SIMPLE BAKED CHICKEN DRUMSTICKS
I wanted a basic way to cook drumsticks since they are cheaper than the breasts. I didn't want alot of spice or sauce on it so if you are looking that, this is not the recipe for you. We found it just right for us, the flavor of the chicken really comes through. I served with corn and twice baked potato casserole.

Steps:
- Put some olive oil in the bottom of a 9x13 pan (just enough to put the drumsticks on).
- Add drumsticks (space enough apart so they aren't touching each other).
- Sprinkle generously with pepper and garlic powder. Sprinkle lightly with salt. Add rosemary to the chicken, if desired.
- Bake at 375° F for half an hour. Turn drumsticks over and add more garlic powder, pepper and salt (same as before). Top with the parsley.
- Bake another half an hour, or until cooked until 160°F.

- Preheat the oven to 375 degrees F (190 degrees C). Line a glass baking dish with aluminum foil.
- Spread 1/4 cup of olive oil over the bottom of the prepared baking dish and line up drumsticks on top, alternating directions so that they fit. Top with 1 tablespoon of butter each, on the thick part of the chicken. Sprinkle with garlic salt, seasoned salt, salt, and pepper.
- Bake in the preheated oven for 35 minutes. Cover chicken with remaining olive oil; continue to bake until juices run clear and chicken is no longer pink in the centers, 10 to 15 more minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Serve.

- Combine beer, mustard, garlic, pepper flakes, salt, and pepper in a 1-gallon resealable plastic bag. Add chicken drumsticks; turn to coat evenly. Seal bag, squeezing out all the air.

PANKO CRUSTED BAKED CHICKEN DRUMSTICKS
I was searching for a good baked chicken recipe with Panko that didn't have Parmesan cheese as an ingredient. My mouth likes it, my waist doesn't. Anywho this is a hybrid of a recipe I was experimenting with, and I think it's pretty tasty and kinda lean ;-) You be the judge....

- Preheat oven to 350.
- In a large bowl, combine all of the ingredients except the cooking spray. Use a whisk to be sure the ingredients are all combined well. Set aside.
- Wash the chicken drumsticks in cold water; don't dry them.
- Roll each drumstick into the crumb mixture, and carefully transfer each piece to the baking sheet. Do no discard the leftover crumbs.
- Lightly spray the drumsticks with the vegetable oil.
- Bake, loosely covered with aluminum foil for 45 minutes.
- Remove from oven. turn chicken over. and top each drumstick with some of the leftover crumb mixture. Spray once again, liberally with the vegetable oil.
- Return the baking sheet to the oven, this time uncovered for another 45 minutes.

- Preheat oven to 200c.
- Rub the chicken with some olive oil, season with salt and pepper, then place in baking tray with enough room so there is gaps around them, then put in the oven.
- Bake for 15 minutes, scatter the garlic cloves (reserve one and dice it while cooking the chicken) around the chicken, return to the oven and bake for another 30-35 minutes until the chicken is tender.
- When done, remove the chicken to a plate and cover with foil, then a teatowel.
- Drain the juice from the oven tray and reserve it.
- Heat up a frying pan and fry the reserved, chopped, clove of garlic in some oil (about a tbsp), then add the mushroom, and the reserved juices and saute until tender.
- Serve the chicken drumsticks on a bed of rocket (one handful per person), with the mushrooms on the side, a lemon wedge, and scatter the roasted garlic around it.
- Lovely with a glass of white wine!

Something i came up with one night. Pretty easy to make, not much work required. Only time in the oven. It is also towards Russian dishes. You can also bake a whole chicken with mayo and adjika sauce. The only thing is time in the oven will be 45 min for each side of the chicken.

- 1. Preheat the oven to 360 degrees.
- 2. Wash off the drumsticks. Do not take off the skin!
- 3. Put all the drumsticks in a large bowl & add salt and pepper.
- 5. The bottle of Adjika is usually about 8.8 oz. I use about half of that small jar. Mix the adjika with mayo. Really depends on your taste. Make sure every drumstick is rubbed with the sauce.
- 5. Take out a dish which can fit all the drumsticks on there and line it with foil (or you can just rub down the dish with butter or spray with pam, so no foil is needed really) Place the drumsticks.
- 6. Bake for about 15-20 mins on one side and then flip them to bake for the same time on the over side.
- 7. If more time needed to cook leave them in for a little more.

- Slash each drumstick in 3 places with a sharp knife.
- In a bowl combine all the ingredients and work the marinade into the drumstick meat.
- Lay the drumsticks out in a single layer in a shallow pan or on a baking tray, leaving a little space between each if possible and pour over any excess marinade.
