BAKED PARMESAN ONION DIP
Try the making the dip with sweet onions, it's super delicious. Bake until the crust is well browned. It'll help caramelize everything. You can mix the dip ingredients several days ahead of time, and then bake it off when needed. We've even kept it unbaked in the fridge for a couple weeks and it was still great.

- Preheat the oven to 350°F (175°C).
- In a bowl, mix together the cream cheese, mayonnaise, parmesan, onion, black pepper and garlic powder until everything is thoroughly combined.
- Pour the mixture into a 6-inch (15-cm) baking dish or any oven-safe dish. Bake for 50 minutes to 1 hour, or until everything is melted together and the top crust is brown and almost burnt-looking. The darker brown the crust becomes, the better the flavors are.
- Serve with your favorite crusty bread, crackers, slices of tomatoes, or crunchy vegetables such as radishes, jicama, carrots, and celery.

Fantastic dip for any get together. Great way to sneak veggies into the picky ones! Adjust the veggies to use what you like, what you have or just what you think would be good. The meat here is very optional. Make this veggie friendly by omitting it all together. Make it carnivore friendly by adding the meat option. Really ANY meat ground or chopped would work here. Enjoy!

- Chop, mince, dice or slice veggies to your desired size and shape. I like to chop everything and mince the garlic with my garlic press.
- Sauté onions, mushrooms and bell pepper until soft and onions are translucent. Add garlic and sauté one minute more.
- Add mayo, mozzarella, cheddar and chopped olives and meat if using. Stir to combine.
- Scoop all into an 8x8 glass pan or similar size oven proof dish. Bake at 350°F until melted and dip-like (is that a word?) About 15-20 minutes.
- Enjoy on corn chips, tortilla chips or crackers.
- Feel free to adjust amount and type of veggies to your taste. Just keep the cheese and mayo mixture the same.
- Some other great veggies to add or substitute would be seeded tomatoes, zucchini, artichokes, hot peppers, etc.

- Preheat oven to 375°. Heat oil in a medium skillet over medium. Cook onion, stirring occasionally, until golden brown and softened, 8-10 minutes; season with salt. Let cool.
- Pulse cream cheese and mayonnaise in a food processor until smooth.
- Toss cornstarch, 3/4 cup cheddar, and 1/4 cup Monterey Jack in a medium bowl to coat cheese. Mix in cream cheese mixture and cooked onion; season with salt and pepper.
