This baked brie and roasted garlic makes a simple, delicious appetizer. In this recipe, garlic is roasted with olive oil until golden, and so soft it spreads like butter.

3 Heads of Garlic
6 teaspoons Extra Virgin Olive Oil (2 teaspoons for each garlic head)
1 Large Brie Wheel (13-14 ounces)
1 Large Loaf of Baguette Bread
Aluminum foil (heavy duty)
Parchment paper
Baking sheets

Steps:

  • Preheat the oven to 400°F
  • Remove any loose papery outer layers from the garlic, but leave the tight fitting peel intact.
  • Slice about ¼ inch off the top of the garlic head - the side that doesn't sit flat.
  • Cut 3 pieces of heavy duty aluminum foil, roughly 12". Set one garlic head in the middle. Add 2 teaspoons of olive oil carefully, making sure it sinks into the individual cloves.
  • Bring up all four sides of the aluminum foil and wrap tightly on top. Repeat with the remaining garlic.
  • Place the garlic heads on a baking sheet and roast for 40-50 minutes. until they're golden, and a spreadable consistency.
  • Remove the garlic from the oven. Turn off the oven for a little while; so it to cools off a bit to bake the brie.
  • Preheat the oven to 350°F
  • Cut the baguette into ½ inch rounds. Arrange the bread on a baking sheet and set aside.
  • Place the brie wheel on a baking sheet, lined with parchment paper. Bake the brie for 15-20 minutes, or until the inside is melted. The brie should give when pressed lightly.
  • When the brie is almost done, place the bread in the oven for the last 5-6 minutes to toast it just a little bit.
  • Spread a clove of roasted garlic on a piece of bread and top with a generous amount of brie cheese.

1 8- ounce wheel Brie (St. Andre or Camembert Cheese)
2 cloves of garlic (sliced thinly)
2 sprigs of fresh thyme
2 tablespoons truffle oil
Crostini or cracker

Steps:

  • Preheat the oven to 375-degrees
  • Remove the cheese from the box and unwrap the cheese to free it from just the plastic.
  • Place the cheese back into its box.
  • Score the top in a crosshatch pattern with a knife. Make sure you do not go all the way through to the bottom. This is done only to the top rind, Do NOT go all the way down to the bottom.
  • Place the pieces of the garlic into the top of the cheese and sprinkle with the fresh thyme.
  • Drizzle with the truffle oil and place onto a baking sheet.
  • Place the baking sheet into the oven for 15 minutes or until beautifully gooey.
  • Remove from the oven and allot it to sit for 2-3 minutes before serving with crostini.

1 head garlic
2 tablespoon olive or vegetable oil
1 8 ounce round Brie, well chilled
2 tablespoon quartered pitted kalamata olives
1 teaspoon finely snipped fresh parsley
Desired dippers such as crackers, vegetables, and bread slices (optional)

Steps:

  • To roast garlic, place an unpeeled head of garlic in a heavy saucepan with oil. Cook and stir over medium heat for 5 minutes. Cover and reduce the heat to medium-low. Cook for about 15 minutes more or until garlic is soft. Remove garlic from oil. Drain on paper towels and cool.
  • Slice the thin rind off one of the flat sides of the Brie. Place on a baking sheet, cut side up. Divide head of garlic into cloves and peel. Chop the roasted garlic. Place garlic* and olives on the Brie.
  • Bake, uncovered, in a 400 degree F oven for 10 to 12 minutes or until Brie is warm and slightly softened. To serve, sprinkle with parsley. Makes 4 servings.

1 whole garlic bulb
1-1/2 teaspoons plus 1 tablespoon olive oil, divided
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1 round loaf (1 pound) sourdough bread
1 round (8 ounces) Brie cheese
1 loaf (10-1/2 ounces) French bread baguette, sliced and toasted
Red and green grapes
