1 lb chicken tenders, cut into bit size pieces
1 1/2 cups corn flakes, crushed into crumbs
1 teaspoon paprika
salt, to taste
pepper, to taste
2 egg whites
hot sauce, to taste (don't be shy....not a strong flavor)
3 hard rolls

Steps:

  • Preheat oven to 400.
  • Combine cornflake crumbs, paprika, salt and pepper in a pie dish.
  • In a seperate pie dish combine the egg whites and hot suace and beat with a fork until well blended.
  • Spray a cookie sheet with a nonstick cooking spray. Arrange an assembly line of chicken, egg mixture and cornflake crumbs. Dip chicken pieces into egg mixture and then into the cornflake mixture. Place on cookie sheet. Spray chicken pieces with nonstick spray and bake for 7 to 10 minutes, turn and cook for addtional 7 minutes or until juices run clear.
  • Serve on rolls.

2 c. cooked chicken, cubed
1 can cream of mushroom soup
1 can chicken gravy
2 T. chopped pimento (opt)
2 T. chopped onion (opt)
1 7 1/2 oz. can sliced water chestnuts, chopped
salt and pepper, to taste
20 sliced firm (white) bread, crusts trimmed
4 oz. potato chips crushed
3 eggs
2 T. milk

Steps:

  • Combine chicken, soup, gravy, pimento, onion, water chestnuts and salt and pepper. Make ten sandwiches using the bread and filling. Wrap sandwiches in plastic wrap and freeze. When ready, combined eggs and milk. Dip each frozen sandwich into the egg-milk mixture and then into the potato chips. Bake on a greased cookie sheet at 300 degrees for one hour.
