Chicken Breast Baked in a Bag with Mushrooms, Butter, White Wine and Thyme image

An easy peasy Jamie Oliver recipe, you can vary this to suit your taste, try things like grated parsnip, smoked bacon or red wine

2 skinless chicken breasts
1/4 cup dried porcini mushrooms
25 ounces mixed mushrooms, torn up
1 cup white wine
3 tablespoons butter
1/4 cup fresh thyme
2 cloves garlic, peeled and sliced

Steps:

  • Using wide tin foil, make your bag by placing 2 pieces on top of each other (about as big as 2 shoeboxes in length), folding 3 sides in and leaving 1 side open.
  • Preheat the oven to 220C/425 degrees F.
  • Mix everything together in a bowl including the chicken.
  • Place in your bag with all the wine juice, making sure you don't pierce the foil.
  • Close up the final edge, making sure the bag is tightly sealed and secure on all sides, and carefully slide it onto a roasting tray.
  • Place the tray on a high heat on the stove top for 1 minute to get the heat going, then bake in the middle of your preheated oven for 25 minutes.
  • Remove from the oven, place the bag on a big plate, take it to the table and break open the foil.

Baked breaded chicken dish. Adapted this from one of my Nana's chicken dishes. She used chicken thighs and other parts.

4 chicken breasts
1/2 cup butter (melted)
1/2 cup grated romano cheese
2 cups breadcrumbs (seasoned with oregano, basil, garlic)
3 tablespoons oregano
3/4 cup white wine
3 stalks green onions, chopped (optional)

Steps:

  • Preheat the oven to 350°F.
  • Melt the butter.
  • Mix bread crumbs with grated cheese.
  • Dip the chicken in the melted butter then in the bread crumb mixture.
  • Place chicken in oven covered, for approximately 20-25 minutes (This depends on the thickness of your chicken breasts).
  • Mix the remaining butter with the wine, oregano, and chopped onions.
  • When the chicken has about five minutes left until it is done, pour the butter/wine mixture over the chicken.
  • The chicken should not be covered for the last 5 minutes.

1 frying chicken, quartered
2 (14 ounce) cans artichoke hearts, drained
1 (15 ounce) can tomato sauce
3/4 cup dry sherry or 3/4 cup white wine
1/4 teaspoon oregano
1 teaspoon fresh basil or 1/4 teaspoon dried basil
1/2 teaspoon garlic powder
salt and pepper

Steps:

  • Place chicken in baking pan (remove skin).
  • Arrange artichokes around chicken.
  • Combine tomato sauce, wine, spices, salt and pepper.
  • Pour over chicken.
  • Bake at 400 degrees for 45 minutes.
