 2 to 3 minutes. Let cool slightly and squeeze to remove excess moisture.
