By my recollection, this dish is very similar to one my Irish grandmother cooked. Cooked celery as a side-dish vegetable seems to be out of vogue now, but it really is quite good.

1 head celery
1 onion, sliced thinly
2 teaspoons minced fresh parsley
2 slices bacon
1 cup chicken stock
1/4 cup water
salt and pepper
2 tablespoons butter or 2 tablespoons margarine, cold

Steps:

  • Preheat oven to 350F degrees.
  • Separate celery into stalks, remove leaves (save for soup) and trim, wash well and cut into pieces about 3/4-inch thick.
  • Place celery in an ungreased casserole dish.
  • Dice bacon; add bacon and sliced onion to casserole, atop the celery.
  • Sprinkle all with fresh parsley.
  • Combine stock and water (or just use all stock) and pour over dish; don't stir.
  • Dot casserole with small bits of butter.
  • Cover dish and bake for 30 to 45 minutes, or until celery is cooked but not mushy.

3 cups frozen O'Brien potatoes
1 (10 3/4 ounce) can cream of celery soup
1 cup sour cream
1 cup cubed ham
1 cup cheddar cheese (optional)

Steps:

  • Preheat oven to 400 degrees.
  • In a medium bowl, combine undiluted soup and sour cream; blend well.
  • Stir in Frozen Ore Ida Potatoes and ham.
  • Cover and bake for 40 to 50 minutes or until bubbly and potatoes are tender, stirring once after 20 minutes.
  • Top with cheese, bake 10 minutes longer.

Celery, Ham and Cheese Toasts image

These lovely open-faced sandwiches take celery from bit player to main stage. We boil it briefly to make it crisp-tender and bright green before piling it on toast and broiling it under a creamy topping of ham and cheese. The toasts make a lovely brunch dish (with Bloody Marys all around), or a light lunch served with a vinegary green salad.

4 thick slices country white bread (about 3/4-inch thick)
Kosher salt
1/2 cup mayonnaise
3 ounces Gruyere cheese, coarsely grated
2 ounces thinly sliced Black Forest ham (about 1/8-inch thick), coarsely chopped
Freshly ground black pepper
1 bunch celery

Steps:

  • Position a rack 6 inches from the broiler and preheat to high. Toast the bread to a light golden-brown. Bring a medium pot of salted water to a boil.
  • In a bowl, combine the mayonnaise, cheese and ham; season with pepper.
  • Trim off the tops and bottoms of 8 outer stalks of celery. Peel the stalks. Cut the stalks crosswise into 3 equal pieces (just about the length of the bread). Halve each piece lengthwise, if necessary, so each celery piece is about 1/2-inch wide. Tear a few of the light green leaves from the heart and reserve. Add the celery pieces to the boiling water and cook until just tender, 4 to 5 minutes. Drain and pat dry.
  • Put the toasts on a baking sheet. Divide the celery among the toasts. Dollop the mayonnaise mixture on top and spread gently to cover most of the celery (the sandwiches look pretty with a bit of green showing at the edges). Broil until the cheese is brown and bubbly, about 2 minutes. Transfer the toasts to plates, garnish with the reserved celery leaves and serve.

Growing up, we always had braised celery on our holiday table. However, the plainness of this dish did not appeal to my husband. Imagine my delight to find this "fancied-up" version of celery in BH&G. It pleases both of us! Another plus: it has a make-ahead feature and doubles easily.

1 bunch celery
2 cups boiling water
1/2 teaspoon salt
3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/3 cups milk
1/2 cup reserved pot liquor
3 tablespoons toasted slivered almonds
1/4 cup fine dry breadcrumb
1 tablespoon butter, melted

Steps:

  • Wash and cut the celery into 1/2-inch slices including some tender tops. You should have 5 cups of slices. In a large saucepan, simmer the celery in boiling salted water until tender. Drain in a colander *reserving* 1/2 cup of the pot liquor. Discard tops.
  • In the same saucepan, melt the butter; stir in flour, salt and pepper and blend well. Add, stirring, the milk and reserved pot liquor; cook until thickened. Remove from heat.
  • Stir in celery and half of the toasted almonds. Pour into a 1-quart baking dish. Casserole may be made ahead to this pooint; cover with plastic wrap and refrigerate.
  • To finish the casserole: Top with remaining almonds. Combine bread crumbs and melted butter; sprinkle over top of casserole. Bake 20-25 minutes, or until hot and bubbly. Add ten or more minutes to the baking time if the casserole has been refrigerated.
