ALMOND-CRUSTED CHICKEN BREASTS STUFFED WITH DRIED APRICOTS AND CHERRIES

Steps:
- In small bowl combine cherries, apricots, port and water.
- Cover and set aside 6 hours or overnight.
- Drain liquid into small saucepan.
- Salt and pepper both sides of chicken breasts.
- Spoon about 2 tablespoons fruit onto center of each chicken piece.
- Fold both sides over fruit to overlap, and secure with bamboo skewer or wooden picks.
- Into three shallow bowls place flour, egg and almonds mixed with bread crumbs.
- Thoroughly coat each filled chicken piece with flour, then egg, then almond mixture.
- Place on plate in single layer; cover and refrigerate 30 minutes.
- Heat oven to 375 degrees.
- In 12-inch skillet heat butter and oil over medium heat.
- Pan-fry the chicken bundles, turning once, until well browned, about 5 minutes on each side.
- Transfer to baking sheet and finish cooking in center of oven 8 to 10 minutes, being sure chicken juices run clear.
- Meanwhile, add the shallots to the port mixture and reduce by half over medium-high heat.
- At the same time, in another saucepan, reduce the cream by half.
- Strain the port mixture into the reduced cream.
- Season with salt and pepper.
- Ladle hot sauce onto eight serving plates, dividing equally.
- Remove skewers and place chicken on sauce.
- Garnish with mint sprigs, if desired.

BAKED APRICOT ROSEMARY CHICKEN

- In a medium saucepan over medium-low heat, heat the jam until melted, about 2 minutes.
- Transfer the jam to a large baking dish. Add the olive oil, mustard, honey, soy sauce, orange zest, crushed garlic, rosemary, 3/4 teaspoon salt and some pepper and mix until combined. Season the chicken with additional salt and pepper and add to the marinade. Gently flip until mixed and coated. Marinate in the refrigerator for at least 20 minutes or overnight.
- Preheat the oven to 375 degrees F.
- Bake until the chicken is cooked through and the juices run clear, about 30 minutes. Garnish with orange wedges if desired.

- Heat oven to 350°F. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick.
- In small bowl, mix cereal, apricots and butter. Spoon half of cereal mixture on center of each chicken breast. Fold chicken in half horizontally over stuffing; secure with toothpicks. Place in ungreased 9-inch square pan.
- In 1-quart saucepan, heat preserves and lemon juice over medium-low heat, stirring occasionally, until preserves are melted. Pour over chicken.
- Bake 35 to 40 minutes or until juice of chicken is clear when center of thickest part is cut (170°F). Season to taste with salt and pepper.

- Combine all above ingredients (****EXCEPT brown sugar & white wine) into marinade. Place chicken in a zip lock bag or a baking dish that can be tightly sealed. Cover the chicken with marinade. Refrigerate for at least 4 hours or overnight if possible.
- One hour before baking: Time to arrange in the baking dish and bring to room temperature before cooking.
- Distribute chicken in single layer in baking pan, DO NOT discard the marinade. Pour it over the chicken with all the other marinade ingredients. Sprinkle brown sugar over the chicken breasts and pour white wine around the breasts.
- Preheat oven: Cook UNCOVERED at 325 for 50 minutes or until chicken is cooked through and no longer pink. Cooking time may vary depending on the thickness of your chicken breasts. Cook to 165°F
- Arrange cooked chicken breasts on a platter, top with the sauce and other ingredients.
- NOTE:.
- This recipe yields a lot of sauce, so you can double the chicken content without having to double the marinade. It's nice because you can make it all ahead of time!
