2 1/2 cups water
1 tablespoon unsalted butter
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the rice into an 8-inch square glass baking dish.
  • Bring the water, butter, and salt just to a boil in a kettle or covered saucepan. Once the water boils, pour it over the rice, stir to combine, and cover the dish tightly with heavy-duty aluminum foil. Bake on the middle rack of the oven for 1 hour.
  • After 1 hour, remove cover and fluff the rice with a fork. Serve immediately.

1 medium onion, chopped
1 3/4 cups low-sodium chicken broth
1 cup brown basmati rice
Zest and juice of 2 navel oranges
Kosher salt
Four 6-ounce boneless, skinless chicken thighs
Freshly ground black pepper
2 tablespoons chopped fresh mint
2 tablespoons toasted pine nuts

Steps:

  • Preheat the oven to 375 degrees F. Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat. Add the onions and cook, stirring, until just beginning to brown and soft, about 5 minutes.
  • Add the onions, chicken broth, rice, 1/4 cup of the orange juice, 2 teaspoons of the orange zest, 1 tablespoon of oil and 3/4 teaspoon salt to a 2-quart baking dish and stir to combine.
  • Toss the chicken with the remaining 1 tablespoon oil, 1/4 teaspoon salt and 1/4 teaspoon pepper in a medium bowl. Nestle the chicken into the rice mixture. Cover the dish with foil and transfer it to the oven, being careful not to spill.
  • Bake for 55 minutes. Remove the foil and drizzle the chicken with 2 tablespoons of the orange juice. Continue to bake until most of the liquid has been absorbed, the chicken is fully cooked and the rice is tender, about 50 minutes more.
  • Drizzle the chicken with the remaining orange juice. Sprinkle the mint, pine nuts and desired amount of remaining orange zest over the dish and serve.

This rice is tender and separate and delicious. Notice that the ratio of water to rice is much less than the oft-quoted 2 to 1. This is the key to this recipe, so make sure to measure carefully.

Steps:

  • Place oven rack in middle position. Preheat oven to 375 degrees.
  • Bring the water to a boil. Keep the water covered as it boils so you don't lose too much as steam.
  • When the oven is at 375, put the water, rice, and salt into an ovenproof pot with a tight-fitting lid. I have successfully used pyrex dishes and cast-iron dutch ovens. If you don't have a good lid, you can also use a double layer of foil. Just make sure it's sealed well around the edges.
  • Pop it in the oven.
  • The rice is done when it is tender and the water is all gone. It usually takes an hour. When it's done, fluff it with a fork and serve. Yum! So simple and good!

3 tablespoons soy sauce
1 tablespoon minced ginger
1 garlic clove, minced
1/8 teaspoon of cayenne (optional)
1 tablespoon honey or agave nectar
2 teaspoons lime juice
2 tablespoons light miso
2 tablespoon mirin
1 tablespoon dark sesame oil
3 tablespoons grapeseed oil or sunflower oil
1 large red bell pepper, sliced
3 cups cooked brown rice
1 cup (8 ounces) cabbage kimchi

Steps:

  • . Preheat the oven to 375 degrees. Line a sheet pan with parchment. Pat each slice of tofu dry with paper towels. 2. Whisk together the soy sauce, ginger, garlic, cayenne, honey or agave nectar, lime juice, miso, mirin, and oils. Pour into a dish that can accommodate all of the tofu slices in a single layer (such as a baking dish). Place the tofu slices in the marinade and turn them over. Leave to marinate for 15 minutes, turning once or twice. Transfer to the baking sheet. Add the peppers to the dish with the marinade and toss to coat thoroughly, then place on the baking sheet in a single layer. 3. I got so tired of doing brown rice on the stovetop -- messes from sputtery lidsz and boil-overs, burnt or stuck rice in the pot. But I really didn't want another appliance (rice cooker)... But this method is GREAT and foolproof! NO MESS, easy and you don't hav to watch like a hawk. I'm sure this would work for any kind of rice, but you'd have to adjust time and the amount of water. I'll never do brown rice on the stovvetop again!

Brown rice is SO much better for you than white rice. It has more nutrients and about 3 times more fiber than white rice does. I never really cared for brown rice UNTIL I tasted this one. You can do as many variations as you like with it. Add your favorite herbs, spices or veggies to it. Make it vegetarian by using veggie cubes instead of chicken. The rice turns out perfectly fluffy and delicious. The aroma that fills your house while it's baking is wonderful and it's hard to wait until it's done to sneak a taste. As it bakes the bay leaves will rise to the top so they can be easily 'fished' out of the casserole before serving. I like to top the finished rice with freshly chopped cilantro and a twist of black pepper. For a nice crunch you can add chopped water chestnuts.

1 cup brown rice, uncooked
2 tablespoons canola oil (or butter)
2 1/2 cups water
2 bay leaves
2 chicken bouillon cubes
1 teaspoon poultry seasoning
1/2 teaspoon black pepper
2 teaspoons dried onion flakes
1/2 teaspoon dried parsley
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon red pepper flakes (optional)
fresh cilantro (optional) or fresh parsley (optional)

Steps:

  • Preheat oven to 375°F.
  • Heat heavy skillet (I use cast iron) until hot. Add oil and then add uncooked brown rice.
  • Stir rice in oil until golden brown, stirring constantly. (some grains will be golden while other grains will look darker).
  • In the meantime heat water and add bay leaves, bouillon cubes, poultry seasoning, black pepper, minced onion flakes, parsley, oregano, basil and pepper flakes.
  • Bring to a boil.
  • When rice is golden and ready, pour rice into a covered 2 quart casserole dish.
  • Add the boiling liquid on top of the rice. CAREFUL! IT WILL SPUTTER.
  • Cover casserole with aluminum foil AND the cover for the casserole dish (to make sure steam does not escape from the rice).
  • Bake for 1 hour.
  • Remove from oven and let sit covered (DON'T PEEK!) for 15 minutes.
  • Fluff with fork before serving.

14 oz block extra-firm tofu, drained, cut into 8 slices
3 T soy sauce
1 T minced ginger
2 garlic cloves, minced
1 T honey
1/8 t cayenne
2 t lime juice
2 T light miso
2 T mirin
1 T dark sesame oil
2 T grapeseed or sunflower oil
1 large red bell pepper, sliced
3 c cooked brown rice
1 c kimchi
optional, green veggies like brocolli/brocollini, sauteed in oil and garlic.

Steps:

  • 1. Preheat oven to 375. Line a sheet pan with parchment paper. Pat each slice of tofu with paper towels. 2. Whisk together soy sauce, ginger, garlic, cayenne, honey, lime juice, miso, mirin and oil. Pour into a dish that fits all the tofu slices in a single layer. Place the tofu into the marinade and turn over. Marinate x 15 min, turning once or twice. transfer to baking sheet. Add the peppers to the marinade toss to coat thoroughly, then place on the baking sheet in a single layer. Reserve marinade. 3. Place the baking sheet in the oven and roast for 15-20 minutes, turning the peppers once, until the edges of the tofu are are just beginning to color and the marinade sets on the surface. Remove from heat. 4. Spoon rice into 4 wide bowls or plates. Drizzle with reserved marinade. Top with kimchi, tofu, red peppers and other ingredients if using.
